The numbers arn't ridculously high, infact Blizzard implemented a stat squish for this very reason, which has set it to around late TBC, early WOTLK numbers.
As for the junk you see, this is purely down to his addon called Bagon, which makes the icon larger, hence why it looks so messy, also most of it arn't junk but items recieved by fans, something which you see alot of in this very video..

Wait does he have all of his inventory modded to appear on one bag? How the hell does he keep organized? I keep my hearth/portal runes, fishing pole a D useful profession items in my bottom bag. Food and water I make go into another because I make enough to hand out to others, like 100 apiece. Then the 3rd bag is for quest items, the other two are free inventory space. Sometimes in one of those free bags I'll place items I picked up that I can't equip til next level.
He'd have a nightmare being a warlock too lol.
when you have the add everything open in one box so the bags don't matter. theres also a side bar that has category tabs so you can see just armour and weapons ,consumables,mats etc... its a really great app and makes organising very easy.
