Very good information. I think you are right on for four of the five. However, I do prefer the tumble weeds better than the wax cubes because the tumble weeds don’t melt in the hot summer sun.
I ended up giving away the SNS drip pan due to the same reasons you mentioned. Plus, grease always found a way under the foil that I covered this pan with. I found that just putting foil alone where the SNS drip pan would be was the easiest way to do it. When the cook is over, I just roll up the foil and throw it away. As for the Weber hub, I have no experience. I did have the Weber iGrill, and once again, I gave it away because it doesn't have an option to calibrate the probes. I went with the ThermoWorks Smoke which can be calibrated and haven't looked back. As for the BBQ guru, I also have one and, like you, I don't use it. I just got used to adjusting the vents on my Weber kettle or WSMs and that's the easiest approach for me.
I actually just used Royal Oak tumbleweed starters tonight for the first time. They worked perfectly and didn't give off that chemical smell that the Weber cubes do. I think I will use them from now on.
A twisted paper towel with a little olive oil on it. You don't need to waste money on fire starters. Twist a section of paper towel and bend it in half long way, stick it into your grill grate and add a bit of olive oil. You probably always have those on hand. Try it

I purchased an 18"aluminum pizza pan from my restaurant supply store for $5. Then I used an angle grinder to cut it so that it fits in the bottom of the Weber next to the slow and sear. Works great as an air baffle to keep the air going over the coals. And super cheap.

I do use tumble weed starters, but only when I run out of Webbers cubes. No such thing as to many starters,never get caught without. Wow, that pan costs $80 ! I just use disposable aluminum pans. Deeper so they can hold more water/ juices for making kick ass gravies. I'm really liking my Fireboard 2 thermometer fire controller. Last thing I'm saying on this episode. You did well having a video about what you WOULDN'T buy again. That shows honesty and integrity. And you did a great job of not throwing the company's under the bus. ( $80 for that pan? I just re watched this. You are right about the control fans like the Guru. I have one by another brand, and named Billows. It works great but it’s boring. I use it if I have to have an overnight cook and sleep at the same time, or if I have leave, such as cook something while I’m at work. However, to use it while I’m home and barbecuing something, is boring. It takes all the the fun out of the process. There is no art of barbecue or grill skill needed. I’m a MAN, Dead Gum It! I don’t need to relinquish control of my pit to an electronic machine.
Hello Lew. I have the billows as well but I have not used it yet. I do prefer controlling the temperature myself. it is a great product though if you want to upgrade your kettle with a temp controller because you don't have the room for a pellet grill.

Also, there are several flavors of that unit, including a $30 or $40 version. Since you made this video, there’s even a cast iron version. The way that you use it, I agree, the deluxe isn’t worth $90. Sort of like daily driving a Porsche.

It just sits in the bottom of my grill and I have to clean it. Once I dropped it greasy, tried to catch it on the way down and it sliced my finger open. Would it have killed them to grind or sand the edges smooth? Love my SNS though. I just got an inkbird 6XS bundle with their instant read on Prime Day and love it. Replaced a broken ThermPro. All the comments are entertaining. A cheap method for fire starters is 90% rubbing alcohol and some jumbo cotton balls inside a quart mason wide mouth canning jar.
I like to keep my grilling old school and leave the tech out of it. A good ol digital meat thermometer does just fine. Keeping it simple without all the "extras". Great video Johnny!
I found this site while researching the Gridle Kettle-Q. I have had it in my cart for months and decided I needed to fish or cut bait. I, like you, and probably most people here, have many accessories I don't ever use and many of them were expensive! My only disagreement was the temperature controller. I use mine for overnight brisket cooks and love it. But for this purchase I've been considering, I'll say thanks for helping me with my decision. I'll choose to fish another day!
I put both baskets together.. have the wide sides touching each other to make a hexagon. .. and then move them over to one side. I am actually making a video on how to use the baskets that come with the weber kettle... it will be out this weekend or the next... depending on the rain.
"It takes all the fun of out BBQ". Man, I understand where you're coming from. I bought the QMaster Senior about 5 years ago and have used it a few times. There's something satisfying about dialing in the temperature yourself. I might bring out the controller when I need to leave the house for an extended period of time. But otherwise, I don't think it's necessary.

Hey Johnny nice video. So far the only thing I wouldn't ever buy again is the Chargriller charcoal chimney with the bottom that opens up. I've bought 3 of them thinking that the last one was just flawed but they all are. I get 3-4 uses out of them then the bottom starts to fall clear out and you always have to put the stupid thing back together. So I just wired mine shut. Now I just use it for a single serving grill, it works great for that. I agree if you don't reach for it don't buy it. Have a great weekend brother.
I’ll be the odd man out, I like the Drip n Griddle. It was a gift, so there’s that, but I like how it’s contoured, which helps direct all combustion air into the slow and sear.

I had the eye grill 2 for a while before I melted it... and I did like it but I think the inkbird is a better deal. The aluminum pans are fine for use in the kettle.

IMO, fans/fan controllers are really better for smokers (not charcoal grills). I have an insulated vertical cabinet smoker and the fan control (from Fireboard), is amazing. To me, worrying about managing wild temp swings is NOT fun. The built in wifi capibility is also fantastic for monitoring from any distance.
I know a lot of folks who say the exact same thing. Theses fan controllers really do work well and put out really good food. I have a new one from ThermoWorks that I am going to try out soon. Take care Chris!
Man this was so good! Several times in the video I found myself nodding and going "that's right". When I first got my Weber Kettle I already knew there were tons of accessories out there. But I vowed not to amass a bunch of "stuff" and instead just focus on learning the basic skills. I think the first accessory I bought was a wireless thermometer. All it did was make me obsess over small variations in temp that really didn't matter. But then we decided to take the whole house down to the studs and renovate. Long story short I put my wireless thermometer in storage. And I never missed it! Haven't used it since. And I love the point you made about having some gadget that does everything for you, keeps the temp in a certain range. I have one of those; it's called an oven, lol! Making those little adjustments is just a part of grilling and smoking to me. Nice work brother!

Hello Mike. It is just like a pellet grill. I had an idea about making the case on getting a guru instead of a pellet grill but when I was done with the video i could not make the case because I don’t have a pellet grill for the comparison... so I never released the video.
In defense of the Weber connect, they are still adding things through software updates. I agree it’s not there yet, but I have to applaud them for still working on it.
I don't use a drip pan, I line my charcoal grate with foil , nothing to have to wash, plus I can make the foil seal better than the drip pan. Just my 2 cents.

Hey rocket! I have seen the videos where some folks say you don’t need the Slow n Sear… and it is true. I have a video where I show how to use the Weber baskets and you can easily get by without the SnS… but I think once you get an SnS… you will rarely go back to the baskets if ever. The SnS makes everything about bbq/grilling in the Weber kettle so much easier.

Seems like ATCs are supposed to make charcoal grilling more like pellet grills. Set and forget kind of cooking. Which is great! But not for me. The best food is cooked over flame and tended by a live human being!

@@Viewtoagrill I bought a Spider 22 for my Weber grill. I was jealous first time I saw a brisket cooked on a Rec Teq! I enjoy tending food and fire. I learned a lot just by monitoring my grate temps. But, electronics takes some of the passion and connection away (at least for me). My wife said it was an excuse to hang out and drink. I don’t drink anymore, I still love cooking meat over a flame for hours on end!

I have seen the tip top temp... but have not tried it, the guru really does work well and keeps temperatures with in 5 degrees of your target temp... if you have a guru.. you may not need a pellet grill.

Huge cheapskate here, for a bottom drip pan I've found disposable pizza pans in heavy rigid foil, works pretty well for 5-6 cooks before they're toast. I've been meaning to maybe find some sheet stainless or an old destroyed cookie baking tray to hammer into shape, which would be a more permanent solution.
Great idea. I kind of did that with my top 10 items about two weeks ago. But 5 items I could not live without is a little different... thanks for the idea.
Most of those baking racks aren't meant for as high temps as a good screaming BBQ can get. The racks usually cap out at around 550-600 degrees. Not much hotter than a standard kitchen oven will get. Care for toxicity bud. Just check the temp rating.
Good point. I don't ever cook on the baking rack over direct heat... but I have never really considered if a stainless steel baking grid would be toxic a high temps.... you have me curious though... gonna research that. Take care.
I have been using a pellet grill for the past 5 years. To me, it feels like cheating. No more adjusting the temp and playing with it. Boring. I just bought a Weber performer on Craigs list and can't wait to play with it while lying in the hammock and having a fee pops. I'm going back to the finer days and Q-ing the old fashion way again.

Hey Johnny nice video. So far the only thing I wouldn't ever buy again is the Chargriller charcoal chimney with the bottom that opens up. I've bought 3 of them thinking that the last one was just flawed but they all are. I get 3-4 uses out of them then the bottom starts to fall clear out and you always have to put the stupid thing back together. So I just wired mine shut. Now I just use it for a single serving grill, it works great for that. I agree if you don't reach for it don't buy it. Have a great weekend brother.

I’ll be the odd man out, I like the Drip n Griddle. It was a gift, so there’s that, but I like how it’s contoured, which helps direct all combustion air into the slow and sear.
Hello P Johnson. I think the drip n griddle is just too expensive for what it is. 89.99 is a lot to pay for a drip pan. That’s all... I think I could like it for half that. Take care.
@@Viewtoagrill sure, but it’s supposed to be much more than a drip pan. It’s also meant to control airflow up through the slow n sear better, and can also be used as a griddle cooking surface, right? It’s higher price point is supposed to be due to its versatility

I had the eye grill 2 for a while before I melted it... and I did like it but I think the inkbird is a better deal. The aluminum pans are fine for use in the kettle.

IMO, fans/fan controllers are really better for smokers (not charcoal grills). I have an insulated vertical cabinet smoker and the fan control (from Fireboard), is amazing. To me, worrying about managing wild temp swings is NOT fun. The built in wifi capibility is also fantastic for monitoring from any distance.
I know a lot of folks who say the exact same thing. Theses fan controllers really do work well and put out really good food. I have a new one from ThermoWorks that I am going to try out soon. Take care Chris!

Man this was so good! Several times in the video I found myself nodding and going "that's right". When I first got my Weber Kettle I already knew there were tons of accessories out there. But I vowed not to amass a bunch of "stuff" and instead just focus on learning the basic skills.
I think the first accessory I bought was a wireless thermometer. All it did was make me obsess over small variations in temp that really didn't matter. But then we decided to take the whole house down to the studs and renovate. Long story short I put my wireless thermometer in storage. And I never missed it! Haven't used it since. And I love the point you made about having some gadget that does everything for you, keeps the temp in a certain range. I have one of those; it's called an oven, lol! Making those little adjustments is just a part of grilling and smoking to me.

Hello Mike. It is just like a pellet grill. I had an idea about making the case on getting a guru instead of a pellet grill but when I was done with the video i could not make the case because I don’t have a pellet grill for the comparison... so I never released the video.
In defense of the Weber connect, they are still adding things through software updates. I agree it’s not there yet, but I have to applaud them for still working on it.

I don't use a drip pan, I line my charcoal grate with foil , nothing to have to wash, plus I can make the foil seal better than the drip pan. Just my 2 cents.

The SNS drip pan is over priced, I'll grant you. But, I love mine. Fits perfect and cleans up easily. Already spent the $$ for it, so.....I'll enjoy using it.
The Slow n Sear?.....love it. Lots of snob haters out there bragging they don't need it and it's foolish to use it. Well, enjoy your hate, haters, I'll enjoy the convenience of using mine. Oh yeah, another feature of the Slow n Sear, it makes it sooo easy to reuse unspent charcoal from the previous cook. Just shake it and add new charcoals. Leaned that from one of your 'Hot as Hell' video.

Hey rocket! I have seen the videos where some folks say you don’t need the Slow n Sear… and it is true. I have a video where I show how to use the Weber baskets and you can easily get by without the SnS… but I think once you get an SnS… you will rarely go back to the baskets if ever. The SnS makes everything about bbq/grilling in the Weber kettle so much easier.

Thanks, great video! I agree with your assessment of ATCs (ultraQ). I was jealous when l saw someone cook on a pellet grill! Seems like ATCs are supposed to make charcoal grilling more like pellet grills. Set and forget kind of cooking. Which is great! But not for me. The best food is cooked over flame and tended by a live human being!

@@Viewtoagrill I bought a Spider 22 for my Weber grill. I was jealous first time I saw a brisket cooked on a Rec Teq! I enjoy tending food and fire. I learned a lot just by monitoring my grate temps. But, electronics takes some of the passion and connection away (at least for me). My wife said it was an excuse to hang out and drink. I don’t drink anymore, I still love cooking meat over a flame for hours on end!

Did you try tip top temp
I have seen the tip top temp... but have not tried it, the guru really does work well and keeps temperatures with in 5 degrees of your target temp... if you have a guru.. you may not need a pellet grill.

I didn’t mention the craycort grates because I enjoy using them. I still use them. They are on my 26 inch kettle.

Huge cheapskate here, for a bottom drip pan I've found disposable pizza pans in heavy rigid foil, works pretty well for 5-6 cooks before they're toast. I've been meaning to maybe find some sheet stainless or an old destroyed cookie baking tray to hammer into shape, which would be a more permanent solution.

Most of those baking racks aren't meant for as high temps as a good screaming BBQ can get. The racks usually cap out at around 550-600 degrees. Not much hotter than a standard kitchen oven will get. Care for toxicity bud. Just check the temp rating.
Good point. I don't ever cook on the baking rack over direct heat... but I have never really considered if a stainless steel baking grid would be toxic a high temps.... you have me curious though... gonna research that. Take care.

I have been using a pellet grill for the past 5 years. To me, it feels like cheating. No more adjusting the temp and playing with it. Boring. I just bought a Weber performer on Craigs list and can't wait to play with it while lying in the hammock and having a fee pops. I'm going back to the finer days and Q-ing the old fashion way again.
