    I haven't used your recipe for a strawberry cake but I do use one of the ways to get that strong flavor in the cake without the use of an extract. I use the reduced method. I've also never put a puree into a frosting but I do use freeze dried strawberries. I just blitz them up into a powder and continue to add until I get the level of flavor that I want. It's like eating a strawberry milkshake. 😋 I wish I could get my hands on some of those Hood strawberries. Lucky you. Until I can, I'll continue to use the frozen ones. I've ever bought a store brand and the flavor was much stronger than fresh...

    Hello! Thank you so much for this recipe and video! I will be making your strawberry 🍓 cake this weekend and I’m prepping the strawberry filling! I do have a question, if I wanted to make a filling then thicken it with the corn starch and water but if I’m going to use it for the buttercream and the cake can I still have it thicken? Or would I have to set aside the amount I would need for the filling? Thank you so much for sharing your knowledge with us!

      once the purée is done, put through a sieve :)

      try straining the mixture when its at its most watery point and then let them simmer again to thicken up

    I had a question since at the end of the video you say the puree can only be stored for up to 2 days? I saw another puree video and it said it can be stored up to about a week in a fridge, so I'm wondering which one to follow since I want to get rid of some strawberries in my fridge that are packaged to make room in there. I wanted to use my puree but not at this moment, was going to work my cupcakes in like 4 days.

      In England, what we in the US call "corn starch", it's called "corn flour". Here in the US corn flour is a rough flour made of dry corn or maize that's treated with a calcium and it's used to make tortillas (not the ones that are made in Spain either!).
      There's no real alternate for corn starch, unless you wanted to experiment with, maybe, agar, a cellulose derived from a seaweed widely used in Southeast Asia, China and Japan to make amazing food.

    If I made a raspberry sauce with 2 cups of sugar, 1 cup of water and 2 cups of raspberries, would the sugar preserve the sauce if left out for 24 hours? I made some cakesicles with chocolate cake and the raspberry filling and I'm wondering if I need to remake them.

    I live in the middle east.
    Fresh, sweet and ripe strawberries are something I've seldom encountered and will remain a distant dream :(
    If I'm lucky, ONE amongst a whole pack will be a good one. Rest all will be more white than red inside.
    Will frozen strawberries be good enough? Never tried those :/

      Frozen strawberries, if they're within your budget where you are, are a great alternative because they tend to be harvested when they're ripe, unlike fresh strawberries who are destined for market. The frozen ones may not all be the same size or intact (sometimes they're cut up) but I've found that they're much sweeter. So go ahead and try them at least once. You'll have at least strawberries to have with your ice cream or just a refreshing snack if they don't work out for your cake.

      Lemon makes the strawberries taste brighter. If you skip it, they wont taste as good

    Whatever I try to do anything with strawberry is turns out disgusting. Only fresh strawberries with sugar are tasty. Any attempt to boil it, bake it, microwave it turn strawberries into ....
