    Mutton Kalia is a mutton curry recipe originated in India, made from curry and few spices. Mutton Qaliya recipe is specially prepared in Aurangabad, India. It is quick and easy mutton curry recipe. You can prepare this Mutton Khaliya at home and serve with Naan!
    Ingredients:
    - 1/2 cup Oil
    - 1 Inch Cinnamon Stick
    - 1 Blade Bace
    - 4 Cloves
    - 5-6 Black Pepper Corns
    - 6 Green Cardamoms
    - 1/2 cup Red Onions (sliced)
    - Salt
    - 500 gms Mutton
    - 1 tbsp Ginger Paste
    - 1 tsp Coriander Powder
    - 1 tsp Turmeric Powder
    - 1/2 tsp Red Chilli Powder
    - 1/2 cup Curd
    - 1 cup Water
    - Salt

    The way you take us back to the histories of cooking is fantastic!! At my home in Kolkata a similar recipe is cooked with a little garnish of whole roasted black pepper corns. The kalia stew can be had like a shorba or a broth even without rice or breads!

      Actually Khalia used to be cooked with black peppercorns only. Khalia popularised in Tughlaq period. Chillies came to India later in 16th Century with the Portuguese. Before that the black pepper and long pepper was the only source of heat ...not only for India but for all of the discovered world.

      Mace blade is the lacy dried covering of the nutmeg which it surrounds and protects. It has a softer, more delicate and sweeter flavour than the nutmeg and can be used as a substitute for nutmeg in any dish. You will often find the blades in mulled wine mixtures and they are a great flavouring for rice dishes (they can impart an orange colour), excellent in creamy/cheese sauces, soups & stews. To use just crush between your fingers and add it in. Remove before serving.
