We head into LV on 23rd December from the UK. We've been many, many times over Christmas and our tip would be try to avoid the stores on Dec 26th as it is crazy with people making returns and looking for early sales bargains... and queues to get into the stores. Otherwise we love it over Christmas for many of the reasons you state, it's cooler, less busy and even more glittering and sparkling than usual.
The best advice that I can give is to do your research on the big things. Shows, dining, experiences are best to plan and book in advance. Also, map out your trip so that you're not navigating the strip back and forth. Choose one direction each day, i.e., head down towards Mandalay Bay one day and toward Wynn the next. I would also recommend checking out the Arts District, its a great walkable part of town right down the road. Most important, NEVER take cash out on the strip to tip anyone or buy something from someone. Visitors get their money snatched right out their hands. We saw a women just last week get her phone snatched out of her hand and the guy ran down the street as she was trying to chase him. Be aware of your surroundings!
