    Thanks for the recipe ... I was a little reluctant to try after various failed attempts earlier ... but here the outcome was just unbelievable... I got the most fluffy and soft idli I have ever made ... thanks a lot for sharing the recipe ... for those who don’t get the ready urda dal flour ..like in my case I dry roasted the urad dal and then grinded it to fine powder after it cooled down .... very nice recipe ... do try 👌😉

    This was amazing..thankyou..my question is if I wanted to soak urad not pwd how much wld I soak ( 1/2 cup ) ? I wld still use the 1 cup of Rice pwd.

      If you don't have urad dal flour than you have to soak dal and grind. you can get from any grocery store urad dal.

    Idly is soo super 👌 but for making it please answer my question that can I use
    1.baking soda instead of eno
    2.curd instead of lemon juice?

      Hi... you can get urad dal atta from any grocery stores. i keep all mung dal aata, urad dal atta, rice flour att... its very quick & convinient.

    I have no stores nearby which sells urad dal powder. in that case should I roast whole urad dal and powder it or just powder it in blender. ?

      Surely you can roast Dal and grind, or you can always soak rice and dal over night in water and than grind it .

      Hi.... Eno is actually good for healthy , some people use Baking Soda instead of Eno, i always try to avoid to use baking soda, Eno helps to reduce gastric problem as well as acidity. Infect when we have such problem we drink Eno in water.

      You can use baking soda in place of eno and yes simply add 1 or 2 spoon of sour curd in place of lemon juice.

      Ofcourse you can do that, infact it will make idlis even softer and fluffy. Only thing you need to make sure is that, just add eno salt when u r spooning idlis into the idli paltes,and setting it up in idli cooker else it won't rise or get fluffy.

      Hi.....Ramshiya, Eno makes idli, soft and spongy, if you don't have Eno you can use, baking soda, in place of Eno, but use half of the measurment of Eno. I prefer to use Eno, because it is good for digestion. Infect we drink it in water when having gastric problem..

      Ramshiya Iqbal if u dont hv eno,prepare it at home adding 1/4 tsp baking soda,a pinch salt over it n lemon juice of half a lemon.put b. soda first ,then salt n then squeeze lemon juice over it directly in any batter,u will get d same or sometimes even better results.Baking soda is good for body but in a v limited quantity,it has alkaline property

    Nilu ji it looks like you have added about 1 tsp lemon juice to the batter , not few drops as you have mentioned in this video am I right.

      Hiiiiii.. Lakshmiji, lemon/lime juice is just to activate Eno, but if you add more, its fine because it will give nice tangy taste, like fermented idli. if even eno salt also little more don't worry idli will become more soft. MUST TRY recipe, you will enjoy.

      Hii... Rukmini, its always better to use Eno instead of baking soda, It has its medical benefits too. its always good to take Eno when we have a gastric or acidity problem. I have added lemon juice because, its instant Idli, its not fermented, soto get little sour taste added lime juice.

Its always good to keep ENO in your fridge. Its good to have if you have acidity or eaten some fried or spicy food, u can drink it in water,

      Hii,...Nadarajah, You can get both flour from any Indian grocery store, i live in USA ,so i get from Indian grocery store here..I always keep with me, URAD DAL FLOUR, RICE FLOUR, MUNG DAL FLOUR....its very easy , quick & convinient to have all of it, so when u need for recipe, you don't have to go through long procedure like soaking, grinding all that.

      Thank u for replying. Anyway I grind the urad dal n rice into normal batter while I left the rest for fermenting n I took 3 cups of batter n mixed with 1tsp eno n 1tsp lemon juice n added 1 tbsp. of beetroot puree n the beetroot dosa turn out well! Thanks to u .....

    I made it.... But don't know how... My Idlies became so dense that it was like "Fudge Rice Idlies" are we supposed to use granulated flour ? My flour was finest

      You must have added more water. batter needs to be like semi thick, else idlis won't rise up and get fluffy. So make sure u use less or adequate water required to make batter semi thick only.

      Hi...I hope you are using Eno not baking soda, because sometimes by adding baking soda it gets light yellow

    Rice flour is easily available but not urad dal flour i looked for it at andheri but the shopkeepers tell head dal flour is never available and the chakkiwala does not powder and give. Please help me and if I have to grind then what will be the quantity. Tks

      Hi Juli.... here the proportion is 1 : 1/2 But if you are taking urad dal seeds than take 1 & 1/2 Cup rice flour , Urad dal seeds 1/2 Cup + 1 Tsp methi seeds.

      Just for your reference, if you ever go to south mumbai, many stores are selling urad dal flour in fect all kind of flours, always keep in kitchen, cooking becomes easy.       Yes you can ferment, and after fermentation, add LITTLE of baking soda while making Idli. try with samll quantity, i hope you like.

    Instead if riceflour why should'nt we use brownrice flour with unskinned urad dal far more fiber , plain riceflour has got empty or zero value to it except added fat.

      Hi....Mercy , you are right about natural fermentation , Eno is also not bad , The fast acting effervescent fruit salts, used as an antacid and reliever for bloating, flatulence, stomach gas .
