Ive used an electric knife (not an electric fillet knife) to fillet redfish down in Louisiana. I was not very impressed it chewed up the meat and left more on the bone than a regular fillet knife. Yours look beautiful. I may have to give the electric another try. Thanks for the video!
I use a Scimitar blade by Victorinox. The Swiss Army folks. Absolutely wonderful. But im seriously thanking about getting a electric knife for slicing my smoked brisket and smoked Turkey. One more thing. I don't gut my fish anymore. I fillet my fish in the round. Much easier and quicker. Have a great day. Tight lines.🎣🐟😋👍

Where's the rest of the video - the part where you remove the rib bones off the fillet? For this type of filleting, taking a fillet off of a salmon is not the hardest part of the process - it's removing the rib bones. I personally do not fillet salmon that way and prefer to butterfly fillet, leaving the rib bones intact on the carcass vs having to remove them off of a fillet. Pretty sure an electric knife would fail miserably at that...but was kinda hoping to see how your electric knife worked at removing the ribs. Seems to me that a static knife with a sharp tip would excel at that.
You are absolutely correct on the rib bones. I have tried it with some success via the electric but it is much easier and more precise on the regular knife. Now this electric was just a basic dual blade but the higher end single blades might actually do better. I’ll show more on the next one of trying start to finish with the electric
You’re forgetting how snooty the salmon and steelhead crowd can be. They can’t be seen using some gawdy thing that someone who eats dogfood would use. 😂

Are you able to take the ribs off cleanly with the electric.. or are you still doing that part with the regular knife
It can be done with the electric but I prefer that with the regular knife. Easier to control. Thank you for watching
Love electric for sockeye and smaller cohos and kings. I remove the ribs with a standard knife though.
I do the same! Electric definitely helps with processing larger quantities but nothing beats the fine precision of a straight edge
