Growing Mushrooms On Sawdust: Making The Fruiting Block

  • Learn how to grow mushrooms! Most gourmet mushrooms grow on supplemented sawdust fruiting blocks that have been fully sterilized. The fruiting block recipe is as follows:
    Per 5 lb Fruiting Block:
    5 Cups Hardwood Pellets
    1.4 Liters Water
    1-1/4 Cups Wheat Bran
    Mix ingredients, add to grow bag and sterilize for 2.5 hours at 15 PSI.

    Don't put the jiggler on until your canner has steamed for a full 10 min, then add the jiggler and watch for the pressure reaches 15lbs. Adjust the heat (lower slightly if pressure climbs over 15 lbs) then time for 90 min.

    This is helpful and timely. Thanks for sharing. One note, taken from my experience.. venting of the PC is an important step, it helps to purge the air and raise the internal operating temperatures during the heating cycle. It also makes for a much quieter heating cycle, particularly with the wobble weight type cookers like the Presto. Cheers.

    Thank you, so much for detailed instruction and tips. I just got my first flash of Shiitake I grew on saw dust and brown rice cakes in vitro. After finding your video I decided to go the next step with blocks. They have been inoculated with rye grain spawn on 2/3/19 and everything looks great!

    I followed your tips and now I have four jars of mushroom spawns (two white oyster mushrooms, two pink oyster mushrooms) ready. I acquired som sawdust, plus wood shavings and will attempt to make my first fruiting block

    You did not mention if you used rain water, spring water or treated municipal water. I live in a town that treats our water with chlorine, so I can always fill a large container with water and leave it in the sun to help evacuate the chlorine or I can catch rain water the same way. Thanks for the videos and information.

    Usually if you let it cool naturally it "seals" itself. Also, 3 quarts should suffice for up to 3 hours. My question is, you put them right up to the edge of the canner. I've had bags break that way but you never have that happen?

    Hey Tony, love your videos man. I followed this recipe to a tee but I had some problems with bacterial contamination due to excess water. I believe it should be 5 HEAPING cups of HWFP to end up with 5lb block. What do you think? Oysters were fine but some other picky strains did not like the excess water. All the best man!       always squeeze your substrate to check for field capacity.. if you squeeze and a few drops come out, it's perfect. if none comes out, add more.. if alot comes out, you have too much

    How do I know if my pressure cooker is running low? Will there be a change in the pressure itself? Also how do I add more water? Does that mean turning it off adding more water and then allowing the pressure to build back up again? Sorry, I’m a newbie🍄🍄🍄

      Woods substrate takes sterilization. Couple hours at 250f usually in a pressure cooker

    Thanks for this helpful video. Our pressure cookers are rated max working pressure is under 12 psi in UK. I bought one just as I can’t afford a good All American one yet. How long is long enough in this cooker do you think? I’ve a horrible feeling it’ll run out of water before the optimal time in there.

    Did you heat seal those bags before they went into the pressure canner, or were they left open? Were they sealed after? Without a laminar flow hood, what would you recommend for closing the bag, and also what would you recommend for inoculation? Self-healing port a must?

    Is it a good idea to bring your PC to a boil and let it vent with the lid on for a good 10 minutes? I've read that unless you expel all of the free air inside the PC, because of partial pressures, you won't actually reach the temps necessary for sterilization at 15psig.

    Is it possible to mix hydrated lime into the water, similar to the process you used with the straw for oyster mushrooms if you don't have access to a pressure cooker?

      That would pasteurize it, but not sterilize it. For most oyster mushrooms that would be good enough but especially for Shiitake the substrate needs to be fully sterilized.

      hydrated lime works fine for oysters let it soak for 12-18 hours. Soap also works.

    Great video, clear instructions with some tips you don't see many other places! One thought, as the PC is sterilised after 2.5 hours, couldn't you just put one filter patch over the air intake on the PC as it cools?

      Good point! Actually since this video I haven't been using the filter sleeve and things have been going just fine.. no contamination.

      I tried doing that my first few runs, as soon as the pressure hit 0 and the release valve dropped, I put micropore tape over the rocker hole. All of my bags blew out until I quit doing that.

    Can you explain why so much substrate is used for making mushroom blocks or when growing in a monotub?
    Why if the mushrooms are only growing from a handful of points on the block, why is some much needed?

    Wood pellets don't need to be sterilized. At most you can pasteurize them and they'll be fine, even with the wheat bran.

      if you grow in your back, ie you sterilize a substrate bag, and then transfer grain spawn to it, you would do this in a still air box and then seal the bag.. then after you allow the mycelium to colonize, you'll cut the bag open to fruit it, and place it in high humidity.. at that point the humidity and air exchange will make it start

    Just a thought in those quantities it may be a good idea to invest in a cheap electric concrete mixer. It will save a lot of wear and tear on your arms.

      gregory Gegembauer generally it’s a ratio of 40 lbs of bran or soybean hulls and 40 lbs of sawdust and 50 liters of water it’s called a masters mix

    I’m growing golden oyster mushrooms. My can was fully colonized when I brought it out into my fruiting chamber. It’s getting between 85 and 95% humidity, 75 to 80° and enough light. It’s been eight days I haven’t seen a thing start yet. Am I just being impatient? This is my first time.

    Question! Could you seal the mushroom bags prior to sterilization? maybe in a food sealer? I understand this would be a little counterproductive because they have to be opened for innoculation. Would tying them up help reduce contams?

      they would explode. When you do canning you have to put the ring on over the lid but not tight as the steam inside the glass jar has to come out. When it cools it sucks the lid on and they pop. The same with the plastic bags. If they are sealed when cooked they may puff up and explode.

    At what point do you mix in the mushroom spawn? Do you mix it in when you mix in the soy bean hulls? And then sterilize the block with the spawn in it?

      You mix it in (inoculate) after it has been sterilized. The process of sterilizing it would kill the spawn.

    I use the masters mix. I just put it in a Pot pour boiling water, mix it wait for it to cool then mix in the Spawn. That’s it. No contamination. Also have used aspen pet bedding with great results.

      Really? How have you not gotten any contamination? I accidentally ordered masters mix instead of hardwood pellets and am not sure what to do once it arrives I'm not sure if I can sterilize it affectively. I ordered mushrooms bags and grain spawn aswell btw so I was planning on just hydrating substrate with boiling water then adding into bag (maybe pressure sterilizing) and then let it cool, open bag add grain spawn and then seal with ziptie.

    I've heard that you can increase yields by adding gypsum to the substrate, but haven't seen any professional growers using that method. Have you any idea, why?

      Gypsum is usually only used in the grain spawn, helps to keep the kernels from clumping up. At least, thats what i've seen from some other youtube videos. I only put it in my grain spawn.

      On Paul Stamet's Growing Medicinal and Gourmet Mushroom / Peter McCoy's Radical Mycology books, they both list Gypsum in their nutrified sawdust block recipe. I'd then say it is useful, though I also saw people in forum mentioned they tried with/without and it was not a big difference. So yeah.. I guess you have to try and see by yourself! I do it with gypsum.

    I am in France, and can't find anywhere Hardwood pellets. Locally they are all softwood from coniferous trees (some kind of pine family). Do you think it would work? otherwise any other alternative (straw/vermiculite/coco coir) that could recommend?

    Would is be possible to steralise first, then mix the fruiting block?
    I don't have a pressure vessel- but its easy enough to whack the dry ingredients in the oven for a bit.

    Hey Tony - I`m in the middle of my first attempt following these instructions with Lions Mane and Italian Oyster, 4 weeks into colonizing now. The moisture inside the bags seem excessive, water droplets on the top as well as yellow liquid at the bottom of the Lions Mane bags as well as Lions Mane fruit trying to fruit prematurely. Without a flow hood, do you have any recommendations on getting ideal humidity within the spawn bags when inoculating as well as what I should do at this point with my lions mane situation?

    If I have pure sawdust could I simply mix boiling water in the wood and bran and wait to cool to make the blocks?

    I am new to mushroom growing but I am having success with oyster mushrooms on straw following your video, but Im trying my hand at pasteurizing my own grain. I have watched your videos on this but my problem is that my bags expand and get more moisture in them. I stuff rags around the bags to fill all the voids. What am I doing wrong becouse I want to pasteurize sawdust blocks for lions mane and I dont want the same issue to happen.

    Question, about 20 days ago I introduced lions mane grain spawn to coir sub in a grow bag. It seems to be growing healthily but it’s growing very slowly. Can I shake my fruiting block bags like I shake my grain spawn jars in order to encourage growth?

    How do you determine your percentages tho? You want 60% water prolly... idk let's say im shooting for 5lb blocks ... so I take .6 times 5 to see how much water goes into a 5lb block?

    Hi, thanks for the video first of all. All your videos are very helpful. I have a few questions.
    I was wondering if you knew what type of tree the hardwood pellets are made from? Do you think it matters?
    I have researched and found out that shiitake grow naturally on timber from the family of trees that include beech etc
    I have access to a lot of eucalyptus wood chip and was thinking of using that as beech doesn’t grow in my area. Do you have an idea if this would work and if the mushrooms would be healthy to eat? I’m a bit concerned that some of the toxic chemicals in eucalyptus might not make it such a good idea.

    Is there a preferred wood? Traeger has oak, ash, hickory, mesquite, apple...and the list goes on, for their hardwood pellets.

      I am not an expert at all and am quoting from Paul Stamets "Shiitake will fruit on a wide variety of deciduous wood so it's a great mushroom for first-time cultivators...Thick-barked hardwoods like oak are the most preferable species to inoculate. Other suitable hardwoods include sweetgum, ash, chestnut, hornbeam, ironwood and hickory. "Scrub" hardwoods like alder, beech and birch will typically work fine, however the logs inoculated may not fruit as many years as oak. Poplar, cottonwood, and willow are suitable but tend to break down very quickly as well. There have also been reports of Shiitakes successfully fruiting on koa and on eucalyptus logs." I hope this has not stepped on any ones toes and is helpful.

      Michael Vanecek You are looking in the BBQ smoker section. Get the hardwood pellets for home heating (pellet stoves) those are about $5 for 40 lbs. Save the mesquite for the ribs.

      It definitely happens once and a while, especially if fruiting outside.... hard to avoid entirely, best way to fight it is just general cleanliness
