I found out from some locals that the fish at the boats by the water are not fresh nor Turkish fish , they are frozen Norwegian fish , but you can still find some fresh fish in smaller restaurants aiound karakoy ferry station.
That looks like chilli powder to me, not sauce. I’ve had mackerel on bread at the harbour in Istanbul. It was equally good. I met many locals there, not just tourists.

the red stuff is called Sumak, which is from a flower. it's nice, but it's not chilli.
