If we are expected to observe 600+ commands, then why did Paul instruct Christians to NOT be circumcised? If there ever was a command that was not optional, given to Abraham and reiterated by Moses, it was circumcision.

Sam is neglecting the context of Matthew 5. Jesus is not talking about the least of Moses law. Jesus says “these” commandments and proceeds to list commandments that are the spirit of the law. Some are serious like anger is murder and lust is adultery some are lesser like not swearing oaths or turning the cheek or going the second mile. The greatest is the one that serves others by being the slave of all just as Jesus told his disciples elsewhere.
