Apparently the boardroom scenes are often quite chill and it's edited for effect.
Although there was once a scene where the candidates were out of the room and Sugar did snap at one of his advisers (can't remember when but it stuck out in my mind) saying it wasn't what he'd asked for from them. Nick Hewer also recounts telling Sugar not to talk to him like that.
