Andre Prince is the Owner of Prince's Hot Chicken. The gentleman with the prosthetic hand was a metro police department officer and security for our family restaurant, Officer Jackson.
I never would have thought to use the pickle juice for the brine. And they use the fat to make the sauce pretty cool indeed. I will have to give this a try.

Our Great Great Uncle Thornton and the whole Prince family finds this quite creative. A lot of extra steps and ingredients never used or adopted in original Nashville Hot Chicken. Looks good though.

My personal preference is a meal of sides with cornbread. I think the South is the only place where you’ll see macaroni and cheese listed as a vegetable 😂Wish I’d seen you around! No, google it, it's called brine, a salty solution to make the meat more tender + keep it from getting dry. We tried a brine on our whole turkey one Thanksgiving and the breast was superb.
For a hot honey version would you just add honey to the sauce and leave off the brown sugar or keep both brown sugar and honey, or how would you reformulate the topping sauce if it's a bit different?
I'm impressed. I didn't think British people could tolerate any hot spicey food. If I've made the sauce too hot, how do I tamper down the heat or do I just have to start the sauce all over again w/ less hot spice?
You can put a splash of plain white vinegar into regular milk and let it sit for ten minutes. When you see that the milk has curdled, it's ready. I almost never buy buttermilk anymore, I just add the vinegar. I've read that lemon juice can be used instead of vinegar, but I haven't tried that
@@jelsner5077also they could make it by taking double cream and whipping it to oblivion to make butter and the resulting liquid is buttermilk 😅 A lot more work though lol
