I made this for a party at my house. It came out so good. But what I did differently is I baked the potato’s first then scooped out the potatoes

I've always pre baked the potatoes, so it's much easier to scoop out. I usually only use about 1/4 of the scooped out potatoes ( I save the rest to make mashed potatoes a day or two later) and add some other Vegetable like Broccoli, sliced Brussels Sprouts or Cabbage to mix with the Sausage, Onion, Mushrooms and Potato. Always a hit with the Family.
