Binging with Babish: Chilean Sea Bass from Jurassic Park

  • Fun fact: Chilean sea bass was nearly fished into extinction after its mere mention in Jurassic Park! That's actually not a very fun fact. That's kinda messed up. While still overfished, it can be acquired legally - while fetching a price of $30/lb. A delicious (and less expensive) alternative is black cod!

Ironic that a species of fish was almost hunted to extinction due to it's inclusion in a scene regarding people discussing the ethics of bringing extinct species back to life.

While Hammond wasn't necessarily 'kidding' when he said he spared no expense, he definitely wasn't being entirely truthful and thats kinda the point. Hammond spared a lot of expenses. Only hiring one programmer, for example, and then getting cheap on him. The whole thing happened because Hammond spared a lot of expenses.

Hi banish! I love your videos! Have you tried something called the Girardet Method? I learned it from watching Frankie cooks and it’s an amazing way to cook Chilean sea bass. You make a bed of shallots for the fish to rest on, skin side up, in a cast iron pan. Fill the pan with a bottle of white wine until it covers the fish completely, except for the skin. Need the skin to be dry. And then you broil it at 550 for 6 minutes... if you haven’t tried this, you should because it’s delicious! And one of the best ways I’ve had fish!
