    이균씨는 정말 대단한사람이 맞네요, 가슴이 뛰네 이걸 보는데, 흑백요리사에서는 감동적으로 실질적 1등이라고 굳게 믿었는데
    오늘 스토리를 보니 스타트업대표로서 스타트업대표를 보는거 같아요. 시스템적인 연구는 미국이니까 가능한일이기도한데, 아 정말 대단한 쓰나미를 느끼네요.
    가르치는 멘티들한테도 소개해야겠어요.

    this is something new that i can learn from.. i mean sustainabilty restaurant? wow such an incredible idea. i think most of the restaurant in my country don't think as far as his restaurant idea

    제한적 플라스틱이란 접근에 또 감탄하게 돼요. 오래 써도 버려질 것들이 아닌 no waste가 되어야 한다. 생선 머리는 비료로 만들고 재료를 담는 모든 통은 유리에 담는다. 종이로 틀을 만든다 등등. 돈이 아닌 뭐가 지금 가장 중요한지 아는 사람들
    2030년까지 장기적 목표를 두고 걸어가는 자들의 노력을 같이 응원하고 싶어요.

    집에서 요리할 때에도 많은 쓰레기가 나오는데, 레스토랑에서 그걸 최소화한다니 정말 대단해요. 에드워드 리와 그 스태프들의 노력에 박수를 보내고 싶어요 👏

    SHIA가 한국에도 브랜치를 내줬으면 좋겠다.
    우리나라도 이제 선진국으로써 저런 고민들을 해야 하고, 실제적으로 행동하는 모습을 보여줘야 하는데,
    이균씨가 하는 행동은 정말 모범적이네요.
    전세계 어디에서도 찾아보기 쉽지 않은 연구실? 같은 형태의 레스토랑이라서 신기할 뿐임.

      파인다이닝 특히 재활용과 친환경적을 사용하는곳은 무조건 적자에요. 한국에 내려면 어느 기업에서 후원을 해줘야 합니다.. 그리고 거기서 일하려는 쉐프들도 봉사활동으로 들어와야지 임금은 거의 못받는 수준이라고 보시면 되고.

      ​@@얌얌쩝쩝-z6z이케아마케팅 전략보면 카페같은곳에 이케아가구를 들여놓고 가격표 안내까지 붙여서 광고효과 내던데 그런방식으로 shia 레스토랑에 가구지원하고 거기서 나오는 증진된 매출수익 같은걸 레르토랑에 지원하는식으로 할수잇다면 좋겟음

    좀 더 프로젝트가 진행 된다면 주방에서 나온 쓰레기의 경우 대부분 퇴비로 사용할 수 있다는 점에 작은 농장을 만들고 여기서 발생된 쓰레기 퇴비를 이용해 식물을 키우고 이를 다시 레스토랑에
    사용하는 걸 볼 수 있겠네요.

    Gets a stray cats to eat those fishes. For other ingredients, u can cook them into sth else and feed to the people in need. Idk for my family, We used to have a dog at home who would eat our left over and bones. Throw away veggies, we feed them to other animals that we raised like chicken, parrots, hamsters rabbit. Now that we don’t own that pets, my grandma would leave those in the backyard for squirrels, rabbits chipmunks to eat them(not our left over meal tho, but the leftovers from prep).. sometimes expired bread or crackers. I thought that was a good way to recycle our foods.

    계속 보면서 느끼는 거지만 너무 영상이 짧아요 뭔가 박수도 치기 전에 끝난 느낌이야... 약간 너무 다큐다큐 같은 느낌임
    그래도 재밌게 보고있어요 쓰레기가 발생하지 않는 식당이라니 대단하네요

      미국 회사는 non profit과 for profit으로 나누는데 이 레스토랑은 non profit으로 운영한다는 말입니다. 레스토랑에서 비용을 제외하고 남은 순수익은 누가 가져가는 게 아니라 사회를 위해 재투자됩니다.

      그리고 대부분 영업이익을 남기는 목적이 아니기때문에 적자가 당연한 경우가 많아서 보통 기부금으로 운영되는 부분이 큽니다
