    Purple/red cabbage is very healthy. Red pigments help control inflammation. I put it in Vietnamese spring rolls and tofu tacos all the time. It lasts forever in the refrigerator. I eat raw shredded purple cabbage on vegetable soup and on salads. I'm careful when I cook with it because in some dishes the color is a little off putting.

    Omg Monson all I can think of with this is vegan mac salad, Hawaiian style, with some tofu katsu for a plate lunch (which I think you did already bc obvs plate lunch is like top 5 meals of all time). Making this dressing ASAP!!!

      When I've needed them in rural areas, I've just ordered them from Amazon. You might have to order a larger quantity, but they're worth it.

    I LOVE using soy curls. Such a versatile product in general but also a great source of protein! I only have 1 problem with these from time to time: a too spongy texture. Any tips/key steps?
    And I must say, your manner of preparing them seems to be a great way to please the meat-eating friends or family members!

      After soaking, i like to make sure i squeeze out the liquid really well. Or don't soak them and just cook them in the sauce/marinade.

      The trick is to squeeze them out, and to saute them up a bit. Just hydrated and served, they're nobody's friend. Soaked, squeezed, sauteed, and sauced... Now you're onto something.     How many servings are there for the Universal Vegan Cold Salad Dressing if just used as a salad dressing?

      Say, on a green salad? That's very subjective... You're going to get about 1 1/2 cups of dressing from a full batch. a serving might be 2 tablespoons depending on the size of the salad... You'll get about 12, 2 tablespoon servings from this recipe. But the joy of this recipe is that you can load up your salad with the dressing, and you're only adding more goodness! The more you add, the more protein and healthy fats you add. Hope that helps.

    This looks delicious, just got to figure out where to get the soy curls from and if they are 'Starch Solution' friendly as I'm trying right now to keep in line with it as much as possible. For the dressing, what could I replace the oil with that isn't fatty and also could I significantly reduce the cashews (to about 5/6) and hope for any sort of creaminess? TIA for any reply! Really want to eat this now 🤤

      Thanks! The best place to buy Soy Curls is Amazon, honestly. I don't know about them being starch solution friendly... They're basically just soy beans. In terms of the dressing, you could just skip the oil and reduce the cashews. You shouldn't miss anything without them.

    Can this be made without cashews? I am allergic to all nuts - deathly allergic. I’d love an alternative to mayo, but it has to be nut free.
