For these grilled hamburgers I start with 1lb of ground sirloin and 1lb of 80/20 ground chuck. The sirloin is lean and gives the grilled burger a steak-like taste but you need the fat from the ground chuck to keep the grilled burgers moist.
Mix the sirloin and chuck together and form into ½ lb hamburger patties.
Use your hands and don’t work the meat too much. Season each side with Salt, Black Pepper, & Granulated Garlic (my AP seasoning can be found here: howtobbqright.com/bbqshop/) then top with a little coarse ground steak seasoning . (I used my Steak & Chop and it can be found here: howtobbqright.com/bbqshop/).
Fire up the grill to medium high heat about 400⁰F and place the hamburgers directly on the grate. Grill the burgers for 6-7 minutes on each side then flip. Continue cooking for another 6-7 minutes and resist the urge to mash or flatten the burgers on the grill. (this only pushes out moisture and flavor).
I like my burgers grilled medium on the inside which is 140-145 internal. There’s not much pink at this stage but the grilled burgers are nice and juicy.
You can dress these grilled hamburgers however you choose but since it’s Super Bowl Sunday I came up with a little something special for each team.
First up is my Denver Broncos Burger:
2 - 8oz Hamburger Patties
2 - 1/4” slices Sugar Cured Ham
4 - Strips Bacon
2 - Slices Cheddar Cheese
½ Green Bell Pepper Diced
½ Sweet Onion Diced
2 - Eggs
2 - Hamburger Buns
Green chili Mayo for dressing *recipe to follow
Cook the bacon according to directions until crispy. Sauté’ the green pepper and onion in a small skillet using a couple teaspoons of bacon drippings. Grill the burgers as directed above and top with slice of cheddar cheese as soon as they’re done. While the burgers are grilling fry the eggs in a little bacon grease over easy. Toast the buns cut side down on the grill 30 sec each.
To assemble the burger:
Spread Green Chili mayo on bottom bun, place burger patty on top. Lay 2 strips of bacon over burger and top with a heaping Tablespoon of green peppers and onions, then the fried egg. Spread a little green chili mayo on the top bun and enjoy.
Green Chili Mayo (more than enough for 2 burgers)
- 1 cup mayo
- 1 Tsp minced garlic
- 3 Tbsp diced green chili
- 1 Tbsp lime juice
- 1 Tbsp hot sauce
- 1 Tsp AP Rub
Mix and allow to sit in fridge for at least 3 hours
For the Carolina Panther Burger:
2 - 8oz Hamburger Patties
1/2 lb - Carolina Style Pulled Pork (recipe can be found here: howtobbqright.com/2015/08/12/c...
4 - Strips Bacon (cooked crispy)
1 bag of Shredded Red Cabbage
2 - Hamburger Buns
Hot Sauce Mayo *
Vinegar Sauce *
Grill the burgers as per the directions above. Toast the buns on the grill 30 sec each.
To Assemble the burger:
Spread Hot Sauce mayo on the bottom of each bun. Place a burger patty on each and top with 2 bacon strips. Grab a handful of the pulled pork and mound on top. Drizzle the vinegar sauce over the pork and top with a little shredded cabbage. Dress with a little more vinegar sauce and the top bun. You can add extra hot sauce mayo is you like it spicy!
Hot Sauce Mayo (more than enough for 2 burgers)
- 1 cup mayo
- 4 Tbsp hot sauce
- 1 Tsp lemon juice
mix and allow to sit in fridge for at least 3 hours
Carolina Vinegar Sauce
- 1 cup Cider Vinegar
- 1 teaspoon Kosher Salt
- 1 pinch Red Pepper Flakes
Combine in a small sauce pan and heat until simmering. Pour into a jar and cool.
Both these “Super Burgers” are guaranteed to score at your Super Bowl party. Give them a try and let your guests decide which is better!

"If you like yours well done, go ahead and cook the crap out of it." lol, well said
LOL
I bought this as my first propane grill. It's been a fun, learning experience th-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.
I live in MN and just cooked up a bunch of food today for guests following your recipes. Rain, sleet, or snow, I love your content, keep doing what your doing buddy
GO BRONCOS!!! Being raised in the Southaven/Memphis area myself I love your videos..... I've lived in Colorado now for 12 years and my father and I have always been Bronco fans.....
Alright sir, i did do my own seasoning but i molded the burgers like you said. No bread crumbs no egg no mixing and let me tell you. These burgers did not swell up and shrink. They kept the shape and size. Probably the best grilled burgers ive made so far. Thank you for your videos. P. S. Im smoking a Boston butt today and have used your videos countless times for them. Never disappoints. Thank you sir!
Absolutely the best grilling techniques. Lobe this guy!
Great recipes! Glad to see you uploading again.
Cheers Malcom!
Glad to see you Back. Thanks for sharing.
BGE being delivered Tuesday and you have best videos I've seen. Not just content but when you summarize what you've done it helps so much. I don't have to worry about rewinding and I can just clap when I see that fried egg tossed on top. Bravo.
How did you like it do you still use it?
AWSOME!! Thanks for the great info!! Them burgers look GREAT!
Wow those burgers look amazing!
Welcome back Malcolm, great looking burgers!!
Absolutely perfect. 🍔
Nice! Love how you put your own touch on it!
I think we need a New Orleans vs Kansas City super bowl. Think of the burgers you could make for that matchup...
Amen brother! Even Mississippi boys know what's good. #KeepPounding. My go to Carolina burger is Chili slaw onion and mustard. But I am definitely going to mix it up this year and add your style as an option. Because I have never been scared of a good hamburger or Lexington style pulled pork.
You are THE BEST BBQ chef on TH-cam! I'm addicted to your videos! Thank you so much for all of the work you put into it! I just got my first Big Green Egg, and I'm having a great time testing out your recipes! Much Love.
I always come back to this for the Super Bowl.
I use a similar technique, except I temp the burger to internal 125....works every time. I have found that going by just "cook time" leads to easily over/under cooked middle. Thanks for the video!
I just cooked this weekend your pulled pork and Firecracker chicken on the Big Green Egg. I have to say that both were a huge hit. They come out awesome. Going to try your burgers this weekend and my first time cooking a pizza on the Big Green Egg. I am a big fan of your videos and website. Keep em coming!!!! New egghead.
Good stuff!
Great way to eat burgers. The mayo dressings are an excellent way for sandwiches. Very creative.
We are about the same size. And I always say trust a big man when he tells you how to cook.
Preach!!
@@neilpirelli9240 Gordon Ramsey makes restaurant food, this lad makes actual cooking not that small plate flavor of the month crap

Whoa!!! Malcom. You've out done yourself this time. Those burgers look amazing. Sure to be famous. LOL!
Excellent recipe and video buddy!
Have you tried the Chicago Bears burger? It's just a stale bun. No meat, nothing. Lol
Lol you must be a packers fan.
Lmao leave us Canadians alone
I thought it was a no bun no burger just a handful of hot lead :)

man if you have a nice covered place to cook, I cant think of anything better than grilling in a nice rain storm
thanks Malcolm for another awesome video. here is something for you to try next time you make burgers, add a half pound of mild Italian sausage to the 2 pounds if hamburger meat. Guaranteed to satisfy!
I love my Grill Grate, awesome accessory. I think I would go flat side up for burgers, tho.
I like the idea of the ham & pulled pork on the burgers but not the slaw. Never tried an egg, but they both looked good and thick and juicy. Would have put bbq sauce on the pork. You do awesome videos my friend! Don't stop sharing, I use your tips!
About time you uploaded again
+jasuanta harris malcom is the best on youtube hands down.
Come visit Texas anytime, Mal !
Awesome. I know how im doin my next hamburger
Malcom, I noticed the lines on your raw patties, what burger press do you use? I have been looking for one that can make some big patties like you did. Great video.
Great video if I do medium raw do you think three minutes on each side would do I'm new to the green egg
Hey Malcom, I'm a relative newcomer to the world of grilling, and you have really been a GREAT mentor to me! I've got a Vision ceramic grill, and am able to follow most all of your recipes that call for the Big Green Egg, and I've impressed some family and friends with your techniques...most recently I did burgers (per this video's guidelines), and they wowed everyone. Thanks so much for all your hard work in helping us "newbies"!!
Hey Malcolm I'm a big fan of the boneless skinless chicken breast on the grill. Think you can put together a video on how you grill those?
I love your videos keep them up please and where did you get that grate you used
Malcom,
I really like your videos. Since I found your channel I'm going back to catch up with some of your older videos. Great Job. BTW: Who is doing your video recording. Kudos to them also.
Just purchased my egg, thanks for the video
love big green
egg
Hey Malcolm, to reduce the fat content but make a juicy burger start out with lean meat and add some apple sauce and then an egg for a binder. Freeze them on a cookie sheet. Remove them and store them in a bread bag in the freezer. Take out what you want to cook and throw them on the ghost grill still frozen. Do not turn them until you think they are ready, they will fall apart. You could season they any way you like. This produces very juice burgers that even if left over.
That is awesome! From Denver and have been watching you forever now. Always looks delicious!!
Dude, what is the name brand or maker of that spatula? That's awesome. Great video!!
Malcolm Reed for President!
Fried egg is just about the best thing you can put on a burger
I disagree. Im more of some caramelized onions type of guy.
@@DAUniverze por que no los dos?
Putting egg on a burger is like putting pineapple on pizza it's just wrong
When cooking burgers on kamado do you just leave the charcoal or add any wood chips? Thx!
That is one cool spatula.
Yum!
wonderful vid. tumbs up
Malcom, What brand of grill grate are you using on you BGE?
Those looked interesting that's thinking outside the box.
Oooo weeee!!! Those are some mean lookin burgers.
excellent as always! Just waiting on the competition whole hog tutorial;)
Hello Malcolm, Thank you for sharing all those recipes, all of those we tried were just amazing .... I want to know where did you buy your spatula and what brand is it ? Thank you very much
Looks like the Grill Grates branded one I got with my grates.
What was the grate that you were using to grill the burgers, they had a nice crosshatch pattern.
Should you oil the grate to prevent the food from sticking?..
I just like the we Malcolm says beef.
So its 2:37 am cant sleep watchin this FOOD PORN 😋.... THE BRONCOS BURGER LOOKS F$! DELICIOUS!!!
I have ground Elk. Should I cook them similar to ground beef? Thanks friends
That’s a freaking nice burger
Malcom, Do you have a cardiologist on speed dial? :) Great work man.
TheGoatMumbler Life is too short to eat healthy food my friend! Food 1st, health later! Enjoy!!
TheGoatMumbler 😂😂😂😂
C-Bomb ... Sugar? Yes, a large amout of sugar is bad for, (a large amount of ANYTHING is bad for you) moderation is key. Meat shouldn't be in every meal you make. You shouldn't drink soda/sugary drinks every day.
😂😂😂
@@pole_barn_builder lol maybe life would be longer if you eat healthy some of the time lol.
Couldn't resist one more comment. My sons..3 & 5.. when they eat something REALLY good they do a wiggle and often have no clue they're doing it. I think the adult version is you at 7:00. You know just how damn good they're going to be.
Loved everything about this simple fun, easy recipe!!
looks awesome going to try these on sunday !!!
I prefer to use ground chuck only and not worry about the grill marks. But as you say, 140 degrees or a smidge less is where the flavor comes from.
How did you get the grill grate that high? I just bought a new BGE.
Haha, we call the Colorado burger a "Benedict Arnold" down here where I live in Texas. It's cause the ham added to it.
Just one word is needed here ' DAMN' !!!!!
Tim Martinez ok whatever
