    im a few days late, but id like to add some cost saving tips
    1. frozen veg such as broccoli, veg mixes, spinach and butternut squash are a lot cheaper and save time too because theyre usually cut up and if im in a rush i do tend to just shove them in the microwave and its usually fine, they do often come in plastic which isnt great but its a cheaper and easier way to get veg in
    2. dried lentils and other legumes like that are cheaper than tinned, i just cook them at some point when i have time and leave them in the fridge until i use them later in the week
    3. most crisps such as walkers are accidentally vegan, just check them and you might be pleasantly surprised, often a lot cheaper and in single packets
    4. quite a few things are already vegan too, pasta sauces, reduced fat pesto or red pesto (so much cheaper than vegan pesto) hummus, ice lollies, dark chocolate versions of a few treats, biscuits such as rich tea and oreos are staples for me - just keep checking the ingredients and look out for sneaky things such as shellac
    5. veg is also cheaper if you buy reduced or the mishaped ones
    6. chop up veg and fruit and leave them in the freezer if you know you're not going to eat them in time, i buy peppers in bulk and sit there for an hour chopping them, shove them in a tupperware and just take out what you need and when
    7. own brand is often better, they tend to be cheaper and taste the same or very similar to branded products and ive found a lot of own brand products tend not to have palm oil or other such things like their branded counterparts
    -another thing, if you slip up try not to worry too much, we all make mistakes and especially if youre going through a big diet change suddenly its inevitable, just do your best and what you can, being vegan isn't possible for everyone and you shouldn't shame people for deciding not to, its their body and every little helps, even just a vegan day or a couple vegan meals a week is great.

      In my honest opinion, I’ll never buy frozen broccoli again. They taste awful....& soak up too much moisture so the texture is soggy.
      You gave me a good idea though....maybe I’ll use my vacuum sealer & try freezing my own fresh broccoli & see if that tastes better!

    Top tips for tofu-haters:
    Tip 1: When I went veggie, I srsly hated it. Every time I tried it, the flavour and texture was eurghh. But just keep trying different brands, as they all taste different!!!! I eventually found my favourite as 'Tofoo' as it has a plain flavour and is pretty solid already without pressing (cos ain't nobody got time for that).
    Tip 2: I find the texture goes much meatier after it has been frozen. Just chop up the tofu block into pieces and pop in the freezer. I can dip in and get what I need when I need it (also good for if you're the only one who likes it too, no need to use the whole block in one go!). You can then cook it in the recipe as you normally would, it just takes a little bit longer to cook through.
    Tip 3: AIRFRYER TOFU. My favourite way to cook it. So crispy, yum!!!

      I recently put some leftover tofu in the freezer, would you recommend just putting it in a stir-fry? Or is there something in particular that frozen tofu’s good in? Also is frozen tofu good for baking/marinating? Sorry for the questions!

      @@sophiemartin5757 yes you can just use it as you normally would! I like to fry off mine at the beginning of a stir fry / curry. Gives it enough time to cook through and go crispy 🤤 if you want to bake or marinate then you can defrost in the microwave for a minute or so, and it still keeps the chewy texture. Not sure on the science but something magical happens when it goes in the freezer 😂

      Another tofu tip: get an actual tofu press!! I used to use heavy objects like pots/pans and it was terrible. A tofu press is SO much easier and quicker that it made using tofu in recipes much more realistic! If I put the block of tofu in the press first thing and let it sit in there while I gather my other bits, chop any veggies, etc. the tofu is usually ready by the time I need to start cooking it! It's literally my favorite kitchen tool now. Lol

    I am not vegan and honestly won’t ever be. With that being said, I have to say how much I enjoy your content. I have gotten recipe inspiration from you and learned more on little things that I can do to be more environmentally friendly.     Highly recommend Naturli butter! It's incredibly buttery, no palm oil, and comes in a block so one can skip the plastic tub - triple win!

      It has it owns shelf my cupboard. I check the stores every week just to see the offers on peanut butter. I have it pretty much at every meal. I've tried almond, cashew, hazelnut, pecan and they all come second. Peanut butter is king.

    I love this video as always! But I just wanted to add that iodized table salt is important for both vegans and non-vegans, so perhaps for people who don't supplement for iodine it's better to choose iodized table salt instead of sea salt ;)

      It's also important to mention that plant milks should be calcium fortified, so people meet their daily recommended intake of calcium

      @@Boss-uk1cz Also, seeds, beans and lentils, almonds, tofu and green leafy veggies have calcium in them, so if you get enough from your food intake you probably won't have to supplement. :-)

    Wishing that I had resources like this when I first went plant-based 4 years ago... We're so lucky that there're so many delicious vegan products out there today!! Personal fave to add to the list would be sesame oil and peppercorn oil - both go great with stirfrys!

    I have been cooking meatless meals lately to cut down on my consumption of meat. One recipe I tried was one by Jamie Oliver called Hamilton squash,absolutely delicious the best meatless dish yet. Will keep trying different recipes I am going to make some vege burgers hopefully this week, need to get some black beans (lockdown) I am shielding xx

    Love this list, it is such a good resource. A lot of the groceries are similar to what we buy. My husband and I are really partial to so delicious coconut creamer for our coffee, so that's always a must. We also recently found a "no bone broth" concentrate that we've been using instead of stock cubes and it's just so tasty, makes delicious soup. Our freezer space is in short supply, so we usually keep tortillas or chips in house and pre-seasoned beans (usually from A Dozen Cousins) to make some quick nachos for lazy weeknight dinners.

    Great video! I just wanted to clarify that cold pressed rapeseed oil has a smoking point between 120 and 140 Celsius. Cold pressed extra native olive oil has a smoking point between 190 and 210 Celsius. Rapeseed oil is healthy but only for the cold kitchen :) olive oil or coconut oil (170-190) is better for cooking.

    Try vitimins bread fruit syrup into flour water make a loaf of bread in silicone cake dish put in microwave for 6 minutes then toast in oven to make it crunchy on out side delicious

    This video is such a great guide of the basics! I have been planning my meals and buying everything necessary every week but I was getting a bit tired of it.     I just had a delish vegan pasta with roasted tenderstem broccoli that I'd tossed in lemon zest, garlic, chilli flakes and EVOO all topped with some nooch, absolutely divine and took no time to make. :) 😍😍

    I like to make sure when I'm keeping my grains in jars like that I empty out the jar before I put the new ones in and then put the old ones on top so I'm using them up rather than letting a layer sit at the bottom that just gets older and older

    In addition to the cheesy flavor, nutritional yeast also adds B12 to your dish, which is a vital nutrient for vegans.

      Actually It's added, in the Netherlands we have just basic nooch, and there is no B12 in it. There are some B vitamins, that are there naturally.

    I would like to be vegan , don't know where to start. Hopefully all the research I need to do will be worth it . We are a family of six and eat way too much processed foods and meat can be quite expensive. We are on a budget but hopefully we will save money aswell by gradually cutting out the meat and making healthier meals .

    Hey Madeleine, they retested olive oil again recently and debunked the low smoke point thing! So feel free to use it in any recipes you like, it actually has a smoking point close to coconut oil if I’m remembering correctly

      However, especially in Extra virgin olive oil has a lot of great fats (polyunsaturated fat) that can turn to trans fats (the really bad ones) while heating. So, I would not use it in cooking...unless you cook something you are not gonna heat. (Excellent in hummus etc.).
      I'm not expert in nutritional sciences, but I took some cources while studying pharmacy, so this part of the food chemistry I do know.
      Also, sea salt being better for you than table salt is a myth. There is tiny amounts of different salts there, but not so much that it would make any difference for anybody. And it does not TYPICALLY have iodine. Unless you use a lot of nori (or other natural iodine sources), it is better not to change to salt that does not contain iodine.

      @@emmi3785 I looked a little deeper into it and I stand corrected! Olive oil does have a lower smoke point than other oils, but research from recent years showed the stability of oil is not related to the smoke point. From what I know olive oil is actually a monounsaturated fat, which makes it closer to saturated fats like coconut oil and butter, both of which are pretty stable at higher temperatures. But you might know more than me being a pharmacist

Most of the fats in olive oil are monosturated, but about 20% are polysaturated (in extra virgin even more), which can turn to transfats while heating, which is quite a huge amount of transfats. (Atleast if you are like me and use genorous amount of oil while cooking. :'D ) Thank you for your nice, respectful answer!

    MyVegan doesn't ship to the US, sadly, through the myvegan site. It does through myprotein though -- but it doesn't have all the products that myvegan's site has. You can find similar things on myprotein, but I don't expect that Madeleine's code will work. Just heads up.

      If you pour over hot water on top on any waxed fruit/veg, some of the wax comes off. I do it every time because it grosses me out so much 😂

    I havent finished this one yet but before I forget, I'm not sure that sea salt is healthier, I remember Pick Up Limes (who is a nutritionnist) saying that table salt is better from a nutrionnal viewpoint bc it's supplemented in iodine

      If you’re eating a variety of whole foods, you shouldn’t have to worry about not getting enough vitamins and minerals. Unless you have a absorption issue.

    Would you do that kind of video again but with a certain category like essentials for a sick day or for a girls night in etc? I was sick last week and I didn't know what to eat except for veggie broth because the only thing I knew from my childhood was chicken broth. Maybe you have some better ideas 😅

      When I’m sick I have vegetable soup or lentil soup, even tinned soups from the supermarket are often vegan. Girls night in - crisps and hummus, vegan chocolate, popcorn? Xx

    Salt is salt no matter where it comes from. So it is not true, that one kind of salt is healthier then others. Especially not sea salt because it has a lot of micro plastics from the sea in it..

    Sadly Riverford are ethically a bit dodgy. Shame, because they're also really local to me. Several of the partners in the business are involved with illegal fox and hare hunts, and badger culling. Guy Watson's (founder's) sister is one of the joint masters of the South Devon Foxhunt and they have been caught hunting fox cubs on Riverford land before. And the family who run Riverford up in Yorkshire (Home Farm) and own 25% of the business are key figures with the local beagle pack (hunting hares). Guy himself doesn't hunt but his response when all of this was exposed a few years ago was that he supports others to do "what they think is right" - ignoring the fact that hunting mammals with packs of hounds has been banned now for some time... I think it's a great shame, as they market themselves as an ethical business. I now get my veg from a small box scheme up the road and had to enquire with them directly about their ethics before deciding to switch to them.

    Do you have any suggestions of vegan butter with no sunflower oil available in the uk because i hadn’t found one yet and im allergic to sunflower oil so have had to stick to non vegan butter 🙃

    I’m vegetarian trying to go vegan so of course I already have all of these plus more vegan essentials (all the beans, all the seeds, all the nuts, all the frozen veg/fruits) but I still struggle with mainly two things : I don’t like sweet breakfasts, i prefer savory and my go to has always been eggs (mostly pre-boiled, for a quick to go, cold breakfast). I always crave something not too heavy, cold and quick and I don’t know what to do appart from smooties, that are mostly sweet. My second issue is with fresh-satisfying-low carb snacks for when I’m studying or for the evening. My go to is usually a small piece of cheese, and often a few cucumber slices or carrots just don’t do it for me. Nuts are too dry for a snack (that’s just me being wierd) and I don’t really have ideas. Help?

      Breakfast idea - toast with either avocado and nooch or marmite and (optional) vegan cheese!
      Snack idea - I love falafel smeared with a bit of houmous, or tortilla chips with salsa
      Hope some of these appeal to you! 😊

      Tofu scramble! Or if you dont have time, find a nice vegan breakfast burrito recipe online, make a whole bunch of em at once and freeze them individually. Then when you are hungry in the morning you would just take one out and warm it up! I love doing that because it's satisfying, healthy, and really really tasty. Think tofu, peppers, onion, salsa, rice, beans, anything you want really in them. Also for a snack, this might be weird but smashed advocado wrapped up in a tortilla shell is super satisfying, if a little healthy fat is what you are craving

    Eat real.... Aldi's own are just the same, but loads cheaper... They also do a chocolate chip cookie, as well as their own version of candy kitten !!!

    put in tofu or tempeh fried or just as it is in curry
    i swear it's the best
    bought lot's of fake meat tbh, i'm just transition to not eat meat at all, other than fish, egg, and milk product

    Do not, under any circumstances by the M&S Plant Kitchen cheese. It tastes like coconut and feet. Applewood smoked vegan on the other hand... wuff.

      @@ivanafata I would say the last one isn’t more calorific no, and it’s aim is easy to do recipes tbh.
