  • Great variation on my Doner Kebab recipe. Freezing the prepared Doner meat prior to cooking. Once frozen, the meat is then sliced thinly and cooked in a frying pan.     Another good thing about this method is you can separate your mix into two logs and have a smaller amount twice.

    Talking of minute steaks, how about rolling the paste between parchment paper to the thickness and shape of a minute steak before freezing then you could probably bbq or grill the kebab meat?

      I tried this very technique a couple of weeks ago but fried the flattened meat straght away. Didn't quite work but freezing it first might have solved the problem of the meat breaking up in the frying pan. I found the best way to get a consistent thickness when rolling the meat out was to use 2 x wood BBQ skewers as the thickness guide and roll the meat out between the two - can feel another video coming together :-)

    I add potato starch to mine as a binder, wrap it around a straw and freeze.
    Cook it from frozen on the cheap rotisserie thing i bought [ bar goes through the straw]
    Tastes great but...........takes ages to get a decent portion! lol
    We have to try these things out though eh? :))

      Agreed that’s the fun. I used the DaMalat version 2 , froze then cooked on my little rotisserie machine.
      Sliced using my dads old school electric carving knife and it worked pretty well.
      I need to place another DaMalat seasonings order. They are excellent quality. Support this small business for all the time put in on here.

    Looks absolutely amazing. Ordering your spice mix ASAP!
    I think leaving it in overnight is preferable as the ice crystals will tenderise the meat.
    Also wondering if a mandoline would work on it straight out of the freezer?

    Leave it in the freezer over night take it out and leave it for 30 -40 minutes then slice if you freeze it for a few hours it will not slice well as the middle will not be solid i use a meat cleaver much better than a knife when you slice it you can put the meat slices into zip lock bags and re freeze as they have not been thrawn out

    Shape it into a rectangle about 1.5 to 2 inches high by whatever width and length, then when it comes to slicing its like cutting a block of cheese a good sharp knife will cut wafer thin strips. It cooks quicker in this shape as well.

      Perhaps shove it into a bread tin to get that rectangle shape

      No but it would work equally as well. I'm going to try this on the BBQ as well when the weather gets warmer.

      @@DaMalat Im going to try putting the formed 'blob' on a rotisserie and into the pizza oven. The pull it out every couple of minutes and shave slices off :-) Good excuse to fire the pizza oven up.

    Remember..... don't use previously frozen and defrosted mince meat.
