I'll be sticking with the original method. I like how the original way seems to pull out water, hold less water and allow less water in the freeze dryer.

I saw a video of a guy using a Büchner funnel to pull moisture out as an alternative to freeze drying. What if you made a special vacuum table for those trays to sit on before freeze drying? I bet you could cut off even more time in the freezer.

Can you still collect in a jar of ice water and then pour it out over the tray when ready?
Yes!
How much faster would you say the freeze drying goes?
Down to 8 hours if packed as a normal tray. Depends.
Why does it still look wet?
It’s the hash. But it’s fully dry. Watch the other videos showing other textures.
