Chad, I am an old mechanic about twice your age from South Africa: As the engine was not level, the Diff pinionshaft should face upwards the same amount that the rear of the engin is downwards.. The angle that both Hooks joints [universals] MUST work at the same angle not to have bad vibrations. [I am not Inglish speaking] I have written books for motor mechanics up to Grade N3 so I am not talking nonsence.. I like the energy watching you work!

In the video when you last went to the junkyard looking for a rear end, you walked past a Ford Explorer that still had its rear end in it. Those SUVs have rear ends referred to as an 8.8 and they are desirable because they are narrow and almost unkillable, just like the old Ford 9" rear ends. That might be a good candidate for one of the builds.
Oh, and I love the look of the grill as it is now, laying slanted backwards towards the rear. It makes the car look as it is going fast while it is standing still.

Chad, you need to set the main part of the chassis dead level and set front axel so he wheels just touch the ground. The rear axel can be slid up under the frame and attached so that with the wheels on the rear of the frame is just an inch or two above level. That will give the car the right attitude. By the by you wouldn't need a driveshaft tunnel cause the driveshaft would be below floor level. After watchin a bit more, the plate that connects the x members will have to be raised to clear the driveshaft the way you have it. If you simply move the axel under the frame you should clear that plate be touched.
