  • How do you bring chicken fried noodles to the next level? By giving it a Caribbean twist. To celebrate his Jamaican-Chinese heritage, chef Craig Wong came up with his version of jerk chicken chow mein, a crispy deep-fried noodle topped with smoked chicken marinated with Caribbean spices.

      The Mexican Chinese food found near the border with California and Arizona is very unique and mostly found only there.

    I am Chinese American and I recently discovered Jamaican food. For the past year I been having at least twice a month Jerk chicken, jerk pork, curry goat. I love the island dishes and when I really sat down and thought about the dishes its not all that different from Asian cuisine. Amazing story here thank you!

      Agreed, some of the food is very similar. Our base ingredients in Jamaica are ginger, scallions,garlic,onions and peppers.

      Caribbean-Asian dishes are insanely good, glad to see more people get into it. Japanese-Dominican food was a good one i tried a while back, same for Trinidadian food with its South Asian recipes

    This series continues to be excellent. And, this profile of Chef Craig Wong was wonderful. Jamaican food is so good. And, Chinese food is so good. So, the joining of those two forces is potent. I mean, that jerk chicken chow mein is an inspired dish...the combination of pimentos, allspice, nutmeg, thyme, scotch bonnet peppers, scallions, ginger, soy sauce, and oyster sauce! Wow. Plus, the chef is also French influenced too. What other amazing dishes are on his menu?

      @@siablo14 In the video, Chef Wong explains that he went to live in France and that he cooked French cuisine at fine dining restaurants. That's how he got his start. So, that's what I meant by saying that he was "French influenced." I wondered if his French culinary training and his experience cooking French food shows up at his own restaurant now. But, I would think not. Because he's probably just focused on Jamaican and Chinese flavors.

    A true yardie! My mom would grow vegetables in Jamaica when I was young and one of the veggies was bok choy. We pronounce in pop-chow in patois. Delicious!

    Chinese Guynese mix here. Great grandmother came from China. - last to speak Chinese too. Love love Pakchoy. And I so respect your parents for forcing you to learn another language. My parents moved to Venezuela when I’m as young for work and I’m so grateful I am fluent in another language because of it and it has so helped me professionally.

    His parents came to Canada in the 70’s and still have a Jamaican an accent and my mom came here in the 80’s and pretty much lost the accent ( well until she’s mad at something). That’s wild

    Thank you !!! This story is so REAL !!! I live in Los Angeles now. ~35 years ago, my Hong Kong Chinese/Cantonese landlady in San Francisco was born in Costa Rica and went back to Guangdong, China when she was 4 then, to Hong Kong after the Chinese Revolution. She grew up in Hong Kong. There was a vibrant expat Chinese community in Central and South America ~80 years ago. Now in LA, I met Jews from Costa Rica telling me fondly about their lots of ethnic-Chinese friends and neighbors there and eating Chinese food regularly there. Also, now ~1/10 of the population in Peru has Chinese ancestry.

    Jamaican & Chinese fusion. Now that is a restaurant I'd love to visit! As for other fusion - obscure and relatively unknown - Pondicherry- Indian meets French influence. Another secret winner.

    I genuinely respect how Wong's parent's choice to make him go french school was indeed a VERY wise decision, as an indian, and thus an asian myself my parents were never easy but they have only taken good steps on my journey, which have always paid me back for all the hellish effort i had to put in, be it my life or education.

    I love this. Been to Jamaica twice and spent most of my time outside the hotel/resorts. I was really surprised to find out not only were there native Jamaicans but white, Chinese and Indian Jamaicans all with the beautiful Jamaican accent and fusion food cultures.

      no mixed jewish portugese with white and chinese ancestory sean paul francis HENRIQUES is his full name and in jamaica mixed black and indian is what we also call coolie... we generally dont call indians that much as its a derogatory world to call an actual indian person... when you say jamiacan and chinese are you saying black and asian chinese or jamaican as in the country as if youre born there youre just jamaican unless youre refering to their race?

      I've used soy sauce in jerk chicken without trying to make it a "fusion" dish or anything. It just tastes really similar to worcestershire sauce, except better.

      @@elfredawright his recipe is a fusion and he should not confuse some ppl who have no clue as soy sauce is NOT part of how jerk is made... ppl can add or do things differently but thats a different thing he should say this is what my mother or grandmother did differently... jerk is a traditional dish made before chinese and indians immigrated to jamiaca.

    I could watch a whole series of the amalgamated stories of people from the Global South, who have been displaced by colonialism, or moved sue to hardships. The food that springs from these stories is incredibky interesting, a tasty af.
    It would be my dream to travel the world recording these stories.

    Jamaica is a huge melting pot. Apart from the original settlers (Arawaks and africans) Germans, chinese, indians...such wonderful island and the food reflects that as well

      It's the British that lit the fire which set ablaze in Jamaica. They only put their descendants and mixed race people in powerful positions while telling them to not include the blacks and indians. Putting up a system that made it hard for blacks to escape the poor living standards on the island that it's boiled over into full chaos. Now the people in power chose to leave with the wealth they gained from the British connection and now Jamaica is suffering from it.
