I went oldschool and filmed this sort of like an old PBS cooking show. While editing, I realized/decided that I just don’t have good enough equipment to do long shots justice (the angles aren’t great, either, nor is the lighting) so I’ll go back to birdseye-view filming after this. Also, I’ve been sleeping much better since I filmed this episode. I’ve struggled with insomnia and nightmares all my life. It’s really nothing new and something I constantly have to battle and work on, as my needs and environment continuously change. I’ve recently settled into a system that’s been working consistently well for me, though, so I’m feeling much better now. Also, seriously, make this meal. It’s a lot of work up front, but worth the payoff of not needing to cook dinner most of the week.
Awwww, I really like the new format! The editing was really well done. Don't give up on it :) It's fun to see you and your face as you are cooking. This reminds me that I bought a little bag of vermicelli to make pilaf and I keep forgetting about it!
Love carrots and cauliflower roasted together.....fyi when i get carrots i immediately cut the tails and tips off and store them in a different clean plastic bag and they just don't go bad ever before we eat them. Frozen cauliflower doesn't roast good at all in my opinion, fresh for roasting. I like to roast them ultra high temp to get the ends to char a bit.....so yummy looking your dinner! Also I roast them on a sheet pan for the liquid to evaporate and they are charged slightly crisp and sweet and nutty

Looks delicious! Pilaf here is rice cooked in broth with veggies (usually peas and carrots).
