No- Egg Banana Muffins with sour cream and oil Moist up to 5 Days!
This incredibly Moist, soft, and tall Banana Muffins are made with Sour cream and oil without egg. The best banana muffins you'll ever have and stay moist up to 5 days! It's so quick and easy to make. Perfect for breakfast and afternoon snack or dessert.
Here's what you'll need
Equipment
• 12 muffin pan
Ingredients
Wet ingredients
• 1 cup about 3 to 4 overripe bananas or thawed frozen bananas, bring to room temperature
• 2/3 cup brown sugar packed
• 1/4 cup sour cream or yogurt at room temperature
• 1/3 cup milk substitute evaporated milk
• 1 tsp lemon juice or vinegar
• 1 1/2 tsp pure vanilla extract
• 1/3 cup canola oil or neutral cooking oil
Dry ingredients
• 1 3/4 cup all-purpose flour spooned and leveled
• 1 tsp baking powder
• 1 tsp baking soda
• ½ tsp salt
Optional Add-ins
spices- cinnamon powder and nutmeg
nuts- walnuts, cashews, etc.
chocolate chips
Recipe notes:
Use overripe bananas for best flavor.
Bring all the cold ingredients to room temperature to easily incorporate other ingredients and prevent overmixing.
For a high rise muffins start the oven on high temperature. Bake in preheated oven at 400°F for 7 minutes, then drop to 350°F and bake for another 10 to 12 minutes or until the inserted toothpick comes out clean.
This method makes the leavening agents react quicker, creating amazing dome top.
To keep banana muffins moist longer: Adding oil at the end allows the rest of the ingredients to incorporate or homogenize better and hydrate the flour, as oil can prevent that. The oil seal the moisture in the batter, then traps the gasses produced by the chemical reaction of the leavening agent, slowing down the gluten formation and keeping the muffins fluffy and soft.
It's all about the science of baking!
Store in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. Freeze for up to 2 to 3 months. It can be thawed at room temperature or heat frozen banana muffins in the microwave.

      They have the same ingredients but the amount or ratio of each ingredient are not the same like chocolate pudding. The ratio of egg yolk and cornstarch are not the same. Therefore, not the same taste and texture.

    Tried this today. I wouldn’t say it’s the best recipe TBH, cornstarch gave it a sandy texture when you eat it. Maybe I did something wrong? I cooked it on a low heat for a long time while whisking, but it still didn’t turned smooth

      Thank you for your feedback. You maybe overcooked it or the heat maybe on med-low. To fix the broken/ grainy ganache or if the fat separated; use a double boiler (ensure the bowl is not touching the water) and add a bit of milk gradually while whisking vigorously until smooth.

    Maricel you are a life saver! My daughter picked 12 gallons of concord grapes and viewing other recipes most folks pinch the grape to remove skin from pulp. Ugh....so time consuming for this many grapes. I kept thinking....there has to be another way to separate the skin from pulp and seeds. Ingenius use of a wire crisping rack or something similar to carry out this process. Now my daughter won't call me a slacker! Hahaha....Thank you for showing us a more productive way!

    Never made sweet pickle relish before so tried this one and it tasted amazing! Liked how this one has Tapioca starch to thicken it. Gave it to a few members of the family and they all loved it too. Delicious with burgers and also delicious with some mature cheddar cheese 😋 Printed this one off and added it to my recipe folder.     I made this few days ago (8/11/2024) and its my first time to make siopao. I turned out great. Thank you for the detailed recipe. ❤ The filling has rich flavor. I did the short version by braising and meat was really soft. I will probably skip the hoisin sauce next time as i want the sweet filipino style sauce. I also learned the hard way that i need to cook it right away after proofing. Some turned out flat instead of dome shaped. Following your channel for more great recipes ❤😊

      I did not try it with fondant. It may work if you cover the cake with ganache then freeze it before you cover with fondant.

      Sorry cornstarch ginamit ko hindi corn flour. Alternatively, I used tapioca starch for thickening and gives a better smooth texture than flour.

    Be careful with potatoes that have green skin.       I found out this KNOWLEDGE ARTICLE According to the University of Idaho Cooperative Extension Service, "Potato tubers are specialized stems of a potato plant, and tubers that are exposed to light, will naturally turn green. The green is nothing more than chlorophyll, a harmless compound found in all green plants. However, when potato tubers turn green there is usually an increase in a glycoalkoloid compound called solanine. Consequently, it is important to store potatoes in the absence of light to prevent greening. Tubers with a high concentration of solanine will taste bitter, and can be harmful if eaten in large quantities. To be safe, it is best to not eat the green part of tubers." You do not need to discard green potatoes.     Hello. I tried to bake these cupcakes on a regular and standard size cupcake liner and they sink. I also tried them on tulip liner and they did alright. But I wanted to ask you if it should have been ok on regular cupcake liner

      Hi Joan, You can use any cupcake liner. It should give you the same outcome with or without a cupcake liner.

      Hi Carolyn, Although almost the same ingredients the texture and taste are different than chocolate pudding. This recipe mimics the consistency of melted semi-sweet chocolate with milk. Here are the ingredients showing different measurements Chocolate Pudding Ingredients 1 ⅓ cup sugar ⅔ cup cocoa ⅓ cup cornstarch 4 ½ cups milk 3-4 tablespoons butter 1 teaspoon vanilla Chocolate Ganache made of cocoa powder Ingredients: 1 1/2 cup whole milk or evaporated milk 2/3 cup cocoa powder 2/3 cup granulated sugar 1/4 cup cornflour 1/4 cup butter salted or unsalted add a pinch of salt 1 egg yolk

      Hi. Yes it is stable. Especially if you will cover it with fondant. It freezes well too😊 Usually, I use ube chiffon cake for layered cake with light frosting.

      I will be using Swiss merengue buttercream with this recipe. Plan to freeze it for a couple of days and apply simple syrup prior to stacking…… I’ll be making a 10 inch round pan with three layers. How much of this batter would I need. And thank you!

      Hi Joan, I have not made this in 10" round pan. It holds about 10 cups of cake batter. Depending how thick you like your cake. This ube cake batter recipe makes about 3 cups. You can easily change/ double the servings on my website maricelsrecipes.com/ube-cupcakes/#recipe
