Frequently Asked Questions: Helpful Tips with Gigi
- What Chocolate Do You Use? What Do You Add To The Chocolate To Thin It Out?
Answer: I love the brand Ghirardelli Chocolate Melting wafers for melting, to these candy melts I honestly do not have to add anything to them. They are the correct consistency all on it's own.
- What Should I Do If My Chocolate Is Not Runny? It's Pretty Thick?
Answer: I have experienced using vegetable oil, melted Crisco vegetable shortening or melted coconut oil as a great alternative. Now, only use 1 tsp at a time and mix entirely. Remember you don't want your chocolate too thinned out, then you will be able to see through the chocolate, in my experience.
- How can I help if my strawberry's leak!?
Answer: My strawberries leak as well, but there is a way I help with that. Serve the strawberries the same day if possible, store them on your kitchen counter at room temperature or in the refrigerator in a covered, but not airtight container.
- What candy coloring do you prefer, Chefmaster or Colour Mill?
Answer: Honestly, I really love both. With Chefmaster you have your basic primary colors and can mix and match to create new tones and a little goes a long way. But don't use too much, like more than 3 large drops! The taste afterwards is not at all good. Now Colour Mill, has very unique colors but you will find yourself using more of the product to color a large batch of chocolate.. Also, I find there is no taste if you add a lot of the color, so that's a plus! They both have amazing qualities, If you're starting out I recommend Chef master because the colors will last you quite some time before you need to restock.
- How long do strawberries last?
Answer: I make my strawberries 3-4 hours before pickup time to make sure the berries are at their peak of freshness. After I send off to customer, I let them know to consume within 12-48 max. Ideally, the same day as purchase.
- Do you ship or do you know how to ship?
Answer: I won't ever ship, strawberries are SUPER delicate and damage will most likely happen. Not my level of expertise as far as this but if you ship, congrats for making it happen!

Isn't it better to use 50/50? Calebaut and candy melts mixed together for the perfect chocolate crust. And I dip my sticks in the chocolate before adding them to the berries just to avoid them spinning or falling out while dipping the berries

Hi Miranda 🙋🏻♀️ the letter box I purchased comes closed. You simply take an exacto knife and cut along the top edge. I also take a small piece of sanding paper and file the side a little bit so that it’s not ruff. It’s made out of like a paper mache material, hope this helps!

Yes I would recommend, just be careful when melting at 30 second intervals and mix after each addition. I will make a video soon on I like to melt and how to fix small problems 🤍

Thank you. 💜💜 I just started doing chocolate covered strawberries and I wash them make sure they are dry before I dip them in chocolate, but after a couple hrs or so they start to sweat. Is this normal?? Or what am I doing wrong??
Aww I’m so happy! Yes I agree, teaching step by step is great for beginners :) I was once there too, just takes practice. Okay question, once you make them where do you place your strawberries? and what do you place them on? Like a sheet tray? Parchment paper?
Pretty Pastel Pastries once I make them I leave them out, sometimes I put them in the fridge for 15 min but then leave them out. And I place them on parchment paper and once dry on a sheet tray. Thank you for replying :)
I totally understand, yes mines sweat too. It’s a natural thing strawberries like to do. You’re doing everything right. I like to dip my strawberries, leave them at room temperature. Right Before pickup I place them into the refrigerator for 15 min to set. Because where I live it’s super hot and they would melt if I didn’t place them in the refrigerator. It’s all good :)

Any tips on how to avoid the chocolate to become swirly when piping? Everytime I try my chocolate swirls...
I’ve had this issue before too, it typically happens to me when I overheat my chocolate. Make sure you feel the temperature of the cup and if it’s too warm or hot leave at room temperature and next time remember to heat at lower increments at a time. Hope this helps!

Cynthia Estrada no worries, I just cut the tip of my bag straight across. Not too big or too small. It’s kinda of difficult to explain. The video I have to kind of see how i apply chocolate is on my “how to dip chocolate covered strawberries” the strawberries are red with glitter on my channel. Hope that video helps
