Every filipino family has their own version of adobo. My family has 3. My Tito Boy loves his adobo with potatoes and extra sabaw (broth), my dad makes his extra dry with a thick sauce, lola makes hers with hard boiled eggs, potatoes, pork and chicken, and diced chicken liver.
I have made chicken adobo for years but adobo made this way is SO GOOD. I used half shoyo half vinegar like my chicken recipe and also used almost a whole head of garlic. Amazing. So tender, so delicious, and I didn't even brown the meat first cuz I had no time and had to get the food on da table!
@@KeepingItRelle I made it last week (pork). There are two people at work from the Philippines so I brought them a dish and they said it was really good. I used apple cider vinegar because ...well ...it was the smallest bottle the had at the store and I didn't want to buy a huge bottle of it. :) I also used minced garlic that came in a little jar - two tea spoons as I have a 3qt Instant Pot. I made it again this past weekend, but this time it is a mix of pork and chicken. I have not made the rice yet. Thanks again for the recipe. Cheers! Ummm ...I mean, mahalo! :)

You rock girl. I have tried several adobo recipes and its supposed to be simple but none turned out to my liking until i tried your recipe. The biggest difference is the use of the pressure cooker. I didnt have to add water to boil the meat for an hour as u would in a regular pot. This recipe gave me the real adobo flavors and aroma. More power to you.

Hi. I want to try this tomorrow, but i have just one questions. Is there enough liquid in the pot? My Instant Pot manual says it has to be at least 1 cup of liquid for pressure cooking. Is it ok if i use less? (0.75, in this case). thx.

I fond there is no need for the horizontal cuts... the layers of the onion allows it to break up. Use the dull side of the knife to clean off your garlic crusher. A good sharp knife will trim the aluminum of the garlic press. My step mom taught me how to make adobo on the stove. Thanks for the insta pot tips!

5:42 the secret: have a wet rag right next to the onion while you are cutting it....the moisture of the rag will attract the onion chemical before it hits your eyes :-)
When I read the written instructions I feel confused when comparing it to the video. There’s no way that was only 1 lb of pork and that was 1/2 of a very large onion, not a small one.
You forgot the 3 important ingredients - “magic sarap”, oyster souse and pork cubes. Without this pork adobo will NEVER taste the same no matter how you try
Important ingredients of adobo? How can they be when those were modern creations. If u say those are add on ingredients to enhance the flavor of adobo, then it is an acceptable statement

Yes. The pork will release juices as it cooks.

The written recipe is for 4 servings. If you need/want more or less you can adjust the recipe according to your needs.
Dont need to mince your onions, just quarter it then put them all in.
I like mine diced, but you totally can quarter them if you wish.
I think anywhere there's usa navy presence, there will be adobo.
