      @@KonCity22 Hi, It's usually a two tool process. You can use the Jack and then a standard tamper. I'd prefer a tool more like the Jack with an outer edge lip to keep the tamp flat. I only use The Jack with no additional tamping. I do have a demo tamper with the outer edge and adjustable depth. Unfortunately it's not a product we carry.

    I finally upgraded my shower screen to the one recommended here. It made a ridiculous, obvious, huge difference. Given one can see such a big difference in the water pattern I guess that makes some sense. My biggest point though is that this channel is just loaded with brilliant and interesting advice. If it wasn't a 21 hour flight from my home town it would be my regular coffee shop.

      Hey Tony, Thanks for the kind comment - we do our best! Did this video a couple of years ago but was just hanging out with Sauro at the Specialty Coffee Expo in Boston. While there used the new Ceado E37Z Barista grinder. It's a hoppered 83mm flat burr grinder with zero retention. After grinding, it back spins the burrs so one gets a perfectly fresh dose every time! A first for a hoppered grinder. Very cool!

    Excellent video Marc. Recently upgraded to a Baristapro 18g Nanotech Precision Basket and Jack Leveler. I'm still a fan of tamping though, but my Espro calibrated tamper isn't a great fit with the precision basket - just a little bit of play around the perimeter of the tamper. Is there a tamper with a better fit? I'm guessing it needs to be 58.4mm instead of 58mm? Cheers!

    On lever vibration pump machines with water tank could you create a pre infusion by operating for a few seconds then run the machine for the full shot time. Would make an interesting video to see if the shot is improved and / or helps with channeling on a naked portafilter. Great videos keep up the good work.

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว +1

      Hi Cl, Thanks for the comment (we will) and question. A couple comments... You could briefly operate the pump to get some extra water flowing to pre-wet the coffee. You can also raise the lever to just before the pump kicks on and with E61 groups you will get some water dropping before the pump comes on. In vibration pump machines pressure ramps up more slowly than in rotary pump machines. So when starting a shot you get some low pressure wetting prior to full brew pressure - it's a quality some find desirable on vib pump machines. We especially like this on Expobar machines with vib pumps and E61 group. Expobar E61s have an extra pre-infusion chamber milled into the group behind the shower screen so you get even more water falling onto the coffee and a slower ramp of initial brew pressure with the extra space. Thanks for the video idea - I may test that out. I'm guessing there will be little difference between running the pump briefly and just raising the lever a bit and pausing for a second or two before raising the lever to pump on position. We have a video explaining the difference between pre-wetting and pre-infusion with E61 groups. There are some machines with E61 groups which when plumbed in can do a line pressure pre-infusion. Here's the video: th-cam.com/video/2DPcZD48TxM/w-d-xo.html

    What type of gasket am I looking for. E61 profitec. Want to get to the 6 o’clock on a new machine.

      Hi fg, Here's a silicone gasket for E61: www.wholelattelove.com/products/caffewerks-silicone-group-gasket-73-x-57-x-8-5mm
      The stock shower screen is okay. But, I do like these as they are much smoother so coffee particles don't get caught up in an actual screen material. They also provide a little better distribution of water onto the coffee puck: www.wholelattelove.com/products/ims-nanotech-e61-shower-screen
      For baskets, stock is okay but you'll have more flexibility with dose sizes with aftermarket precision baskets. Stock basket ranges up to ~17-18g. If you like larger doses you can go up to 22g. Precision baskets usually have a higher natural flow rate meaning you'll grind a hair finer and maybe get a little more out of a coffee. Also, nanotech stays cleaner: www.wholelattelove.com/products/baristapro-22g-nanotech-precision-portafilter-basket

    Hi Marc, how easy is it to replace a stock shower screen with a new including gasket? Do you have a video?

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว +13

      Hi Markus, Thanks for the question. Fairly easy on E61 groups. Just need to pick the old gasket out. It sits in a channel surrounding the shower screen. Freeing the gasket from the channel is the hardest part. After that a piece of cake. Helps to have a narrow pointy metal tool like a skinny straight blade screw driver or pick. With a screw driver push in between outer edge of gasket and channel and pry. With a pick, sink directly into the meat of the gasket and pull out. The longer the gasket has been in the harder it is to get out. Gaskets are wear items and should be replaced when worn. Indication of gasket wear are leaks when brewing or PF which clocks in beyond 6 o'clock. The shower screen may come out with the gasket. If not, it should pull off after the gasket is out. To put in new, place new gasket around shower screen and press both into the group. Use a blunt object to press the gasket into the channel in the group. Be sure all edges of gasket are within the channel and press in as much as possible. Then mount an empty portfilter and clock in to fully seat the new gasket. Whole process takes a few minutes.

      My gasket was a good bit older and had become quite hard and uncooperative. Initially I was only able to chip a couple of pieces off but once I could gain purchase on it, it came out easily. It took a bit longer because I didn't want to risk damaging the inner surface of the brew group but it was still done in minutes. Definitely easier if you remove the water basket and put on it's side but doable in the standing position with a bit of fiddling ;-)

  • @event4216

    Now I'm puzzled. Customers get charged thousands for their HX and DB machines stuffed with strong parts and fancy engineering and still get mediocre baskets and stiff group gasket? Well, mine had stock basket (surprisingly, just double as single were OK) with holes of uneven size and some holes almost blocked - which weren't case with my first machine, cheapo Delonghi with non-pressurized baskets. Yeah, I pinched holes with a needle and later purchased aftermarket baskets as they carried more coffee, I care less for holes as they are just holes. Cruel, cruel world of espresso equipment)

    Marc, Is there a need to change out these items on a time basis? I have seen other videos that suggested an annual change of gasket and screen, is that a common bit of advice, or is that overkill? A follow up to that would be, if the regular shower screens wear in a year, how long will the nanotechnology in the various items be expected to work/be viable? And yes, another question!!! Lol😂 When Sauro pulled his shot he finished with turning down the pump and just letting the water pressure push the last of the pull, do you need to adjust the overall time to pull the shot to account for this change? I do think that the espresso tastes a bit brighter whilst using this technique😃

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว +3

      Hi Joseph, Thanks for the questions - and ask as many as you want! An annual change can work but it comes down to use level. Some indications you need to change a group gasket: 1. Portafilter over clocks. It should firmly set at 6 o'clock. If it clocks in beyond 6 it's time to change. 2. leaking around the gasket and top edge of portfilter. 3. Visible cracks in the gasket. For shower screens I don't think there's any need to change unless you see visible damage like the screen separating. The nanotech screens have a design that's different than most stock screens. The screen is integrated into the plate so the screen cannot separate. The nanotech treatment creates a surface coffee oils etc don't adhere to as well as stock materials. They are easy to clean. For cleaning groups and screens I like Ka-Klean: www.wholelattelove.com/ka-kleen-cleaner-for-espresso-machines It's easy to spray up into the group and then give a light scrub with a group brush. The nanotech treatment is a quartz finish process. It's robust. A good comparison might are non-stick pans. Take care of them like don't use metal utensils or scrub with steel wool and they last a long time.
      I love the technique of shutting the pump off while leaving the valve open to finish a shot with an E61 group. Helps avoid over-extraction in final stage and can yield a brighter flavor. Timing is a way of determining if an extraction is in the ballpark. Let flavor be your guide. I've been working with the Rocket R Nine One pressure profiling machine and very long low pressure pre-infusions the last few days. Not unusual to go >40 seconds when the first 15 seconds is at 2 bar pressure. Check out the naked extractions from the R Nine One in the first couple minutes of this video: th-cam.com/video/rhQVkxMEVA0/w-d-xo.html

IIRC Matt Perger was saying how distribution tools only address the upper portion of the of the coffee bed and the lower portion can remain largely unchanged by using one. Any insight into this? The Jack in the video does look really cool I gotta admit. Can't wait to see the full Hero review.

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว +2

      Hi Dylan, Thanks for the question. I've started working with distribution tools more and I'm becoming a believer. If nothing else they guarantee a level surface of coffee in the portafilter. Can't say that with traditional tampers. We've been tossing around the idea of fabricating a see thru filter basket. Not functional for making an espresso but would like to do some macro photography of what's happening with the coffee when using a distribution tool. I've never observed so many consistently near perfect bottomless extractions as I did when making the video with Sauro. Was it the Hero's grind, the Nanotech filter baskets and shower screen, the distribution tool? I'm guessing a combo of all 4. After making the video I did probably 10 more shots using traditional tampers and kept everything else the same. Had a few good ones but nowhere near the consistency as when using the leveler.
      We will have more on the Hero just waiting on a few revisions so we can show a final shipping version.

    I am using the standard supplied double filter basket that came with Rocket R58. I would like to replace it with the Nanotech double basket and the Rocket bottomless Portafilter. Which size Nanotech basket should I purchase? Is the shower screen for the E61 brew group standard size also? And what is the advantage of the colored gaskets? I have just replaced the brew group gasket recently because it was a few years old and was leaking. I am also interested in the Jack leveler/tamper. I have watched your video as well as others who level, and then bring on the old tamper and apply the 30# pressure tamping on top. You and your guest, Sauro indicate that tamping on top of Jack leveling is not necessary. Comments?

      Hi Thomas, Thanks for the questions. This shower screen will fit the E61 group of your R58: www.wholelattelove.com/collections/pro-brewing/products/ims-nanotech-e61-shower-screen
      For the filter basket I believe the 20g fits: www.wholelattelove.com/collections/pro-brewing/products/baristapro-20g-nanotech-precision-portafilter-basket I'm not sure about the 22g. Usually I'd go check as I have them all in the office but I'm doing the work from home thing as required in NY now due to virus. The 18g fits for sure. If you only do doubles get the 18 or 20g. The colored gaskets are made of silicone so they are softer and last longer than stock gaskets.
      On The Jack... Since this video was made I've gone to leveling only. Some still tamp after that. I do not find I need to. It's fine to tamp after for those who want but I think it's just a thing that some can't let go of. Used properly, The Jack compresses the coffee to the point a dry puck can be knocked out in one piece after leveling and before brewing. Hi John, Sorry for the delayed response - I've been offline for the holidays. As far as I'm aware the Barista pro baskets do not have a guideline. I'm looking at the 20gm stamped D26661 and no guideline. If you had far to much space I suppose that is not great but a bigger problem is a basket which is to full to the point of leaving an impression of the shower screen in your puck. Definitely want space between the puck and shower screen. I'd be curious to know what weight you can put in before leaving an impression in the puck. How are your bottomless shots looking/tasting? Are your shots coming relatively evenly from all holes of filter basket at the beginning of the shot? If so then all is well.
      Marc

    • @johnadkins3466

      I think the problem was my cheap scale. Portafilter has to be placed in a certain spot to get the correct weight. So 20 gm of ground coffee now seems correct.
      What should be then be the ideal weight of the resulting espresso shot?

    Hi Marc,
    Great video, and great videos in general. I have a Profitec Pro 600. Sorry if this repeats what others have asked, but:
    - Do you have a view on VST vs IMS baskets? Re IMS, I am finding it a little confusing to navigate their range. They seem to have "competition" and "Baristapro". What's the difference?
    - I think you mentioned in a previous answer that the IMS basket that most closely matched the Profitec 500 stock basket (is it the same for the 600?) was the 18g. Is that right? Can I happily dose 16-18g in a 20g basket, or would you just go for the the 18?

    • @Wholelattelovepage
      @Wholelattelovepage  5 ปีที่แล้ว +2

      Hi Phillip, Thank you for the kind comment and question. I like the IMS baskets. Sitting in front of me now I have an IMS BaristaPro 20g basket it's 26mm in height and an IMS Competitizione 20g that's 26.5mm in height. The Competitzione basket is what ships as the stock double basket on the Rocket R Nine One pressure profiling machine. Comparting the 2 visually. There are 702 individual holes in the Competizione basket vs 661 in the BaristaPro basket. Holes are slightly smaller and in a tighter pattern in the Competizione basket. The BaristaPro basket has no internal ridging or taper while the Competizione basket has 1 fill ridge and a taper at the bottom resulting in less surface area and that tighter hole pattern. I have not done side by side testing with the 2 baskets. Only real opinion I can give is a preference for basket without internal ridging and wider bottom as found in the IMS BaristaPro series.
      As to dosing... Overdosing is a bigger problem than under dosing. Your dose is to large if you are leaving impressions of your shower screen in the coffee puck. Always want space between the shower screen and puck surface. The 500 and 600 are both vibration pump machines. A little extra space between the shower and puck is not a big deal. Might actually help coffee pre-wet a little more before full brew pressure builds up. That said I'd be more comfortable using the 18g basket if always dosing closer to 16g and the 20g basket if always dosing closer to 18g. Hope that helps!

      @@Wholelattelovepage Thanks that's super helpful - and super-geeky! Do you reckon the 18g IMS is going to be closest to the stock double that comes with the 600? I'm guessing you didn't count the holes...
      One more question if I may - and just to say, I heavily relied on your videos and reviews in deciding to buy the 600. What bar do you find it works best at - is there much of a difference between 9 and 10? My machine came set at 10 but I understand most good coffee shops set theirs to around 9. Have it paired with the Atom 65.

    • @Wholelattelovepage
      @Wholelattelovepage  5 ปีที่แล้ว +1

      Hi Philip, You are welcome! I do believe the 18g IMS will be closest to the stock basket. I did not count the holes :) There is a stamp on the side of the basket indicating number of holes and basket height. If you are seeing 10bar with the Backflush disc inserted that is what we recommend and how we prep our machines before delivery. It accounts for a for a 1bar loss associated with the vibration pump. Setting to 10 bar generally gets you a max of 9 bar at the group when brewing on a vibration pump machine.

      Hey m, If you can, get your hands on a Baristapro single basket. Much better design than stock single baskets and makes pulling singles much more consistent. It loses the ring and steep drop to bottom you find in most single baskets. I'll mention some are going with slightly finer grind and lighter tamps. The Jack leveler does compress the coffee.

    Hi Marc - great video. I just added the Baristapro nanotech 20g basket, IMS nanotech shower screen & bottomless portafilter to my Gaggia Classic Pro. I noticed, with the same beans and grind size, the shot pulled in half the time (15 - 20 seconds) compared to the previous stock shower screen and stock portafilter & basket (30 seconds) that the Gaggia came with. Should I re-dial in my grind size to go finer and get my extraction back to about 25 - 30 seconds for a 18g grind for a 36g extraction? Or is this what I should expect with the improved shower screen & basket? FYI I start timing when the first drip hits the shot glass.

Are you getting a good exhaust from the E61 at the end of your extractions? A good spray into your drip tray when you lower the handle? If so that's a good indication that things are working properly and you shouldn't be getting soupy pucks. There could be something else going on. I cannot say that an upgrade with an IMS shower screen has worked. I changed the screen with a new brass 6 hole screen plate and it squirts water everywhere even after waiting 20min for the machine to heat up. I even tried the four hole stainless steel plate and it made no difference I opted to just stick with the original screen which worked the best and yes my pressure was reduced from 12 bar factory to 9 bar. These shower screens are a waste of money and you will plenty of other people say the same thing on other youtube videos about shower screen upgrades.

      Hi K, It's The Jack Leveler. It is very easy and eliminates uneven distribution of coffee in a portafilter to reduce risk of channeling. I've used other similar devices and the Jack blows them away with the easy depth adjustment. Just turn the blade section to change depth. There click stops as you turn. With some others you have to remove the blade section and insert shims which is a PITA! If interested we should have in stock in about a week.

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว

      @@liutang No doubt using a consistent tamp pressure is important and a calibrated tamper is a good way to get there. IMO even distribution and leveling may be more important than hitting a particular tamping pressure. Leveling devices like "The Jack" Sauro used in the video do compress/tamp the coffee as it's distributed and leveled. What's key when using a leveling device is having the depth set right. If the filter basket size or weight of coffee dose is changed then the depth of the leveling blades must be adjusted to properly compress the coffee.

      The design and shape from ceado is untouchable and there is in my opinion no other beauty on the market. But this beauty is really too expensive for me.
      An affordable luxury what i am looking in the future and a good singledoser is the etzinger etzmax t light.

    For some reason the "IMS Single 10g" does that very good look and is perfect, however the 18g I also have is a total pain in the ass, no matter what I try "Tamp, No Tamp, Finer or Coarser..." it never fully cover the whole bottom surface. It has a perfect color and taste good but it's very uneven and definitely not correct. I dunno if I might not have a defect... I noticed the holes aren't centered and are all a bit offset and there's "scratches" on the side of the 18g basket I have, but not on the 10g, 20g and 22g.
    I agree the IMS E61 shower is a lot better and sooo much cleaner. The nanotech definitely helps a lot. In fact even the non-nanotech from the "IMS Single 10g" is much easier to clean than the stock one from my Rocket R58 and his super easy to use unlike what people say. However the puck is always messy around the holes when you remove it, but it's not a big deal imo.

      @Wholelattelovepage  4 ปีที่แล้ว

      Hi P, Thanks for the comments. The shower screen is amazing! Not only in cleanliness but also beautiful flow/distribution of water over coffee puck. I doubt scratches have any impact on extraction. Sounds like you are doing bottomless extractions and not getting even development? Bunch of variables beyond the basket which can cause issues. Unless you have a really defective basket with super odd hole pattern I doubt the issue is the basket.

      @@Wholelattelovepage I bought an IMS shower screen based on seeing this video and although the difference in the part is clearly visible, the actual function in situ is not much different from the original. although a few drops come out from here and there, the vast majority is still focused in the centre, nothing like that I see in this video. Hi. I got the old gaggia classic without the pipe to release the water from the puck after the extraction. I bought the baristapro nanotech 20g and I use it in a bottomless portafilter and a motta distributor. The extractions are even and the coffee tastes ok. 25sec 1:2 ratio. The thing is... after taking of the portafilter there's still a lot of water on top of the puck because there is a lot of headspace between the coffee and the gasket. The puck is also not even. It's higher on the sides and gets lower in the middle (zylinder). Is there a way to fix it?

If you have a question regarding fit of filter basket for a particular manufacture's portafilter I'd be happy to check for you. may I ask, what is different between the expobar office lever dual boiler coffee machine vs brewtus IV? and how much the energy will consume by these machines if they are on all the time?

    • @Wholelattelovepage
      @Wholelattelovepage  6 ปีที่แล้ว

      Hi jun, Of course you can ask! The Office Lever is a heat-exchange boiler machine and not a dual boiler. The Office lever does not use a PID to control boiler temperature while the Brewtus does use PID to control temperature of the brew boiler. The Lever machine, like all HX boiler machines without PID does require a short cooling flush prior to brewing espresso. The Brewtus like most all dual boiler machines with PID does not require a cooling flush and provides more accurate brew temps.
      Actual energy usage varies depending on ambient conditions. We have run energy usage tests on dual boiler machines. Here's a video with more info on our testing methods and results: th-cam.com/video/_cgeNhsBDaw/w-d-xo.html Our test machine used 120watts/hour once it was up to temperature and sitting idle. We calculated energy cost at a rate of $0.12 Kwh. At that rate while sitting idle the energy cost was $0.014 per hour or 34 cents per day. I hope that helps. If you have any more questions let me know and I'd be happy to answer.

    Do all 3 products work with a profitec pro 700?
    What is the recommended standard double shot basket? 18g or 20g?

      Hi MS, Thanks for the questions. All 3 products work on the Pro 700. In the video we were using them on an ECM Synchronika. The ECM has the same group as the Pro 700. The Baristapro double filter baskets come in 18g, 20g and 22g sizes. I recommend the 20g as standard - be aware the 22g is a bit too tall to fit in the the stock Profitec portafilters. To use the 22g you have to use a bottomless PF: www.wholelattelove.com/profitec-bottomless-portafilter

    Hi team,
    thanks for all the amazing videos!
    Do the discussed upgrades here also fit the Bezzera Strega or which IMS parts would one need?
    Thanks for the reply!

      Hi Johannes, You are welcome for the videos and thank you for the comment and question. Any of the 58mm BaristaPro filter baskets found here will fit: www.wholelattelove.com/collections/pro-brewing
      I'm checking with our tech staff on shower screen and group gasket and will report back.

      While I have you here and you also do have the Strega, I read that for the lever machine you'd generally add a bit more coffee, roughly around the 20 gr. mark. What's your take generally (obviously depending on the coffee, coarseness etc)

      Just tested Strega for fit with shower screen and group gasket. These fit...
      Group Gasket: www.wholelattelove.com/collections/group-gaskets/products/caffewerks-silicone-group-gasket-73-x-57-x-8mm
      IMS Nanotech Shower Screen: www.wholelattelove.com/products/ims-nanotech-e61-shower-screen
      In my experience most people do tend to go with a slightly larger dose on lever machines. Maybe even 21g. We used to call those triples but according to SCA Barista Survey average does for a double is now 19g.

    Sauro pulled these shots pretty short at 18 seconds and with post infusion still finished at 22 seconds. Interested in your thoughts of 25/25 or 30/30 rule? Exttraction time vs weight end result is a critical factor in espresso flavour don't you think? I like the ideas being presented hear though, just questioning the extraction time.

      Hi WR, Thanks for the comment/questions... Sauro worked with the coffee off camera for awhile prior to filming. Coffee we used was fresh from a local micro-roaster. The timing/volume (didn't weigh the shots in this vid) is what he liked for this coffee. 20-30 seconds and/or particular brew ratios are not so much rules but guidelines. A couple of cool things we did not focus on in the video: First, he pulled singles and doubles without changing grind size. Just changed the filter basket from double to single and halved the coffee dose and came out with half the volume with same timing. Second, (and not on camera at all) we worked with the grind speed of the Hero. Changing grind speed had dramatic effects on timing and flavor. We need to work with that more. It wasn't the point of the video, but using lower RPM increased shot timing while dose weight and grind size remained constant.
