Harvesting & Cooking Green Tomatoes: Chow Chow Recipe | P. Allen Smith

  • On this Garden Tour, Garden Home Host P. Allen Smith is harvesting green tomatoes out of his vegetable garden. He then heads into the kitchen to show us how to make homemade Chow Chow.

    Green Tomato Chow Chow Recipe:
    INGREDIENTS
    2 pounds green tomatoes (about 8-10 tomatoes)
    1 pound green cabbage (1/2 head)
    1 medium green bell pepper
    1 medium red pepper
    1/2 large white onion
    1 1/2 tablespoon of light brown sugar
    1 teaspoon salt
    1/2 teaspoon ground mustard
    1/2 teaspoon ground cardamom
    1/2 teaspoon powdered ginger
    Black Pepper to taste
    1-2 cups water
    2 tablespoons distilled white or cider vinegar
    INSTRUCTIONS:
    -Finely chop tomatoes, cabbage, peppers and onion and place in medium size pot.
    -Add remaining ingredients and mix well. Bring to a boil and reduce heat to simmer. Cook uncovered until most of the liquid is absorbed, about 45 minutes, stirring occasionally.
    -Ladle into quart glass jars using a wide mouth funnel for best results.
    -Store in refrigerator or process in a water bath canner.

    Living in the mountains I’ve always pulled the plants at first frost and hung them upside down in the garage so they ripened and tasted fresh. The chow chow I’m definitely going to make. It looks yummy.

    Oh yummy. Field peas and greens with chow chow!! Sounds so 😋 yummy!! I love chow chow, I love it on top of veggie and potato soup!! Oh green tomatoes are wonderful. Thank you for sharing this awesome recipe!! Love the cabbage in the chow chow!! My mouth is watering 😋😋😋😋😋! Ooooooh!!

    I forgot about chow chow and just pickled my greenies -- my Polish elders ate what is an Amish version of chow-chow. It was with cauliflower, red sweet and hot peppers, carrot, cabbage and beans.

    I don’t know about it being Southern, I am 76 years old and live in Utah and my grandmother made this, love it,. Also we made it from ripe tomatoesWithout the cabbage, delicious.

      We used a little more vinegar and sugar. I have also used pickling spice and put it in cheese cloth and removed it after cooking.

      We made what we called "Chili sauce" with the ripe ones. It was more like a chunky ketchup with cloves, cinnamon and maybe a few more spices. It is so good on scrambled eggs

      Chow chow supposedly originated in eastern Canada and spread throughout the US especially through Appalachia. The variety I'm familiar with is from PA and is a much chunkier relish with many different end of the season vegetables. The name is said to come from the French word for cabbage.

    🍅 There’s nothing better than fried green tomatoes!!!
    A good way to fry the smaller ones is to dice them up like you would potatoes, coat them in your meal mixture - throw them in your skillet and let them fry. Yum!
    Nice chow chow recipe. The more vinegar the better. Enjoy!

    I've never had this chow chow you made. I only know of our bright green relish on a great Chicago hotdogs! 😁
    I do love fried tomoatoes.
    I'll take Jack Frost over our Arctic weather anyday. A little better here with double digits today but it's been in the single digits. It's going to be another one of Those winters for us, which I never look forward to. I cant figure out how to embrace and appreciate it. So I hibernate 🐻

    A lot of my tomatoes were eaten before they turned red. We picked them off and fried them all the time.
