either way- you can skip it or add less; however, traditional truffles are made with butter and it makes these creamy. It also helps set the mixture better so I would highly recommend it.

Just omit the whisky if you don't want to add it in, but other things you might like to add are: raspberry puree, orange juice, bailey's, bourbon etc. :)
Place it in the freezer for a little while, that should hopefully help the ganache firm up some more. If it still doesn't work, add about 100 g extra melted chocolate. That should do the trick!

If you're using a sweet drink, use a chocolate with a large percentage of cacao solids. You can also swap the salted caramel with heavy cream. You won't lose any of the alcohol if you aren't cooking the alcohol.

Do you have to ad the instant espresso powder???
It's optional and you can barely taste it, but I find that it brings out the chocolatey flavor in these truffles :)
