Moist Ube Cupcakes with Stabilized Whipped Cream Frosting

  • This Ube Cupcake recipe is moist and fluffy. Made of purple yam jam or ube halaya, coconut milk, vegetable oil, eggs, sugar and cake flour.
    With stabilized whipped cream frosting then top with coconut string or macapuno and ube cake crumbs.

    Yields 12- one cupcake for optional cake crumbs topping
    Here are the ingredients to make ube cupcakes
    Dry ingredients
    1-1/4 cup cake flour 163 g
    1-1/4 tsp baking powder
    1/4 tsp salt
    Wet Ingredients
    2/3 cup coconut milk
    1/3 cup vegetable oil
    1/4 cup ube jam
    2-1/2 tsp ube flavour
    Egg mixture
    2 eggs large at room temperature
    2/3 cup granulated sugar
    Stabilized whipped cream Frosting
    1 cup heavy cream
    1/2 tsp pure vanilla extract optional
    1/4 cup fine granulated sugar or powdered sugar
    1/4 cup powdered milk
    1 tsp unflavored gelatin
    1-1/2 tbsp cold water
    Optional toppings
    Coconut Strings or Macapuno
    Ube cake crumbs

    Hello. I tried to bake these cupcakes on a regular and standard size cupcake liner and they sink. I also tried them on tulip liner and they did alright. But I wanted to ask you if it should have been ok on regular cupcake liner

      Hi Joan,
      You can use any cupcake liner. It should give you the same outcome with or without a cupcake liner.

    If I don't have ube jam, can I just use ube extract? Will it affect the result?

      Hi Catalina,
      It will not give you the same result if you will omit the ube jam. You will need to adjust the measurement of sugar and other ingredients.
      You may want to check and use my vanilla cupcakes recipe and substitute the vanilla with ube extract.

      Or if you like chiffon cake, you can use my Vanilla Chiffon cake to make ube cupcakes. You just need to substitute the vanilla extract with ube extract then add 1 to 2 tsp more ube extract or purple color to your liking.

    Hi! I would like to make this… into a layered cake, will it be stable? And can I freeze this too?

      Hi. Yes it is stable. Especially if you will cover it with fondant. It freezes well too😊
      Usually, I use ube chiffon cake for layered cake with light frosting.

      I will be using Swiss merengue buttercream with this recipe. Plan to freeze it for a couple of days and apply simple syrup prior to stacking…… I’ll be making a 10 inch round pan with three layers. How much of this batter would I need. And thank you!

      Hi Joan,
      I have not made this in 10" round pan. It holds about 10 cups of cake batter. Depending how thick you like your cake. This ube cake batter recipe makes about 3 cups. You can easily change/ double the servings on my website maricelsrecipes.com/ube-cupcakes/#recipe

      Thank you so much. Don’t think this cake will hold a 1.5 to 2inch inch thick cake batter if I make a 10’inch round cake.

      You're welcome. You need to x2 or x3 the ingredients measurement
      Here's the measurement for about 6 cups of ube cake batter.
      Dry Ingredients
      2 ½ cup cake flour spoon and level
      2 ½ tsp baking powder
      ½ tsp salt
      Wet Ingredients
      1 ⅓ cup coconut milk
      ⅔ cup vegetable oil
      ½ cup ube jam
      5 tsp ube flavour
      For the Egg mixture:
      4 eggs large, at room temperature
      1 ⅓ cup granulated sugar

      Hi Lindsay, thanks for reaching out. I haven't tried using ube powder. You may need to adjust the liquid measurement for this recipe. I can't guarantee that it will be moist.
