It was a nice, casual and honest conversation about dating. It seemed surprisingly similar across the different European countries. I wonder if there are any major dating differences in Asian, South American or African cultures.
I feel like they're not really sharing differences between countries, but differences between personal experiences. Usually, people in the same social circle will have similar meeting and dating styles, so it's normal that each of them thinks: "This is the way people do it in my country", but you can be from Spain and relate more to what the German person is saying, or be from the UK and relate more to what the French person is saying...

In Spain we do ask "do you want to be my girl/boyfriend?", if not, you aren't dating. This is something that annoys me a little because in Spain it's normal to kiss people without being in a relationship, so people from other countries may think their are dating a Spaniard just because they kissed 😅😅
In mexico you need to draw a line between gf and bf because if you sleep, kiss and spend time together you are not necessary a bf/gf just a friend with benefits so you can date with more girls or mens if you want a relationship you have to ask

Hanging out with lots of internationals at Uni (in UK) I can definitely say that UK and Spain have biggest hookup culture (most things end up one night stands). Other countries, Germany and Eastern Europe it tends to be more mature dating which tend to end up with more long term relationships 🤷♂️
Yeah, in Germany we also have this unspoken rules to not have sex before the third date. It is usually a wise idea to uphold this. Otherwise it's too close too fast.
As a German myself, I never met a person who did the third date rule. All people I know just do it after person or situation. So some have sex after the first date and some wait more than months to have sex. It really depends.
I don't think it is the case in Spain anymore. The Spanish society has become so hedonistic of late that almost everybody thinks that it is nonsense to lose an opportunity of having fun (sex), even if you are convinced you are not seing your partenaire ever after.

Plans tend to go out the window where the heart (or other body parts) get involved. Same goes for the "official talk". It doesn't really exist for most people. The whole thing is very non-verbal. We find it kinda weird to have multiple sex partners unless that's the context you met in to begin with, so usually physical proximity (even just a kiss) means something is starting. You're expected to wait to see where it goes before looking elsewhere. The only real talk happens if there is discomfort (too fast, not working at all, etc). Then just talk it out and evolve from there, together or separately.
Some UK people do the whole US-style "dating" thing over a meal or whatever. But the more traditional (and successful) dating method is to just meet in the pub.

I think it's very different for a lot of people, in Spain it depends a lot on the type of people you go out with. I guess she might come from like an upper middle class environment. A lot of people don't really go on dates, some do but it's not the majority. In general we don't assume we're bf/gf until it's made official, so we need to have "the talk" before. We can flirt, we can make out and be sex partners but unless both parties agree by talking about the elephant in the room, we're not a couple. Also if no one else knows about it, you're most likely not a couple either (some people hide it bc they're probably banging more people or have family issues). But sometimes couples can suddenly start from long lasting friendships too so it can depend. If you come to Spain BEWARE of Spanish fboys, don't fall for it easily and make sure you have THE TALK, if not you're just "friends".
