Hi mate, welcome to the channel. You are correct about the square of aliminium, it's to spread the clamping pressure and also to stop the screw marking the shaft. Regarding the steel, it is hardened in the first heat but it will be very brittle at that stage and could snap. The second heat tempers the metal to add a bit of flexability.
