do you think its ethical for students to provide "drafts" of letters to professors and have them go over it?

Each prof will have their own way of doing things. Some professors might ask for a sample to see exactly what type of info you want them to include. Others might ask you to write the letter so they can alter it to fit their need. Ultimately, it's up to how comfortable the prof is with allowing someone else to produce a draft first.
