Hello. I tried to bake these cupcakes on a regular and standard size cupcake liner and they sink. I also tried them on tulip liner and they did alright. But I wanted to ask you if it should have been ok on regular cupcake liner
Hi Catalina, It will not give you the same result if you will omit the ube jam. You will need to adjust the measurement of sugar and other ingredients. You may want to check and use my vanilla cupcakes recipe and substitute the vanilla with ube extract. maricelsrecipes.com/vanilla-cupcakes/#recipe Or if you like chiffon cake, you can use my Vanilla Chiffon cake to make ube cupcakes. You just need to substitute the vanilla extract with ube extract then add 1 to 2 tsp more ube extract or purple color to your liking. maricelsrecipes.com/vanilla-chiffon-cake/

Hi. Yes it is stable. Especially if you will cover it with fondant. It freezes well too😊 Usually, I use ube chiffon cake for layered cake with light frosting.
I will be using Swiss merengue buttercream with this recipe. Plan to freeze it for a couple of days and apply simple syrup prior to stacking…… I’ll be making a 10 inch round pan with three layers. How much of this batter would I need. And thank you!
