    I spent days in late October and early November every year canning vegetables and making chow chow with my grandmother when I was a child. I'm so happy I found your video! I'll try your recipe since my grandmother never actually wrote anything down (except for her baking recipes). A pot of beans and some chow chow makes me so happy! Thanks!

    I've watched a zillion other videos of making and canning Chow-Chow, and yours is my favorite. All the others pureed theirs in a food processor. It looked like mush. I love the chunkier look of yours the best. I love coleslaw shredded like you did yours anyway because of the texture and crunch. So I know that I'll love yours. I'm going to add banana pepper and jalapeno peppers in mine. Half with the seeds, half not. Thx so much. Glad that I found you. God bless!

    Do you have a written recipe that could be printed? I love how my Mom made hers, which is much like yours, but she never wrote down a recipe.

      Kimchi is fermented for a long time. And it’s pretty funky to. Almost smells like poo(to me). Chow chow doesn’t stink.

    Would you say that you taste the sweetness a lot more than the salty flavor? Looking for a chow chow that is similar to the Loretta Lynn chow chow recipe.

    I love Chow-Chow and it's amazing how much you can make with just a few veggies left over from your Summer garden. It's a great thing to make, just for using up those veggies that have stopped putting off so much.

    It’s actually not just southern, it’s all over the country, we just make it the best down here just like everything else, hahaha! My father was fused in OH and my grandma made it all the time and canned the rest for the year. She used much smaller chunks than you but I love how you’re doing yours on the chunky side. Going to try your way this year for my canning.

    I have never heard of this before but was looking through my new canning book and stumbled across a recipe for this. I am super excited to give this a try as I have wonderful heads of cabbage in my garden that I need to do something with.

    Going to give this a try. Haven’t had chow chow since I was a kid! (Don’t make the mistake of buying Canadian version from store! Think I got diabetes by just opening the jar. Would it be possible to put ingredient list under vids? Or direct link to website?

      I'll try - I"m always WAY behind on the written recipes. And yikes - I've heard of sweet chow chow, but around here it's sour and spicy all day long!

    Use the liquid that leeches off the salted vegetables to make tea and lemonade, use molasses to sweeten, and you got yourself something that has more electrolytes than Gatorade.

    Hello! I was noticing that this makes quite a bit of chow chow, and since I'm the only one in my family that likes chow chow I was wondering how long this keeps for (roughly ofcourse)?

      Hi Joseph - I can mine in a water bath, so it keeps for almost forever.

    Better and faster to use a dipper to get the liquid in the jars. Also if you put a hand towel at the bottom of your pan your jars won't bang around so much.

    Thanks for your help and the recipe. I was afraid to can this because my pot wasn't large enough to boil over top of the jars, but I put the finished chow chow in sterile mason jars right off the boil (just like a refrigerator pickle). Do you know about how long this should last in the fridge?

      Hi Matt - it should last a couple weeks, especially with that much vinegar, but that's a personal thing. But you're right, they should act like refrigerator pickles.

      @@JanCharles given that, with this recipe freeze well? I'm really rather nervous about attempting to can given all the warnings I've seen on various recipes for this stating that you should take class in it first before trying it on your own.

      @@vsilverisisv I thought about freezing too. It should be fine, but may take a little bit of crunch off the veggies once it thaws. Maybe freeze half of it while you eat the rest

      Fill a tall, deep stockpot with water - enough to cover the jars by at least an inch. Bring to a boil, insert jars, and boil for the recommended time for whatever you're canning. The USDA publishes recommended times for just about everything you can think of!

    Looks delish. I'll try this. Never actually tasted this but I know I will love it. Also- does the black kitty eat your plants? He/she looked uninterested. My cat beasts would have devoured them in minutes. After a big belch-they'd be off to destroy something else. Love my animals.

      Hey David! That is Baby, and he's not the least bit interested in the plants - although I do make sure they aren't toxic because I never know when he'll decide he might want a taste. He's a massive snuggler and that window is our middle ground - he can be next to me but not on the counter or near the food. And this chow chow is just wonderful - you take a bite, then come back to the jar for a little more, then make another pass.... it never lasts long!

    You're two canning mistakes which really aren't that big of a deal are one, you didn't wipe the top of the Ring the glass jar just two sides. It's important to wipe the very top of the glass Rim because that's where your seal is made. II was you tighten the lid too tight. You should twist your ring down to where it stops and then just go about a quarter more turn. There should be very little resistance. Canning is not that complicated. You did fine
