  • In this video I show you how to stretch a roasted chicken out to make 3 or more meals. You can get at least 3 dinners from one whole roast chicken. This means that for 3 days you can eat well from one single chicken and minimal work. That's three days of food on a very tight budget!

    This video brought back memories of my twins when they were babies and we didn’t have a lot of money. I used to do this, and get several meals out of one chicken, as well as a weeks worth of baby food for them. Chicken soup, pot pie, fried chicken cutlets, the night of roasting was a dinner of wings, legs, & thighs, chicken salad. I’d make a weeks worth of dinners and a lunch or two plus their baby food for the cost of one chicken, some veggies and sides.

    So true about making the most of using the carcass for bone broth/soup! Nothing wrong with throwing it in a ziplock/freezer and handling it when you're in the mood.

    Add 1/2 cup vinegar to the broth, you won't taste it when it's finished but it will help leach calcium from the bones.

    I've started making mirepoix ahead of time. Its carrot, celery, and onion mixture. This way I can cut down on how long it takes me to cook up a chicken soup recipe. I bought the three ingredients and then just spent a little time cutting them all up, give them a quick blanche, and equally distribute into ziploc bags. This also helps cut down on waste.

    TH-cam served up this video and I just subscribed! My sister is a soup hater, in fact, she's a certified picky eater, but the first time I made chicken soup using homemade chicken bone stock she was over the moon. Canned soups are so heavily processed and use low-quality ingredients that they just taste pretty bad. One huge trick is to buy a rotisserie or roasted whole chicken and use the bones to make stock -- just as yummy with less work. You also use just about any leftover veggies or even frozen. Soup is also a great meal prep!

    This video made me so hungry for roast chicken! I used to do exactly as you did and make the first meal as chicken dinner, take the rest of the chicken off for other meals and then make bone broth. How delicious. Good on you for teaching people to stretch their food dollars.😊

      @@MealsWithMaria thats just what Ive always called them, noone really likes the term "left overs" because it sounds unappetizing, so I use "rollover" because I use the remains of one meal to "roll over" into a new dinner

    Now this is PROPER budget meal planning!
    This is a lady after my own heart who knows how to make meals count,and it's frankly a skill only true poverty can teach you.
    Back when I was growing up money was scarce and meat considered a bit of a luxury. Sunday roast was traditional fair enough,but the rest of the week you consumed leftovers as best you could,bulked up with rice,grains,pulses etc.
    I really love the asian and mexican dishes because after a roast you can make something really inreresting out of what's left.
    And too right,that carcase gets boiled up for soup or broth at the end of it!

    Roasted chicken is delicious & versatile! They're quite pricey where we live, but nothing's wasted. You offer useful ideas!
    We used some of the leftovers to make alfredo, chicken, parmesan cheese pasta. It was a hit!

    Great video! I'm currently making bone broth in my instant pot for my doggos. They love it and I feel good about feeding it to them! I also add vinegar to any bone broth.

      @@valentinaminauro352 Adding vinegar to the mix helps draw minerals out of the bones. Add a generous splash of apple cider vinegar to help with the process. You can also use organic red wine vinegar in beef or lamb bone broths that give it a great flavour.

    Totally agree with you about soups. Yum. Good for the soul. I do a whatever soup. Have a container in my freezer that I put the little leftovers that no one eats for supper (spoonfuls of veg, meat, gravy, noodles, rice, etc). When the container is full, I thaw it and make it. It's never the same twice. Add water or broth or whatever needed to finish it off. No waste and a very easy meal. Love your commentary during the video along with all the ideas. Thank you

    I saved up a container in the freezer for broth then make it in a slow cooker the day before garbage day. I've used this chicken multiple meals. After dinner #1 I debone the chicken and freeze to use later.

    We don't like avocado, so I looked up an alternative and several sites suggested edamame. I LOVE that idea! I'm also thinking, I'd relpace the chicken soup for some cheese because of the salt. I suppose that just changes it to a whole new dish heh. We used to have a store with a little deli and made "verde" chicken or pork burritos ALL the time. Very popular. Sometimes we'd make chicken enchilada for customers to take home and bake themselves. I miss my little deli.

    Try hamburger cabbage and potato casserole. I chop the 1/2 head of cabbage then chop potatoes into small bit sized pieces then make white sauce and add 1 cup shredded cheddar or any cheese you like and pour over cabbage and potatoes and browned hamburger And sprinkle more cheese over the top bake at 425 oven for 45 -60 minutes til golden brown on top and cabbage and potatoes are done.

    Adding bouillon to stuffing water elevates it as does sautéing some onions and celery in butter and adding to stuffing if you have it.

      I'm not big on vinegar, so I use whatever citrus I have on hand. In a pinch once, I used rice vinegar. Personally, I'd go without lacking any other alternative. Acid adds sparkle but is nowhere as essential as salt.

    Interesting to see the price changes. I thought I was the only one adding chicken bouillon to the potatoes.
    I batch cook potatoes for the freezer and I add instant potato flakes to the regular mashed potatoes before making the patties, sometimes the plain instant potatoes sometimes the flavored instant potatoes, as I don't use butter or milk.

    One of my favorite inexpensive and easy soup recipes similar to your chicken noodle soup at the end of your video, it is made with a mirepoix and egg noodles... Mom's potato soup recipe: Cube 3-4 potatoes. Dice your mirepoix: 1 carrot, 1-2 stalks of celery. 1 diced onion and, if desired (optional) sauté directly in your soup pot in butter or oil for a few minutes prior to adding the potatoes. Otherwise, just add all vegetables and fill pot with water (leaving room for milk and noodles later) and add salt. Bring to boil. When potatoes are almost done, add egg noodles until tender. Add 1 can of evaporated milk, dry parley for color, a little butter. Thicken the soup with a hand full of instant potato flakes. Add additional salt to taste if necessary.

      I've made soups with vegan butter and thickened with potato flakes, you could also make that soup stretch farther with bullion and water because it was so fun of other ingredients. Great recipe/ idea

    April Holly smith is another u tuber. Her idea was to put your chix bones etc in the slow cooker with water and cook overnight. Strain in the am. Game changer for me.

    I live in a beach community on the coast of Washington State. Although it has always been a rather inexpensive place to live, property value-wise, the food prices are way, way more than what you are quoting. 2022 might be more of a challenge for some of us. I appreciate your videos.

    $6 for a 6 lb chicken?? AND it’s a Perdue! Wow! Wish we had those kind of prices in San Diego. I haven’t seen a whole chicken for under $13 in years and it’s only been going up.

      @@MealsWithMaria Oh it’s awful! Our gas is almost $6 a gallon (it was OVER $6 for quite awhile, it’s finally started dropping…very slowly) and the price of everything, especially meat, has gone up exponentially.

    Reminds me when 1 roaster had to last the week.....like legit, no other meat. I don't think I ever did a roast chicken night because we wouldn't have had enough to stretch the 7 nights. I would thin slice the breasts pound them bread them and fry them and we would have chicken sandwiches. Then I would pick all the little pieces off the bone that I could get and have chicken fried rice. Of course I would make stock and we would have chicken soup. Chicken burritos or chicken quesadillas were always a hit. I would stew some of the chicken and we would have chicken and dumplings and I would also always make chicken pot pies with a can of mixed vegetables and lastly we would always have some sort of chicken casserole using a cream of something-or-other soup. I'm glad times have changed and my budget has changed but I was feeding six people for 7 days off of a large roaster so it was pretty good way to get by. I also did the same thing with a ham.

    fyi. easy broth take all bones and fat skin ,onion skin, carrot peel or any veggie scraps{ I save them in the freezer} put in crock pot over nite . strain refrigerate the when cold take off fat. super easy. love your recipes.

    I love homemade chicken noodle soup. I make it when the family is sick, but when I do, I add some fresh grated ginger (or ginger powder) and fresh grated turmeric (or turmeric powder) for their health properties. Turmeric is better absorbed with black pepper. I also add a dash of cayenne, but you don't have to. Don't go too heavy on the ginger. When I don't have fresh veggies, I use frozen mixed, which is fine. I buy my onions in bulk and prepare them before freezing. You can also freeze fresh ginger and turmeric root.

    We often pick up a roasted chicken as a last minute quick dinner. Making bone broth from the carcass definitely lowers the cost of the chicken, because it saves me from buying expensive broth. I use broth as a base in most of my meals, since we eat a lot of soups, stews, and casseroles.

    Chicken looks amazing! I made one this week not that beautiful as yours , put all the bones aside, portioned all the meat for a couple of meals put it in the fridge. My sweet husband offert to clean up the kitchen afther the delicious meal ( his words)😍. Later that night (already in bed) , I said dear where did you put the chickenbones??? .... Silence..... I said as a joke, nah you didn't put it in the bin!..... Turnt out he actually did😳😕.....

    I learned to cool off my broth and refrigerate overnight so that all of the fat rises to the top. Then I remove the fat layer first the next morning before use or freezing.

    Hi Maria! Question for you: what are the benefits to buying and roasting your own chicken (besides getting to choose your own seasonings) instead of getting a rotisserie chicken for $5 at Costco, if you have a membership, and not even have to cook it? I’ve gone to buy my own whole chickens so many times, and couldn’t bear to spend more than the Costco ones cost. I’d love to hear your thoughts.

      I think it depends what you have access to. I usually like to buy whole chickens on sale for .99 or less a lb so I’m not sure how that works out compared to Costco, but it’s probably close. I personally don’t have a Costco near by. And I think a home roasted chicken is just more delicious. But it doesn’t really matter! Whatever works for you!

    I will turn some leftover chicken meat🍗 in a white ragout ( butter, flour, bouillon) next to rice or on toast (with some baked mushrooms if you have so to stretch) with a salade, carrots, broccoli, peas or whatever

    Dear Maria, I left a comment on cleaning the dutch oven. The video I referred to was from Krocks in the kitchen. They boiled water and added 2 Tbs of baking soda and scraped the burnt bottom with wooden spoons. It was the only thing they could find that worked decently. I also said that I thought the burned pan was unhealthy and I should just shut up about things I don't know about. I was thinking about Teflon or something I think, sorry for the criticism. Duh!
