    Sam, as a Ukrainian staying in Ukraine right now, I thank you. Varenyky is a dish I used to have every Sunday, my grandma cooked it and the whole family gathered for it, and it goes on like that for generations in many of our families. This is so warming in these horrendous times. Thank you, this is important to me and to all of us.

    Thanks for this fundraiser Sam. I've met Jose Andres and eaten in several of his restaurants. He and WCK are the real deal. I've donated to them twice recently. The first time when they were feeding refugees at the Polish border crossing and then again when they opened kitchens in Ukraine. Everyone, please donate to them. I live in one of Ukraine's closest neighboring countries and doing my part, however small it is due to severe illness at the moment, but seeing you and the rest of the world chiming in and doing stuff as well is heart warmening. We're gonna help the Ukranians get through and over this by doing one thing and one thing only: Sticking together!

      @@dippegalant Yeah, I don't know how you stood towards these other countries, I didn't want to address your personal attitude, but more a general theme that emerged. My comment was just about a perceivable difference that certain countries are just shrugged off and ignored or you have to do hard work convincing people to care, where as with Ukraine there is a massive response. It would be nice if the sentiment towards Ukraine and it's people translated to other countries for more people as well.

      In my country we just passed a special bill to ensure that Ukranians can get help here as refugees while we're still sending Syrians back to be killed and tortured by Assad.

    I use my husband’s polish grandma’s pierogi recipe- potatoes, farmer’s cheese, sausage, grated onion, and S/P. They are boiled and then pan fried in butter. Then sour cream is added. Sooo good, but dumpling stuffed with potatoes and cheese… you can never go wrong!

      We make pirogi [pirohy] in Slovak language (bordering Ukraine too🇸🇰❤️🇺🇦) with cooked potatoes mixed with sheep cheese (bryndza), cooked in boiling water, no pan frying then put melted butter on it, and serve with white yoghurt/sour cream, green onions and bacon. The most delicious thing ever, especially the sheep cheese. Sadly, you couldn't get it anywhere else than Slovakia or Romania I believe, even our Czech brothers have had problems getting it few years ago. But if you can get it, definitely do so, because it's very delicious, its creamy, heavy and pretty salty (that's why we mix it with smashed cooked potatoes, to make it more gentle) and it tastes like no cheese I tasted so far. Sam's recipe is pretty accurate, but we don't pan fry, to make it a bit less unhealthy so to say and we add sheep cheese and green onions in it too. Or you can do it in sweet way filling the pirogi with jam, cottage cheese and potatoes. Put melted butter and powder sugar on top, also very tasty, so you have 3 types of pirogi in one pot and all taste unique.

    My Grandma made pierogi every year for Christmas, and since she passed away, my mom and I carry on the tradition. You made yours very similarly to ours. We use kraut to fill ours as well as the potatoes & cheese. Thanks for sharing!

      Fyi - vareniki are sweet, filled with fruit. Traditionally sour cherries. Pierogi are savory and as another person said, the dough has sour cream in it to give that traditional tangy flavor and elasticity.

    I literally made these today with my mom (some potato cheese with dill and some stuffed with fried sauerkraut) and here you are making them. I grew up with them and our Ukrainian Baba(grandma) calls them peda hea, for the onions we slice them thick and cook them in a ton of butter with a bit of salt and pepper til they are completely soft and caramelized(30+ min medium to med high, dont burn) and serve with the onions and sour cream and kielbasa for a side. Boiled for dinner, fried in butter for breakfast.... can't wait for breakfast.

    In Poland we used to call it "russian" pierogies but since the war started we changed its name for "ukrainian" pierogies. Personally I recommend to put bacon and onion inside with popatoes ;)

      Actually when we say sth is "ruskie" usually it means that it comes from russia or sth is russian. BUT in this case "Pierogi ruskie" comes from Ruthenia, and in Polish it means "Ruś". If we want to say that sth comes from "Ruś", we say also that it's "ruskie (adj.)". So keep that in mind that "pierogi ruskie" doesn't come from Russia, it comes from Ruthenia.

      The way it was explained to me is that calling it "the" Ukraine suggested it was just a region rather than a sovereign nation. (In grade school, we were taught the name "the Ukraine" - but the USSR still existed at that time, so...)

    My late former mother-in-law was Ukrainian. She taught me to make perogies. I have made them a few times, with success mostly.
    1. Mum-in-law didn't fry them, just boiled them, dressed them with onion and served - with oceans of sour cream
    2. Mum-in-law ALWAYS used orange cheddar!!
    3. You can fill them with any damn thing you want. I made some filled with sauerkraut and bacon - which were awesome. Online, some people seem to like sauerkraut and mushroom filling, although I haven't been impressed with them. You can even make dessert perogies filled with cherry pie filling, apple pie filling. Of course, you don't dress the dessert perogies with onions and bacon; instead try cinnamon, honey(?), nutmeg, serve hot with ice cream, etc.
    4. I tend to dress my boiled perogies with layers of fried onion in butter, crispy bacon bits and sauteed mushroom slices (in butter). Of course the melted butter also goes in with the dressing materials!!
    5. Commercially available perogies tend to be made with orange cheddar, but I'm not biased based on colour, Max, I like them anyway!

      Eat them fresh boiled with a little butter. Fry them up when they're day-old out of the fridge. That's the move.

      Nice insights into your families eating heritage! I''m gonna make a stand on the 'orange cheddar'. First up is that most 'cheddar' is not cheddar. Cheddar is a specific region in the UK, they should have done what the French did with Champagne and registered it so that you cannot claim to make 'cheddar' unless it's from that region. Proper cheddar (from anywhere around Cheddar - yes it's a place) is spectacular, aged to different levels of maturity and always deeply tasty - so many of the imitations I've tried here and in the US are lacklustre. And it's NEVER RED . NEVER. There are some English cheeses that are coloured red (I don't know why) - Red Leicester is a good example. It adds nothing to the flavour so I suspect it was a marketing gimmick.

    Thanks for reminding us to help our Ukrainian neighbors. Once you get the hang of making pierogis, you are half the way to making Cornish pasties, a staple food of miners in old Butte, Montana. Butte pasties are a regional food treasure. Make these--Max will have a lot of fun making cracks about Butte. Hey, there's one now!

    Pierogis are the best, no matter which Slavic countries it comes from, they all have their own twist on the recipes. Being Polish I make mine with Potato and cottage cheese, meat pierogis, cabbage filled pierogis, sour cherry pierogis, lentil pierogis, mushroom pierogis, these are all the pierogi recipe's I learned from my grandma's. Pierogis are the bomb

    My Babba (Ukrainian grandma) wasctaken as slave labor by the Nazi's when she was 16. Auctioned off to a German family. I grew. up with her "mixed" cooking of German and Ukrainian food. Homemade Saurerkraut, potato pancakes and Spatezle from Germany, and traditional Ukrainian foods. Pierogi filled with potato, farmer's cheese, Blueberries, Kapusta (Saurerkraut). Thank you for this video and the donations. Food and the love of it , is a universal language that binds us together

    It's great to see you dedicating this video and its proceeds to help with the horrible situation in the Ukraine.       You definitely should give it a go, it's one of the most delicious things mid-eastern European cuisine can offer. But to be honest I don't fry it, so it's a bit less unhealthy (still tastes awesome😉) and you can make it sweet too, by filling pirogi with jam, sweet cottage cheese and cooked-smashed potatoes (each ingredient in separate pirogi) after cooked put melted butter on it and powdered sugar. Enjoy
