Watching from Bangalore.
For the last about 25 years I do the following.
Break the coconut into two or more pieces. Wrap in a plastic bag and keep in the freezer. I don’t remove the shell.
Whenever I need I take out how much I need and put it in a bowl of water. In about ten minutes it would have thawed and I can easily separate the shell with a knife. Then I slice into medium size pieces and put into grinder / blender and give one turn. Less than 30 seconds. Or pulse. Grated coconut is ready.
I don’t grate and store because in that case thawing smaller quantities each time is a problem. Some of my friends grate and store in small batches so each time they can take out a batch and use. I prefer to store with the shell.
Grated or with shell, coconut stays in the freezer withoutspoiling for months.
