    Note: Add more oil than you started with to bring the temperature down quicker and dump it into a can of paper towels (for absorption and not down the drain). Water can only be used for small grill flares.
    If it’s a big pot of oil, dump salt or baking soda in it to smother.
    Source: I run my family’s Thai restaurant and always deal with fires when training new employees.

      If it is a bad grease fire, use baking soda, salt, flour or a fire extinguisher. Cutting off the oxygen with a pan would work too. Also, knowing how to cook could help prevent grease fires. I’ve cooked many meals and have never started a grease fire! Happy John Dallas? 😂 I edited it for you.

    For anyone wondering the reason why you have to add more oil to the wok in order to put the fire out is because that white smoke is the oil vaporizing and becoming a flammable gas and that's what's actually burning. As long as the oil stays hot enough to vaporize it's going to continue burning, but adding cold oil to it immediately cools down the oil! As long as you turn the heat off beneath the wok, adding cold oil and then blowing on it will put the fire out because there just won't be enough heat to keep the combustion going.

      @@Go21place Water is heavier than oil so the water will just pass straight through. It will definitely cool the oil down but it won't put the fire out. If you dump a whole lot of water in at once it'll just splash flaming oil around your kitchen and then you'll have a serious problem.

      @@NearEDGE then again the wok shape allows u to easily use smaller lid. All in all the oil in flame is a small puddle at the bottom and not like whole wok filled entirely with oil. I've mentioned that I've had fire and while my wok is like 34cm at the top I used something like 26-28cm lid and it worked pretty well

      Yeah wait is this true? And if so, is it more effective at snuffing the fire than smothering it? And I thought the most dangerous part of oil fire + WATER is because in panic people would throw a gallon of water into it quickly and it would splash oil particles still on fire everywhere. Would oil not have that same issue? If SO, I feel like that MIGHT imply that if you chose water and used it the way the lad in this video used oil; that is, a small amount slowly, that it would also be effective. Unless the effectiveness comes from the new oil mixing with the old, reducing the temperature below the flash point/combustion point while not putting it out, so then blowing at it will snuff it as it is now below the temperature required to make it catch fire.... am I right?

      @@npcrah please never try this or your idea of water.
      Smothering the fire kills it almost immediately and you basically can't mess it up, just cover completely and don't spill/drop it.
      Adding water is much more dangerous that you realize. The water will boil explosively and turn what is a large, but mostly contained flame into a god damn inferno. There are plenty of demonstrations on TH-cam for you to see what happens.
      Adding more oil is not a good idea because you are increasing the amount of fuel, so the flame can be bigger or last longer. You are also increasing the chance of spilling the oil and spreading the fire, or even catching the oil in your bottle on fire, making the problem much much worse.
      Just smother the pan with a lid, plate, or another pan. Anything large enough to cover the top. Don't panic, a flame in your pan is relatively safe, it is much more likely to burn itself out than catch your walls/ceiling on fire, as long as you don't make the problem worse.
      (Note: turn off the stove flame and wait a few minutes before uncovering the pan once the fire is smothered. If the stove is still on or the pan is still hot, the smoke released when you uncover the pan could catch fire again and create a sizeable fireball, plus relight the pan fire)
      Also, if you use a fire extinguisher, make sure it is rated for grease/oil (type ABC or type K). An extinguisher that's only rated A may contain liquids like water and make the problem worse.

    Oil burns best when it is hot. Adding more (cool) oil lowers the temp, blowing out the flames removes the source of heat

      @@nlshrmns they have different fire extinguishers for different types of fires. Using a class B fire extinguisher from an safe distance and proper aim would still be considered an appropriate method for putting out the flames.

      Woks dont have lids though so this is a decent strategy especially since there is also a small amount of oil when normally using a wok, so adding oil room temp oils lowers the temp without causing an explosive reaction and since the temperature is now lowered blowing it out is easy and requires a good puff and you should be able avoid more issues. The lid is the most solid strategy but woks usually dont have lids and are probably bigger than most lids you can find

      Sorry late, it's not a bold move imo. It's really important to know what to do when it's happened so you not panic.
      Also in profesional kitchen (i'm a chef de partie) it's mandatory to give new cook this training, i guarante you, they will light them up somehow 😅 (most of them still not used to multitasking, so it's kinda easy for them forgot their burner still on)

    This video kept me calm in the kitchen. We were boiling out the fryers, and I messed up and forgot to turn them off when I drained the water. I started to add the oil back to the fryer and as soon as I poured the oil the fryer erupted into flames.
    I realized what happened and remembered your video. Everyone was panicking and running around and I just slowly turned off the fryer, went off to storage to get a fresh jug of oil and poured it into the fryer putting out the fire. Everyone else was impressed but I was just embarrassed I did what you showed me

    The reason this works is that adding cool oil lowers the temperature of the oil that's currently on fire as well as lowering the temperature of the wok that is no longer being heated up by the stove. The fire goes out as soon as the oil and wok cool to a temperature below the flash point of whatever oil you're using.

      Also what wok do you have that you can place over another safely? Get a bit flat piece of metal and leave it nearby

If you have cool oil readily available and easy to access you can do this, however in my kitchen at work we always keep like 30 boxes of baking soda and use it for small fires like this. Then if you can’t extinguish it with baking soda we have what we call “the asshole system” which is a bunch of spray nozzles with caps on the tips. When those tips start to melt the system goes off, spraying a foamy substance all over every piece of equipment and automatically calls the fire department. However at home, always keep cool oil, baking soda and a fire extinguisher ready so that if one doesn’t work you have other options before calling 911. 🤷‍♂️

    My theory is that adding room temperature oil lowers the overall temperature of the oil below ignition and also displaces the oxygen immediately surrounding the burning oil which means you need to add enough or the fire will just get bigger. Another way is to cover the wok with a huge metal lid to deprive the oil from said oxygen.

    Fire needs 3 things to burn, oxygen, fuel and heat.
    While the oil adds more fuel, it’s cold and decreases the temperature making it too cold to burn.
    Also, water and oil don’t mix and they like to separate. So adding water at such a high temperature will cause the water to explode (boil super fast) and the oil and fire will go everywhere.

      In general if your oil us smoking you should remove it from the heat before this happens but yes it takes time. It's a good example though there are several ways to put out fires safely the biggest thing is to not panic.

    I learned this when I worked at checkers. My first time changing the frier grease the tallow cube started to catch fire. My boss came over scooped off a handful from the other side and smothered it out
    It was also common for it to catch as it melted into the frier so we'd just stuff the tallow block further down into it to smother the fire that way

    You can turn off the fire by covering it effectively, eliminating oxygen from accessing it.
    You dont need to toss more oil into it. This can create a fire if done incorrectly. Also, your fire alarm is ringing.

      When you let off a bomb it creates a shock wave which causes a kind of wind effect, removing heat and air. It can also throw kindle into the air and disperse it
      Thus. You put out fire with a bomb
