Looks great. Curious, do you keep them wrapped in tinfoil for the last hour?

For the last hour I keep them unwrapped so that the glaze I put on sets in and carmelizes a little bit! If you are short on time or running out of smoker fuel, can also put it under the oven broiler for a few minutes.
