Creamy Spinach and Chorizo Pasta

- Tasty creamy spinach, chorizo and sweetcorn pasta, a quick easy dinner , comforting home cooking at its best.

Ingredients
360g pasta (penne)
240g tinned sweetcorn (washed and drained)
150g chorizo (diced)
150g fresh spinach leaves (washed, drained)
150g creme fraiche
50ml water to be added to creme fraiche
40g grated hard cheese extra for topping
1 onion (diced)
1 clove garlic (grated)
Method
half fill a large saucepan with water and boil add 1 teaspoon salt when boiled (salt increases temperature of boiled water) and add the pasta to cook for 10-12 minutes depending on the instructions on the packet.
while the pasta is cooking peel and dice the onion and grate the garlic.
in a hot dry pan (no oil) fry the diced chorizo and then add sweetcorn stirring occasionally until lightly browned. (5 minutes or thereabouts)
add diced onion and then the garlic cook until softened.
-add 40 g hard cheese.and mix
add spinach and cook until spinach is wilted or softened
add creme fraiche and water mix all when sauce starts to bubble remove from heat.
pasta should ready by now. drain the pasta and sprinkle with oil to stop sticking.
season the sauce with salt and pepper
transfer the pasta to the sauce and mix.
serve and sprinkle with hard cheese.
