  • These potsticker dumplings are packed with flavour, and the dipping sauce that goes with it is the perfect accompaniment. These dumplings are steamed and fried, creating a soft and crispy texture. Once you get past the shell, you then taste the beauty of the simple filling. I highly recommend trying this recipe.     Potsticker Filling -
    250g (8.8oz) - Pork or Chicken Mince
    1 tsp (10ml) - Soy Sauce
    1/2 tsp (2.5ml) - Chinese Rice Wine
    1/2 tsp (2.5ml) - Sesame Oil
    1/2 tsp (2g) - Corn Flour
    10 (3g) - Chive Sprigs, Thinly Sliced
    100g (3.5oz) - Water Chestnuts, Finely Chopped
    3 - Shiitake Mushrooms, Finely chopped
    2.5g (0.1oz) - Ginger Paste - Use A Microplane
    Pinch of Ground White Pepper
    200g (7oz) - Chinese Cabbage (Wombok), Thinly Shredded
    Big Pinch of Salt (For Cabbage)
    Potsticker Dipping Sauce -
    1/4 Cup (60ml) - Soy Sauce
    1/4 Cup (60ml) - Chinese Black Vinegar
    1 tsp (5ml) - Sesame Oil
    1 - Garlic Clove, Minced
    2.5g (0.1oz) - Ginger Paste - Use A Microplane
    1 - Spring Onion (Scallion), Thinly Sliced
    Notes -
    If you can't find black vinegar, you can substitute white rice vinegar/rice wine vinegar, which is usually more readily available, even in regular supermarkets. If you cant consume alcohol, use white or malt vinegar.
    Pork is optional and can be substituted with chicken and seafood.

    Congratulations on hitting 900K Jack! I've been a subbie for a looooong time now. These dumplings look fantastic. Mmmmmm, I'm thinking a mushroom & mixed veg dumpling might be good too....I think I might try that out myself. That dipping sauce looks incredible too. It won't be long now until you hit 1 million...and it's so well deserved. Your dishes are incredible and I've enjoyed making a lot of them. Lee :)

    so far, you've come closest to how my grandfather made and cooked his dumplings. nice job! no water chestnut, chives or mushrooms in ours and because most of us kids didn't like the actual scallions, ginger, and garlic in it but liked the flavor, he mixed them in a bit of hot water and let it cool to room temp and mixed just the water in the meat mixture. you want to add a bit of water to loosed up the meat a bit.

    Thank you for demonstrating how simple this is so we can make them ourselves and avoid all the extra processing ingredients.
    When I compare the ingredients of the frozen bag I bought to your ingredients it makes me want to toss the bag in the trash. I won't of course but I won't be buying frozen in the future.

    What a coincidence, I looked up a bunch of dumpling recipes lately and yours came when I'm about to make one!
    One thing I want to ask when you put in cold water I heard it could make the dumpling sticks so some recipes I saw use boiling water, for a really crowded pan one recipe use boiling water + vinegar . What's your opinion on this Chef?

    Hi Jack, you said to fry for two minutes, and then steam for two minutes, would this be enough to cook chicken mince? Thanks.

      When cooking the first batch, before serving, cut a couple in half and check for firmness. And/or use a thermometer, if you've got one. If they need more time, well, throw them back in the pan for another minute or so.

    sisterly/brotherly concern: are your hands alright? The back of hands look pink, dry/rough? or have you been scrubbing them quite forcefully? Doing the washing-up a lot? Please be careful and I suggest using moisturizing cream. Spoken because my hands turn like that from doing a lot of washing-up in additon to washing my hands constantly while preparing meals and cooking

      This isn’t meal prep. These will last a couple days in the fridge and are not recommended to be stored. You can however wrap them and then freeze ready for when you need them. They only need 4-5 minutes of cooking

    Only a dozen? Those are rookie numbers. Make hundreds at a time, freeze them, throw them in freezer bags, and break them out whenever you want a quick easy meal or snack.
