RECIPE CARD: Bong Meat: 1.5 Kg, Dry Fat: 150 gm, Nali Bones: 1.5 Kg, OIL/GHEE: 2 Cups, Aataa (Wheat Flour): 1 Cup total: ¼ cups in the start: ¾ Cups at DUM,
Ginger Paste: 4 Tbsp, Garlic Paste: 4 Tbsp
GROUND SPICES: Salt: 2 Tbsp or to taste, Red Chili Powder: 2 Tbsp,
Degi Chili Powder: 2 Tbsp, Coriander powder: 1 tbsp,
SONTH (dried Ginger) Powder: 2 Tbsp, Haldi (Turmeric) Powder: 1 tsp
Whole Spices will be Grinded: PIPLI: 5, Jyfa (Nutmeg)l: ½ Ball,
Javetri (Mace): 4 Flacks, Ajwain (Carom): ¼ Tbsp, Black Pepper: 1 Tsp, Cloves: 7, White Cumin: 2 Tsp, Saunf (Fennel Seed): 3 to 4 Tbsp,
Black Cardamom: 3, Green Cardamom: 6, Cinnamon: 1 of 2 inch

Mughlon se to iss ka door ka bhi ta-aluq nahi tha. Lekin Delhi ka hissa hay.

OK there are two types of Nali Bones one has White Bone marrow and other has light yellow. Light yellow can get melted easily. So I prefer Nali with White Bone marrow as you can see in this video. I cooked almost 5 hours but bone marrow was fine and not melted.

BONG MEAT could be any, BEEF, or MUTTON or LAMB, HAJI NOORA USES BUFFALO bong. CHARBI MUST BE USED if like the commercial way.

Baat taaluq ki nahi. My mother belonged to LUCKNOW and I learnt a lot from her. But for NAHARI she never taught me anything. Whatever I introduced for NAHARI is my own research. Again the birth of NAHARI never happened among MUGHALS. It happened in AWADH then Delhi took over and Made NAHARI to that stage where NAHARI became in the category of Top dishes of INDIAN CUISINE like BIRYANI and QORMAH.
Now you cannot ignore the part of KARACHI (By People came from DELHI). KARACHI is the region where NAHARI reached on its PEAK (Top Level). Its all my research. According to SPEACH of FREEDOM you are not obliged to agree with me.

Kaafi martaba saari mundarja baala (Ooper Jo aap ne bayaan ki hain) bananay ke baad aur mukhtalif masaalon se aazmaanay kay baad hum ne apni Final recipe tai-yar ki jis main izaafi (Additional) 3 masalay iste,maal kiyay jo Kabab chini, Badiyan aur kaala zeera hain. HAJI NOORA SAHEB ki recipe taiyaar karnay ke baad Main Kaalaa zeera to 100% nikaal raha hoon lekin Kabab chini aur badiyaan NAHARI ki perfect recipe kay laazmi juzv (ingredients) hain. Choon-keh main Final recipe of Nahiri already upload kar chukaa hoon iss liyay Kaalaa zeera is a must part of that lekin quantity will be reduced means NAA HONAY KAY BARABAR.
