PA Dutch Pot Pie in Jo Ellen's Kitchen

  • Lebanon PA, 4.5.20: Welcome to Pennsylvania Dutch County. Today, we're making homemade chicken pot pie, PA Dutch style, in Jo Ellen's Kitchen.
    Boil a whole chicken in the oven at 350 degrees for one hour. I started with an inch or two of water in the bottom of my pot.
    At 30 minutes, to the chicken add 1 cup chopped carrots, 2 potatoes-cubed, 1 cup chopped celery, and salt to taste.
    At one hour, remove the chicken and vegetables from the oven, and place the pot on the stove. Set aside to cool. Remove chicken from the bone when cool.
    Add water to make sure you have enough broth. I added 4 cups of water to my broth. Also add 1 tablespoon of butter and 2 chicken bouillon cubes. Bring to a boil.
    Add noodles one at a time so they don’t bunch up. Noodles will sink. When they start to float, the noodles are done.
    Directions for Noodles:
    3 cups flour
    2 large eggs
    3/4 cup water
    Mix in a large bowl with hands. Kneed to make a ball. Place on floured mat. Roll out into a rectangle until dough is between 1.8” and 1.4” thick. Cut into 2" squares. Add squares to boiling broth one piece at a time.
    Stir cubed chicken back into pot. Cover. Occasionally, toss gently. Pot pie is done when noodles start to float.
    Voila! Enjoy.

    My mother is from Lebanon, PA and makes delicious pot pie, too. She’s always been questioned how it can be called “pot pie” without the crust. We explain that this dish is PA Dutch and from a very specific region. They still don’t understand 🤣Thank you and happy cooking 🌸

    My favorite memory of my childhood was helping my mother to make her home made pot pie. My job was to cut the doe into squares and put it into the pot. (your video brings back pleasant memories of my childhood.

    I wash my celery because it’s dirty mostly, I peel my potatoes and carrots because that is what I was taught to do. I would make a chicken stock first and clean it through a cheese clothe. This meal is high carb load meant for farmers who work all day long. These old recipes are so beloved. Chicken pot pie seems like noodle soup to me but it’s a beautiful thing. Thank you.
