I am in my Sourdough Era right now. And my favorite thing to make with the discard is these bagels. I made them twice this week and have a breakfast bagel every morning.

I’m going to try these today! Do you ever store them in the freezer after baking them? If so, how long do they keep?
Yes. Every time I make them I store them in the freezer. They’re good up to 3 months in the freezer.
Any tips to make this Into French toast bagels?
I’m not sure. I have never thought about making bagels into French toast. Maybe cut in half and then make it like you would normally make French toast.
Am I able to refrigerate the dough balls overnight and bake and boil them in the morning?
I have not tried it but I would think it would be ok. Let me know how it goes if you do it.
I’m new to sourdough.. what’s the point of using discard if you still have to add yeast? Is it just extra flavor?
For the flavor and so you dont have to waste your discard.
Why yeast if I'm using sourdough discard?
Since I using discard it’s not active and also so I don’t have to wait as long for them to rise.
Don’t use parchment paper. All mine stuck and I had to rip the bottom half off 😭
I have never had that happen. But also use my silicone mats too.
You have to immediately removed them from it while they are still hot to a cooling rack
that way they won’t stick to the parchment paper.
Spray parchment with cooking spray
I don't know why TH-cam thinks that it's been an improvement to hide the recipe and highlight the links to your Amazon products (in the "more" section).but it makes me very unlikely to EVER go to any of those links or even watch/subscribe to these video because I can't see the RECIPE. And I don't have time to keep going and looking for the other links where it's all out and printed with more commercials and advertisements I don't have that kind of time.
I come to watch the recipe and see the recipe in the more section and it was working really well. So, of course, TH-cam changed it.
