    My mother makes her mole not as sweet, a little more spicy. It depends on the region of Mexico where they’re from on how sweet they make it. Personally, I don’t like it too sweet, and like a bit of spicyness to it

      True Mole uses cabbage and radish. If the mole doesn't use it, then it is no real mole. This my grandmapa taught me very well.

    I'm Japanese living in LA for decades. When I tasted Mole first time, I thought it's made with beans and some Mexican spices as Satoshi thought. That's why it was interesting to see ingredients when my Mexican friend showed me how to make it. Mole sauce is so yummy!

      Mole comes from "molli", which means "sauce" in Nahuatl... there are thousands of variations of moles, being the ones from the regions of Oaxaca and Puebla the most famous.
      Moles are made with dried chilis, peanuts, cocoa, banana, sugar and many many more ingredients... there is not one single recipe for moles and at any single "mercado" you can find at list dozens of variations that will go from very "picante" (hot) to not picante at all.
      Outside Mexico you will find some variations adapted to locals, but if you want the real deal you must come to Mexico City, Puebla de los Angeles or the city of Oaxaca...
      And yes, it helps to have Mexican friends when you visit... Mexican people are warm and love foreigners as friends, we like to share our culture and learn yours in exchange, just look for us if you're planing to have a trip to Mexico (or even if you're not, because you just might learn and teach a lot).

    *_Mexico City_* is the most underappreciated city in North America. Shinichi and Satoshi should definitely visit. I spent 15 days there earlier this year and fell in love with everything; especially the food and the people. There is so much to see and do, day and night. Love Mexico City.

    Yes Shinichi, you are right! Mole is traditionally made with unsweetened chocolate, a variety of dried chilis and often an assortment of seeds or nuts (that may be why it has that similar depth of flavor like doubanjang or miso). There are some other ingredients more or less but it varies by region where the mole is made :)

      I have heard that mole varies a lot, even being wildly different from chef to chef. It's my favorite part of Mexican cuisine, especially the varieties with cocoa in them. They don't have to be sweet! I prefer the ones with cocoa that are very savory.

      Kinda. Some chicken mole will have them, but usually it's just chiles and broth in most moles and sauces. I never met one mexican from my region of the mexican diaspora that uses chocolate, but the southern mexico sorta does for certain mole dishes.

    The tacos were wrapped in two tortillas. Taco shells are those crunchy things Taco Bell uses and are 100% not Mexican lol thank you so much for being so informative and respectful of our culture!! 😊
    Edit: I forgot to add this tip. To eat a taco, you hold it upright (the way you two did it), but you tilt your head to the side to take a bite. It makes it much easier and you're less likely to break your taco that way. 👍👍

    Brothers......I just love how you’re both depicting parts of LA. I’ve lived here since 1978, and I’ve been to Olvera St., maybe 3 times. I drive right by there to go to Philippe’s for a lamb dip sandwich, a few times a year. I love how lively and colorful everything is. I’m glad that you got to try mole. My mother-in-law used to make mole with the leftover turkey right after Thanksgiving. It’s too bad that your plate didn’t have the tortillas on the side, so you could build your own taco and control the amount of sauce. Mole is so yummy when eaten with some of the rice and/or beans. 😋 I’m glad that you had a chance to try some sweets too! The coconut candy looked good, but that fig-yum! Great video! Thanks for sharing! It makes me want to visit Olvera Street again!

    11 dlrs for tortilla soup? That must have been a tourist trap.
    About the mole, there are a lot of different types, “black mole” (the one you had) is always made with chocolate, but there are some that are really sweet, some are quite spicy, and some have a deep smokey taste.
    There’s also red, green, pink, yellow and some that are like region exclusives.
    I think that the best comparison to a Japanese dish, would be the curry, as in, that it’s made with a lot of spices and only grammas really know how to make them.

    That mole probably did have chocolate, but it wouldn’t taste like chocolate you’re used to because it’s very pure unsweetened cocoa powder, not processed into something you would eat as a sweet. This was really neat to see, thank you :)

    I went to Curry House in Little Tokyo a month or so ago and tried Japanese Curry for the first time. The taste and texture reminded me a lot of Mole.

    I totally agree with the soy bean paste comparison. I had Japanese friends in Mexico who introduced me to soy bean paste and it had a sort of coffee/chocolatey taste. Now that I think of Mole sauce it is the closest thing to compare to in Japanese cuisine. Mole sauce can be different throughout Mexico, the best supposedly from Oaxaca due to their chocolate production. I like that you tried the tortilla soup, one of my favorites, I like eating it quickly so the tortillas are crunchy and not soggy. If you add chunks of cotija cheese, the texture becomes like tofu in Miso soup. I hope you continue to try different Mexican dishes since Mexican food like the Japanese say is "Umai!"

      Unusual? Peanut is one of the ingredients in mole sauce, same for chocolate, few kinds of pepper, sugar and others.

      yeah I guess it's kinda weird for most people because chocolate is usually sold sweetened, but the one used for cooking is mostly bitter or unsweetened.

      people think that it's made with chocolate, but it's really a very small amount of it that actually goes in the mole. the chocolate that is use is chocolate abuelita or Montezuma you can find them in the Hispanic section of any market. what gives the rich dark brown color is the different kinds of chiles that go in the mole. I love my mole a little sweet but spicy. it's so good over chicken or turkey and Spanish rice and delicious the next day as mole enchiladas or sincronizadas. mmmmm.

      I know chocolate abuelita and Montezuma are MEXICAN chocolate brands!!! MOLE is a MEXICAN dish!!! but people think that mole is made with chocolate when in fact there is very little chocolate added to the dish!!! and for your 411 you do find those chocolate brands in the Hispanic section of markets!!!! I should know, I've been doing the food shopping for my family for the past 28 years and making mole from scratch with my family since I was a kid!!!! I'm Mexican and a naturalized citizens of the USA and I love my Mexican heritage so much and have passed it on to my daughter's and now my grandkids!!!
      by the way I've never seen a Hispanic isle in any market like Safeway, Albertsons, food for less, lucky' s,.whole food say Mexican section, they do say Hispanic section!!!!

    I don't think they went to the best location as far as "authentic" Mexican food. Olvera St. is just a tourist trap. They should had gone to the Eastside or maybe even someone's home. From an L.A. woman;)

    I'm glad you got to visit Olvera Street! Ooh, I really adore mole! My mother-in-law marinated her turkey with Guelaguetza's (a local Oaxacan restaurant) mole for Christmas dinner this year. She served it with extra mole on the side. Everyone loved it. By the way, there's the Chinese American Museum a couple of blocks away from where you had lunch. Right now, they have an interesting exhibit about the Chinese diaspora in the Caribbean. It's been so fun to see your take on LA. Wishing you guys a very happy New Year!

    Tacos De Carne Asada are my favorite. My family is absolutely obsessed with them. Evey few weeks we have barbeques with my other extended family and we gorge ourselves with a lot of them. It's so simple to cook, yet so delicious.

    Mole from scratch has so many ingredients with chocolate being always one of the ingredients, and if not made right it can really upset your stomach.

    It is really hard to describe foods at Olvera Street as “authentic Mexican.” Even in Mexico things like tortilla soup, burritos, nachos, taquitos (the local specialty of Olvera Street), etc., are really products of American or at least Texan tastes. This is not to say I don’t like them. Mexican foods are (not unlike Japan) regional specialties. What passes in the US for mole is an attempt to make mole poblano (mole from Puebla). Real Mexican moles from Oaxaca, Mexico (and there are different kinds) can be had in Los Angeles at an authentic Oaxacan restaurant called Guelaguetza which ironically is in the Korea Town area of the city. Try it next time you are in LA. It will make you want to visit Oaxaca and other parts of Mexico soon.

      Lucy never said they were the only kind. I prefer mole poblano from Fonda Santa Clara in Puebla and the DF myself. Still the best moles are made by madres y abuelas.

      Mexico has a vast gastronomy, as Jelly said, tamales are different from north and south regions. Each region of the country has their unique food but other regions replicate it their own way.

      Sorry that take me so long!, well I´m from north of mexico and now I live in the south, man, I miss my carne asada!, in the north we have really good meat, a lot of meat is consumed because of that actually, there are less types of tamales and corn recipes and there is a lot of USA candies and stuff, the hot dog is an abomination of goodness (search for the Sonora style hot dog) and people are taller and bigger XD

    Mole in general is very rich and complex as many of the ingredients are toasted or lightly fried. There's also a ton of ingredients, like at least 15 or so in the simplest recipes, up to dozens of them.
    I like my mole spicy, slightly sweet and chocolaty, and quite nutty.

    Being Mexican, I've never had that tortilla soup before.... Or those candies you guys had.
    And the mole looked like it had thick pieces of chicken. My mom shreds the chicken and her mole is somewhat spicy and mildly sweet and nutty. I don't like mole that's too sweet.. But it all looked really good! Glad you guys got to try something new :)

      In Texas we have tortilla soup but it probably originated from a certain state/s in Mexico. Since they all have many different regional foods. The tortilla soup is good by the way

      I’ve never had the tortilla soup either and I’m from Michoacán guess it wasn’t a dish made in the town where I’m from. As for the candies it was un higo en conserva o or un higo cristalizado y una cocada.

    You'll be surprised how different Mexico's food tastes compared to the cuisine here in the US, it's all about the ingredients. Here some dishes get the Americanized touch. Go and try authentic "Tortas Ahogadas" from Guadalajara, those are exclusive to the region (i think) or the real "Mole" (Mexican chocolate curry" from Puebla, the mole there has so many ingredients and can't wsit to try it.

    My grandmas mole was always super spicey and we always eat it with Mexican style rice. My wife makes it pretty spicey as well, most restaurants don’t make it spicey because not everyone likes it like that. You need to try Mexican food in Mexico it’s on a whole other level. You have to try street tacos, Chile’s rellenos, mole, menudo, pozole, and much more delicious dishes.

    I think the sauce you're thinking of is the same sauce that's used in peking duck buns. It looks like it to me, and the first thick pasty sauce that comes to mind.

    I am from Mexico and I live in Los Angeles and I can tell you with 100% certainty that the Mexican food in the U.S. doesn't even compare to the real thing. Take for example the cheese. I have never been able fully appreciate the Mexican cheese they sell. Like I eat it but it never really satisfies me like a piece of cheese from Mexico. Now Tacos is another food that will never compare to the ones sold in Mexico. The meat just isn't the same.
    You have to go to Mexico to experience real Mexican food. There are just way too many Mexican spices that I haven't been able to find in the U.S.
    So with that being said, if you ever find an opportunity to go to Mexico, do so and try the food over there and then come back to the U.S. and compare both.

      Your right.My in laws are from Michoacan. They always bring us queso de kotija from over there. It taste way better and has a much stronger smell than the one's made here in US.
