    Recipe
    5 to 5.5lbs of Persimmons
    4 cups Sugar
    1/4 cup Bottled Lemon juice
    Medium to large apple or 1 box of pectin

    I turn my sister on to lead farm and Homestead Channel and she start a garden her lemon trees doing good everything is doing fine but my sister passed away a covid-19 and we eulogize her on December 10th I'm quite sure her husband and the kids is taking care of the garden this is the first time I've been back on the channel to watch because it's kind of touching but I thank God for what you bring to the channel and they look so good thank you I needed to see this today I need to get back to watching

    I love to see people who "finish the process". Prepping, planting, proper care to fruition and picking the harvest is what we all know. But THEN WHAT??? Well, you "FINISH THE PROCESS" whatever your needs! There's sharing, selling, dehydrating, canning any way you like, there's fermenting...and depending on the plant, there's extracting and making things for the skin. I'm certain I missed other ways to "finish the process". Share anything I left out☺️

    I've got the Indiana Persimmons. Mine have 4 seeds in each one. I've got around 15 trees along my driveway.

    Sitting here just wondering in amazement how you do ALLL that you do. Mannn...everything'd be rotting in the fields, animals hungry, and the laundry'd be piled to high heaven! I feel I'd get so overwhelmed I'd just go build me a tiny house, and forage in the wild! Now I DO do alot that you do (learned from You n Lead) but on a Much smaller scale!!! Just Blessed with energy and know how! Smh

    I sure do wish y’all would make a Homestead ❤️ authentic recipe cookbook!!!!🙏🏻🙏🏻 I know I’m not the only one who would buy one. Do it like Danny and Wanda from Deep South Homestead and put it on an Etsy shop!!! Please please please put serious thought to it!! Going back in a minute to watch your walk through on making the red beans to put over rice video, finally found the little red beans (NOT Kidney beans!) and getting them to soaking! Love and appreciate all you do!

Becky on Acre Homestead saved her peach peels an pits when she was making peach jam she froze all that mess made peach pit an peel jelly later just thought you could try that with your peels a extra thing from your harvest!     Now you're canning inside my comfort zone! One of the things I do when I'm adding powdered seasonings to my jam is to bloop some of it into a small jar, stir the powders into the jar until it's truly mixed, and then blup it back into the pot. No more clumps in the big pot. I learned the trick from an old friend who shared her jamming savvy with me. She died this year. Not COVID, but a heart condition that got de-prioritized in the health care system due to the first wave in May. We made persimmon jam only once, though, because they're bloody expensive in Canada, even by the case.
    Thanks for jogging that memory for me.

      that's a great tip!! the first time I made apple butter, I had clumps of cinnamon in some jars. I wish I would have known this then!

    I've been looking for a wild persimmon tree around me and my FIL spotted one right across the road from me! I didn't even see it because it's right up against a big oak!
    Now I'm trying to collect them every couple of days to get enough for a batch or jam! It's a pretty tall one so I have to wait for the wind to bring them down.
    We're just polishing off my blackberry-elderberry jam from this spring so it's perfect timing.

    I just finished making my persimmon jam. I made 4 1/2 pints, 6 of the smaller jars and 1 1/2 full quart for the fridge. Thank you for sharing, God bless.

    I use a manual food processor (stainless steel) to separate the seeds from the Pulp. It's much easier.

    Do you have one of those Steam canners? They have a dial on top. If so you only need a few inches of water in bottom. Love these steam canners. So easy and don't heat up and steam the kitchen and light in weight. I have the smaller one and would not be without it now all my other water bath canners are never used.

    I could've sworn I'd seen and commented on this video but better late than never lol. My mother (RIP) use to buy persimmons from our local fruit and vegetable market when I was a kid. I hated them because they were always mushy and looked rotten and had a very pasty after taste that made my mouth pucker. I've never had them freshly picked then ripened, nor have I ever had the jam. Yours looks so good Mrs. H. Nowadays I can't even find persimmons anymore but if I can, I will try them again; maybe now that I'm older my taste buds may've changed.

    I love persimmon puddin’. I’ve never seen persimmons this big. The fruit I see is wild & MUST be collected off the ground, as they are bitter if picked from tree. Frost ripens the fruit. You need to wash in VERY SALTY water to chase away ants & other varmits!!!

    I love persimmons. Years ago I froze a bunch of pulp. I had never canned. Wish I had learned and canned it. We live in Kentucky and Hurricane Ike hit us. Yeah I know. Thought Kentucky didn’t have hurricanes. Boy were we surprised. We were without power for 5 days and we lost all the stuff in our freezer. All that work and it was lost

    You have a hungry cat! What do you use persimmon jam on? Is it meant to be on savory food or on things like toast? Also, can’t you peel them the way you peel a tomato? A quick dip in boiling water with an x scored at the bottom of the fruit? Lastly - they can be dried whole and skinless if you peel and then suspend on a string in an area with good dry air circulation. They get leathery and probably sweet since all the sugars concentrate as they dry out!

    When deciding on how soft you need those persimmons… If you are impatient and want them jamie foxx soft… just wait a week if you really need them sweet and soft Let them wait a few months.. theyll be teddy pendergrass ready

      There are two types ,the ones that need to be all mushy to be ripe.( Which are my fav) and the other variety are hard & stay hard like an apple & have a slight vanilla flavour & scent. The mushy ones are so yummy if you puree or squash the inside & put them in molds to eat like popcicles.

    That is one jam I haven't made - yet. Most of my persimmons I slice thin & dehydrate . They are so good & look like stained glass in the jar ! But I wiil be making this ! I did freeze some of mine to make nut breads . That is beautiful !!! I hear baby kitties in the background ~ ohhhhhh !

      @@Jomama02 , the type I have are the Giant Oriental Persimmons, which look like what Homestead Heart has. They are hard to describe, but are sweet & remind me of a tropical fruit, sort of like a Papaya . Sometimes you might see them in the grocery store. If you do, you should try one ~ even ask them if you can sample one. When dehydrated, the sugar concentrates & they are so good & great to snack on !

    Thank you for posting this video. My husband and I planted a persimmon tree 6 years ago. I wanted to plant a fruit tree and took a chance with Fuyu Persimmon. Growing up here in Houston, Tx I had heard of them but had never tried them. I am 64 now. My mother told me they were horrible. But now with TH-cam I looked up Native fruit trees. Persimmon was one of the ones that caught my eye. Learned a lot about the different varieties. Our tree started producing the 2nd year we had it and has been grwoing and producing more fruit each year. This year we got 30. We ate most and gave a few away to family and friends and only lost a couple to birds. This recipe looks great and I look forward to canning some next year. Y'all have a great 2021!

    One thing I forgot to mention in my previous comment is that if you have a crunchy-when-ripe variety (such as a Fuyu variety), you can put these whole persimmons in the freezer a couple of days and when they defrost, they are as soft as a ripe Hychiya variety.

    You are awesome farmers: we have to fight the raccoons for the persimmons here! We let them hang until good and rozen at least once to ripen and bring out the sweetness, so its a struggle. Yours are beautiful though. Do the seeds tell the winter weather down south?

    When adding spices, to avoid the lumps you can get from the spices, mix them into part of the sugar. No more lumps to chase around the pot, trying to mash them out smooth.
