Thanks so very much for this. I'd called tech support at the coffee specialty outfit from whom I bought my espresso machine and the Sette. The tech told me that the Sette, even if it grinds good espresso out of the box, eventually will need a shim installed. The symptom was that coffee was GUSHING through the brew group. The shim fixed the problem.
I've had the burr out of the grinder a few times, and have always had problems getting it back in, despite proper alignment. This time was no exception, but I got it done, and all's well. Thanks again for this helpful video.

Thank you for this - thought something was wrong with my setup - and as a brand new home espresso person I assumed I was messing up... This process solved all my issues. Pre-shim, even on finest setting, I was getting nowhere near a 20s shot.. with shim I'm settling in around 7B/C for a 28 sec pull on a 14g does with my PID Silvia.

Before Shim - 20gm in, 40gm out on 2A in about 20 seconds
After Shim - 20gm in, 26gm out on 9E in about 40 seconds.
Haven’t even began adjusting it (9E was recommended for espresso), and it gave me a really tasty ristretto. Perfect for two picollo.
Can’t wait to dial in the machine now!

Thank you for the tutorial! The video made the installation easy. My shots (18g puck) was pulling 40g out in 10 seconds before the shim. I didn’t realize Baratza recommends installing the shim after using the grinder for a bit. Now my shots are dialed in to 18g in, 40g out in about 28-32 seconds. Really appreciate it!

thank you so much. i received my grinder a few days ago and have been enormously frustrated that even at the finest setting my espresso shots were flowing way too fast. looking forward to adding the shim and finally pulling a proper shot. also your video is better than the one the manufacturer recommends.

    • @ezrfit

has this fixed the problem? due to most machines the pressure for this grinder is too much which is what causes it to happen.

yes. i had read so much about there already being a shim installed but my unit did not have one installed. after installing one, i was able to get a finer grind and i'm still working to dial in a proper 18/36 dose in 25 seconds but i basically wasted a bag until i saw this clip.@@ezrfit

Just did this. If youre having trouble getting the grinder back onto the machine (I lined up the blue arrow and the blue marker of the grinder), you need to first line up the plastic ridges of the grinder/indentations on the machine and then it should fall into place.

Excellent videos and love your style. Truly appreciated this one because even after watching the Baratza version, my assembly would not reinstall. It was seeing your suggestion to invert the machine that I found the issue... Small bits of coffee had fallen into the groves preventing it from rotating back onto the machine despite alignment with the blue marker. Used brushes and then compressed air to clean it out and all went back as designed. Namaste.

Thanks for the video, really easy to do by watching your explanation. I've got Gaggia Classic and Sette 270 few weeks ago, but so far I was struggling with extraction time, with 18gr. it would yield 38 in less than 20 sec (with setting on 5-D), so I felt I need to try putting that shim and see if it help (especially because I already have separate grinder for drip/french press).

If I were the manufacture I would drop the regular 270 and only sell the 30 but be out and front with the adjustment assembly that would include these shims as an upgrade. They could sell an upgrade kit off of their amazon store. That way it would simplify things for new exprsso makers, I would stop selling the regular 270 model and only offer the 270wi.
If you really want the grind-by-time feature of the 270 then it's likely you'll want the 270wi features as well.

Our machine produces great espresso, without a shim. Our machine isn't espresso only, so if you plan to use the grinder for methods like french press or drip, you'll want to avoid the shim as you'll lose your most coarse settings.

I have been using Sette 270 for about 2months now grinding for 2 double shots a day. The my grind setting has always been around 1E-2C, which is very close to its finest setting to get 20g in / 40-50g out in about 25-32s from my espresso machine. For the old medium roasted beans, they even come out in 10-15s even though I already used 1C setting! Should I install the shim? Will there be any negative impact to the machine in the long run?

Baratza also recommends installing the shim after a certain amount of grinding, I think 8-12 kg of beans. Couldn't find the link, but once the grinder is "seasoned" it grinds more coarsely and needs to be shimmed. I just found this out when I was no longer able to get a fine grind.

Just bought the 270wi today. And i found even at setting 2A.. the ground coffee was coarse. Lousy when pulling a shot.
Now i have to waste my time looking on the net why it cant grind fine out of the box.
Dissapointed wt the purchase indeed. Laughable that the manual even suggests a setting of 9E for espresso. Thats more suited for drip coffee machine.
And second point,.. when i tried to gring coffee straight into the portafilter, all that happened was a great mess on the table top. Coffee everywhere. Like trying to put 60g of ground coffee into a 58mm portafilter.
Why cant this thing just work straight out of a box. 😢😢

I don’t know why you say it can’t grind fine enough. I can do perfect espressos and many other coffee youtubers recommend it for espresso

Did you buy your sette brand new? Have you checked if it has a shim already pre installed? Which basket are you using?
There are many factors that are in play that dictate how fine you need to grind for espresso.
Also, there is a reason why Baratza includes the shims in the box, so you can adjust your grinder to your specific needs.

This grinder easily grinds fine enough without the shim. Settings 7-9 especially with the micro adjustment.

it really depends on the the beans, the basket and machine you use. I used 18g of freshly roasted light beans, grinded them on 1A and I still had a little too fast of a flow when I brewed.

Yeah for an Italian espresso machine there was no way for me to get close to a 25-30sec extraction still flowing way too fast

If the sette 270 doesn't grind fine enough for espresso then you are either using older beans, very light roasts or your dose is too little or maybe even a combination of everything..This grinder was made to excel at espresso and it does as long as the user has everything in order..I have had the not grinding fine enough issue with me Vario W,but I ended up finding out that my drive belt was old and weak..
