Look into water glassing your eggs. 12 to 18 month storage with 2 cheap ingredients: water and hydrated lime. I just emptied my jar of eggs from last year because my herbs are starting to lay again faster. Time to start a new batch of eggs for next winter.
I'm so excited that you now have a freeze dryer!!! You will love it! I will never dry herbs the old way ever again! You want to heat your trays before you pull them out so you don't get condensation back into your trays. Also probably not hit defrost until you are sure your food is dry and doesn't need more drying time. Freeze dried raw eggs are the best!
A couple suggestions: take out food to test for dryness before shutting off machine. Extend time rather than let sit after done. Food can get moisture back in when you wait. Take food out before hitting defrost.

I also have the medium FD with prem pump. My family’s favorites to FD for every day use (snacks) cinnamon apples, bananas, turmeric, ginger, and vegetables ground into powder for smoothies (beets, kale, spinach). Love my FD!!

Another information pack video. great job . I watched your video on egg freezing a while back and started freezing some eggs per your method. I looked at a freeze dryer also and could see the benifits . Long shelf life , no need to refrigerate . Definitely a long term investment.
Definitely put them in the deep freezer first - I can't stress this enough! I used 12 eggs per tray too and have a medium size machine. The instructions that came with Harvest Right states you don't have to freeze first, but my freeze dryer didn't properly sense if the eggs were frozen after going through that cycle and I had an egg explosion (within the dryer and sucked eggs into the drain and pump tubes)! Harvest Right worked with us and after diagnostic tests nothing was wrong with the machine, but unfortunately this can happen with eggs and I wasn't a one-off case. The machine is simple and electronics pretty self contained so everything was able to cleaned back to normal. I will never put liquids in the freeze dryer without freezing them first. I'm still very happy about my purchase.

You never want any of the food to be cold once a freeze drying cycle is completely. If any of the food is cold, you should add two to four hours to the drying time. I learned this the hard way. The cold temps will keep moisture in the food so when you package it up it will spoil or go bad rather quickly.
You are correct, but when the time ends on the cycle the heaters turn off which makes it all cold even when it’s bone dry. I think that’s what happened here.

The only thing I have against freeze dry is thst the natural water of the product is removed so you reconstitute with water and result is not quite like fresh
living traditions homestead cook complete meals and freeze dry them and they also make cucumber and zucchini I chips with seasoning on them, cog hill farm freeze dry figs and snack on them.
I now freeze dry all those extra eggs during spring and early summer to get us through the fall molting months and the decreased winter production. I typically freeze dry 4 trays of whisked eggs (approx 60 eggs) and store in pint mylar bags the equivalent of 15 eggs. That way the smaller storage keeps things fresh longer but also eliminates opening a larger amount and not using it within the week. I used to think freeze dryers were too expensive, but after owning one for just over a year, I've been able to process up to a 1 year supply vegetables, fruits, eggs, yogurt, variety of cheese, Italian meatballs, cubed chicken in addition to commercial freeze dried meats), onions, bell peppers, and much more. I also freeze dry baby kelp/baby spinach. 5# fills 4 trays. This nutrition packed mix provides 3 servings of veg in just one tblspn in my morning smoothie. Freeze drying and canning are now my food preserving methods. I try to keep both balanced to maximize various storage space. Like you we can't tell the difference between freeze dried eggs and fresh. I never really liked frozen eggs. The texture is rubber! And I don't think they don't work up in baking that well either. I question however if you were to pay for your freeze dryer would you buy one and why hadn't you done so? I understand your freeze drier was complimentary from Harvest Right to review freeze dried eggs.

Just a quick note for your future FD adventures, if you don't think you'll be able to get to the machine as soon as it's finished, make sure you add on extra dry time. You don't want the machine to cool the food before you take it out. You need to take them out warm so you can check for cold spots. Cold spots means it's not done and you need to put it back in for a few hours.

The frozen eggs really are chunky when you thaw them. My frozen eggs aren't like that and I only have 2 thoughts on why. First, I did not have farm fresh eggs sadly. Mine were store bought. Maybe fresh eggs don't freeze as well? Secondly, after whipping the eggs I vacuum sealed them with a Food Saver. I do this to save space because each sealed bag stores flat for stacking. Before I built my homestead I had hardly any freezer space. When my eggs are frozen this way they thaw like I just cracked them open. Not sure if it's a combo of the two or just one of those reasons. If anyone else knows please share. So I'm setting up my brand new Harvest Right today and my friends are coming over for a freeze drying party because its a fun excuse for a get together lol. I've wanted a Harvest Right for over 10 years and I finally have one!!! Huge investment though. I had to have a dedicated circuit breaker (this only applies to the large) and pay people to move it into the laundry room. No white glove service from Harvest Right and if you live alone be aware they are heavy. I hope to use the Harvest Right for preserving everything I produce on the land. The ROI will probably take a few years if I run it regularly. Thanks for the tips Melissa :)
something to make the test mean a little more. Have the freeze dried stuff going against something that has been stored the same amount of time. U might have found that if the eggs had not been frozen 6 months to that of frozen over night like the time frame of freeze drying the eggs that the frozen eggs may have been a lot better. Freezing does change things over time. The frozen eggs look like if they had been run in one of those bullet type juicers with a teaspoon of water that they would have been fine. extra step I know but it would be interesting to find out.
Have you ever freeze dried prepared meals? I freeze dried beef stew not long ago for my son and he loved it! I want to try more, but I'm unsure of the ratio of water that should be added to prepared meals. Do you know if there is a standard measurement?

I bet the flavor of the freeze dried egg is better but the texture of the freezer eggs preferable. What happens if you don't powder the freeze dried egg? Probably takes too long to reconstitute.
Melissa - I would love to know the storage of your eggs are now. How long did you store the eggs that did not have an oxygen absorber in them? I have some FD eggs that we put in a jar with an OA about 6 weeks ago and one of the lids I'm finding was not sealed. Worried about the safety of those. The other jars of eggs, with OA's are still sealed but when I examine the jar the top half of the jar is definitely powdered but the bottom half is compacted and I'm wondering if moisture got in. Any thoughts?
I would like to see if the frozen eggs, blended with a bit of water, would have made the texture and taste more like a fresh egg. Freezing food in a normal freezer will draw out some of the moisture.
Also, try to get to your FD'r as soon as it finishes its cycle. If you leave the trays in hours after it finishes they will freeze (like your eggs in this video) then condensate which is pulling moisture from the air back into your food. That defeats the purpose of freeze drying. If you can't get there when its finished, use the "warm trays" feature to warm things back up before taking them out.

I tried freezing whole eggs and also mixed eggs. The whole eggs remained stiff and weird after thawing and didn't have a good texture. The mixed eggs seemed a bit thick but after cooked tasted normal
Freeze dryer exactly what does it do and how does it benefit people just eggs don’t tell me much and the freeze dried eggs, not sure exactly what it does I know they’re pottery but can you do meat and stuff... told you before I’m 75 live in Wellington Nevada, let alone hard to buy food just for one person.. looking at if something like this would benefit me I freeze a lot but I use the shrink wrap machine.. When food is freeze dried it can last up to 25 years is stored correctly. It’s just another way to preserve the texture and provide delicious healthy food for our families TH-cam has a lot of great videos on freeze drying that might show you more variety in foods 🤗
I don’t freeze whole eggs. I scramble them and freeze them in ice cube trays. One cube is one egg. I have eaten them as scrambled eggs, but they are best used as an ingredient in things.
I’ve seen on some groups people posting that adding oxygen absorbers to freeze dried eggs can create botulism. I have dozens of eggs done this way and have switched to not oxygen but I don’t know what the truth is. Any insight?
I appreciate the usefulness of this but there is no way I would pay that kind of money . Thanks for the honest review but I will carry on buying locally my eggs when needed :-)
If you like to be prepared the cost of the unit becomes less important. Inflation and the possibility that locally sold eggs are not even available is another concern. I elect to not stand in a food line!
Will not everyone can afford a $2,000 to $3,500 freeze dryer. I find just dehydrating does just fine and it's much better than freezing eggs in icecube trays
I don't understand how anyone can have excess eggs. If a family of 4 uses 8 eggs daily, and chickens lay roughly one egg per day sometimes none at all you're going to need @ least 8 reliable chickens. And then a hen produces eggs 1-2 years max and can live from 3-10 years.
I appreciate what you're trying to do here and showing us everything. But I find it a bit disingenuous that you didn't bother actually whipping up the Frozen egg to reincorporated you just kind of casually poked at it with your fork 😕 of course its going to be lumpy...? You gave the freeze-dried egg a whole food processor treatment and everything. I'm well aware of the offer that harvest right gives. Free if you promote them, discount if you just test it. Did you get it free? Or did you get a discount? It's absolutely an amazing product, I'm not arguing there. But I'd love to see a really fair and honest treatment. Not just /mostly/ fair. Anyway, just my thoughts. I do appreciate the video 👍
I said I got it for free and the frozen eggs were whipped before they were froze. I've tried beating them after thawing for quiches and it didn't help (I've been using frozen eggs for years). It was a fair and honest treatment. I also have a full paragraph in the blog post that goes with it stating it was free and the video says sponsored.

Totally understand and like any piece of equipment it depends on how much you'll use it compared to how much your spending buying those items already prepared or aren't able to preserve so losing. It won't make sense for everyone but several of our personal friends have purchased and love theirs.

That seems to defeat the purpose of freeze drying which is supposed to reduce nutrient loss and freezer burn vs regular freezing

I was thinking the same thing. In my opinion it wasn’t a very accurate test when the freeze dried eggs were not as old as the freezer eggs.

I bet the flavor of the freeze dried egg is better but the texture of the freezer eggs preferable. What happens if you don't powder the freeze dried egg? Probably takes too long to reconstitute.

Melissa - I would love to know the storage of your eggs are now. How long did you store the eggs that did not have an oxygen absorber in them? I have some FD eggs that we put in a jar with an OA about 6 weeks ago and one of the lids I'm finding was not sealed. Worried about the safety of those. The other jars of eggs, with OA's are still sealed but when I examine the jar the top half of the jar is definitely powdered but the bottom half is compacted and I'm wondering if moisture got in. Any thoughts?
The trays should be warm when removed from the freeze dryer. All of that frost on those trays equals moisture transfer to your food.
I would like to see if the frozen eggs, blended with a bit of water, would have made the texture and taste more like a fresh egg. Freezing food in a normal freezer will draw out some of the moisture.
I was thinking a hand blender to get rid of the chunks?
Also, try to get to your FD'r as soon as it finishes its cycle. If you leave the trays in hours after it finishes they will freeze (like your eggs in this video) then condensate which is pulling moisture from the air back into your food. That defeats the purpose of freeze drying. If you can't get there when its finished, use the "warm trays" feature to warm things back up before taking them out.
Curious, why you do not use the freeze part on the freeze dryer?

Can you store your freeze-dried egg in homemade cake and brownie mixes? I have several jars ready to use but they are missing eggs, vanilla and water. I would like to add powder eggs to my dry mix. Any Suggestions?

I tried freezing whole eggs and also mixed eggs. The whole eggs remained stiff and weird after thawing and didn't have a good texture. The mixed eggs seemed a bit thick but after cooked tasted normal
Yes that is why I only use them in baked goods.
Freeze dryer exactly what does it do and how does it benefit people just eggs don’t tell me much and the freeze dried eggs, not sure exactly what it does I know they’re pottery but can you do meat and stuff... told you before I’m 75 live in Wellington Nevada, let alone hard to buy food just for one person.. looking at if something like this would benefit me I freeze a lot but I use the shrink wrap machine.. The ones that take all the air out of the bags.. last a long time in the freezer.. oops thank you very much enjoy your videos a lot..
When food is freeze dried it can last up to 25 years is stored correctly. It’s just another way to preserve the texture and provide delicious healthy food for our families

Y are Mylar bags better than glass jars?
Was the frozen egg put in whole or was it blended in a batch the same way as the FD egg was? I'm curious if blended it comes out better.
It was blended at time of freezing and I've tried blending after thawing with baking and didn't find it to help

I don’t freeze whole eggs. I scramble them and freeze them in ice cube trays. One cube is one egg. I have eaten them as scrambled eggs, but they are best used as an ingredient in things.

Harvest Right is the most affordable and best to get. We have had one for a few years.

I've tried beating the frozen eggs in the past, didn't help. I don't have floor or shelf space to keep eggs for water glassing.

I’ve seen on some groups people posting that adding oxygen absorbers to freeze dried eggs can create botulism. I have dozens of eggs done this way and have switched to not oxygen but I don’t know what the truth is. Any insight?
If the food isn't dry (10% moisture content or higher) it could but as long as it's fully dried then it won't.
I appreciate the usefulness of this but there is no way I would pay that kind of money . Thanks for the honest review but I will carry on buying locally my eggs when needed :-)

If you like to be prepared the cost of the unit becomes less important. Inflation and the possibility that locally sold eggs are not even available is another concern. I elect to not stand in a food line!

Will not everyone can afford a $2,000 to $3,500 freeze dryer. I find just dehydrating does just fine and it's much better than freezing eggs in icecube trays
I prefer freezing. All you can do with freeze dried eggs is scramble or baking

I don't understand how anyone can have excess eggs. If a family of 4 uses 8 eggs daily, and chickens lay roughly one egg per day sometimes none at all you're going to need @ least 8 reliable chickens. And then a hen produces eggs 1-2 years max and can live from 3-10 years.
A hen produces eggs much longer than 2 years and my family doesn't eat 8 eggs a day

But I find it a bit disingenuous that you didn't bother actually whipping up the Frozen egg to reincorporated you just kind of casually poked at it with your fork 😕 of course its going to be lumpy...? You gave the freeze-dried egg a whole food processor treatment and everything.

I said I got it for free and the frozen eggs were whipped before they were froze. I've tried beating them after thawing for quiches and it didn't help (I've been using frozen eggs for years). It was a fair and honest treatment. I also have a full paragraph in the blog post that goes with it stating it was free and the video says sponsored.

I've watched a lot of harvest right vids.
It's an excellent product. But it is insanely costly & slightly finicky.
Don't get me wrong, I'd sell my soul for one, too.
But as someone who is interested in saving food AND money, I'm not sure where the break-even point would be to justify such a device...

Totally understand and like any piece of equipment it depends on how much you'll use it compared to how much your spending buying those items already prepared or aren't able to preserve so losing. It won't make sense for everyone but several of our personal friends have purchased and love theirs.
