I made it your way today and it was the best curry chicken i have ever made. I’ve been doing it wrong all these years. It tastes just like curry chicken you get back home. I tried the buss up shut recipe. It came out ok. I forgot to put flour before i rolled it into a cone so it was slippery and hard to roll out. I think i out too much butter but it was still good more flakey than silky.
Can we have a video on stew chicken? Wondering if i’ve been doing that wrong too all these years. Its hard to get the sugar right when its browning. Oh a dhalpourie video as well. That is the hard one.

hi love! No, I don't like to use garam masala in my curry. I find that it makes it taste more like East Indian food. But, I do know a lot of people in the West Indies do like to use it in their curry.. I just prefer not to.
not true, Trinidad cooking has changed A LOT in the past 30 years and become much more modern, I don't think there is a wrong and or right seasoning to put in your curry. Some people cannot eat pepper or garlic, it really depends on your taste. I just prefer not to use bandana in my curry. Although I love to use it in my fish. I hope you understand and do not criticize personal choices.
