additional tip for 1.21: you can repair damage to the car engine(usually what kills the car good and dead) with the blowtorch + gas canister to fuel it.
That's because the dayz devs get many things right. Those cars do not have ABS inside of them. So when you brake you are unable to steer. Only modern cars with that ABS can somewhat steer while breaking 🤪

From what I remember you can repair the doors and hood etc using Epoxy Glue, and i THINK you can repair the engine (if it is not ruined) by using a wrench.

Don't forget that if your dashboard shows a damaged engine symbol (usually because of over revving or not water in radiator) you can fix that with the big red wrench. Open the hood and with it in your hand it'll show repair when you hover over the engine!
Late reply here so you’ve probably figured this out, but you can use the tire iron to lock the tires into place and a screwdriver to lock the battery and radiator in. This way potential thieves would need those same tools to take your car’s guts out/off.

Can't say I've ever had this happen to me. Are you 100% sure that the water is all the way to the LEFT and NOT the right? Assuming the radiator is filled right up and you aren't hitting the car into walls and stuff this shouldnt be happening. What condition is the radiator when you install it in the car? It's important to keep an eye on the condition of the radiator after you do a LOT of driving in it, and make sure to keep topping up the water. If your car is smoking then the radiator is breaking and the only thing I can think is not enough water causing it to break straight away
Also make sure that you are shifting gear EARLY. If you let the engine rev towards the red engine light before you change gears the engine will break super fast. You are changing gears right? :P

Most items can be dragged into the car inventory. If the engine gets damaged you can repair with the red wrench
